ORIENTAL CHICKEN SALAD WITH CRUNCHY RAMEN NOODLES

Oriental Chicken Salad with Crunchy Ramen Noodles image

This is a salad that even non-cabbage eaters love. It is nice and crunchy with great flavor. I once took it to a potluck in my apartment complex and then had to put the recipe up on the bulletin board because everyone wanted the recipe!

Provided by -Tulip-

Categories     Chicken

Time 25m

Yield 6 serving(s)

Number Of Ingredients 12

2 -3 cups chopped cooked chicken breasts (depending on the amount of chicken you like)
1 head cabbage, shredded or chopped
1 bunch green onion, finely chopped (or to taste)
2 (2 1/2 ounce) packages slivered almonds
3 tablespoons sunflower seeds
2 packages Top Ramen noodles or 2 packages other ramen-type soup
3 tablespoons oil
3/4 cup vegetable oil or 3/4 cup canola oil
4 1/2 tablespoons seasoned rice vinegar
4 1/2 tablespoons sugar
2 teaspoons salt
1 teaspoon pepper

Steps:

  • Prepare dressing and set aside.
  • Smash noodles of Top Ramen (discard seasoning packets) and brown over medium heat in 3 tbs oil.
  • Once noodles have begun to slightly brown, add slivered almonds.
  • If you start to brown the Ramen and almonds at the same time, the almonds will burn before the Ramen browns.
  • Once the ramen noodles have turned a dark golden brown, remove from heat and set aside.
  • Combine cabbage, green onions, chicken and sunflower seeds in a large bowl.
  • Add the ramen/almond mixture and stir well.
  • Add dressing and stir to coat.
  • I generally prepare the dressing right before serving.
  • If it sits in the refrigerator too long, it gets very thick and won't remix well.
  • Also, this amount of dressing is just the right amount to give the salad a good coating.
  • If you are one of those who likes more dressing, I would recommend making 1/2 batch of extra dressing.
  • If you plan on eating this left over, keep in mind that the noodles will not stay crunchy.

Asian cuisine is well-renowned for its healthy and nutritious dishes that offer a delicious blend of flavors and textures. One such recipe is the Asian chicken, cabbage, and noodles salad, which is a nutritious and filling dish packed with healthy vegetables, lean protein, and savory noodles. If you are planning to make this dish, it is essential to follow some valuable tips to enhance the flavor and texture of your salad. In this article, we will provide you with some valuable tips to help you make the perfect Asian chicken, cabbage, and noodles salad recipe.

Tip 1: Choose the Right Vegetables

When making this dish, it is crucial to choose the right vegetables that complement its flavors and textures. This salad typically consists of shredded cabbage, carrots, and cucumbers, but you can also add other vegetables such as bell peppers, snap peas, or bean sprouts, depending on your personal preference. It is best to use fresh vegetables to ensure they retain their crispiness and flavor. You can either shred the vegetables by hand or use a food processor for convenience.
Tip 1.1: Use a Mandoline Slicer
If you want to shred the vegetables quickly and efficiently, we recommend using a mandoline slicer. This kitchen tool allows you to slice the vegetables evenly and thinly, which is essential for the salad's overall texture.
Tip 1.2: Blanch Your Vegetables
Another tip is to blanch your vegetables before adding them to the salad. Blanching involves briefly boiling the vegetables in salted water and then plunging them into ice water to stop the cooking process. Blanching the vegetables helps to retain their color, texture, and nutrients while removing any harsh flavors that may be present in raw vegetables.

Tip 2: Choose the Right Noodles

When making this salad, noodles are an essential ingredient that adds texture and flavor to the dish. You can use a variety of noodles, such as soba, rice noodles, or even spaghetti, depending on your preference. It is essential to cook the noodles according to the instructions on the package to ensure they are not overcooked or undercooked. Overcooked noodles tend to become mushy, while undercooked noodles are tough and chewy.
Tip 2.1: Rinse Your Noodles Under Cold Water
After cooking your noodles, it is essential to rinse them thoroughly under cold water to prevent them from sticking together. Rinsing also helps to remove any excess starch and prevents the noodles from becoming soggy.
Tip 2.2: Add Soy Sauce to Your Noodles
To enhance the flavor of your noodles, you can add a splash of soy sauce while cooking them. Soy sauce adds umami flavor to the noodles, which complements the salad's savory and slightly sweet dressing.

Tip 3: Choose the Right Protein

In this salad, chicken is the protein of choice, but you can also use other lean proteins such as shrimp, tofu, or lean beef, depending on your preference. It is crucial to cook the protein correctly to enhance its flavor and texture. For instance, chicken should be cooked until it is no longer pink and is fully cooked through.
Tip 3.1: Marinate Your Protein
To add extra flavor to your protein, we recommend marinating it before cooking. You can use a variety of marinades such as soy sauce, garlic, ginger, or even honey, depending on your preference. Marinating your protein also helps to tenderize it, making it more flavorful and juicy.
Tip 3.2: Grill Your Protein
Grilling your protein also adds flavor and texture to your salad. Grilling enhances the protein's smoky and charred flavors, which complement the salad's fresh and crunchy vegetables.

Tip 4: Choose the Right Dressing

A well-made dressing can take your salad from bland to delicious. In this salad, the dressing should be slightly sweet, tangy, and savory. The dressing typically consists of soy sauce, honey, sesame oil, and rice vinegar. It is best to whisk the dressing in a bowl and drizzle it over the salad just before serving to prevent the salad from becoming soggy.
Tip 4.1: Add Chili Flakes to Your Dressing
If you prefer your salad to have some heat, you can add chili flakes or Sriracha sauce to your dressing. Chili flakes add a spicy kick to the salad, which complements its savory and sweet flavors.
Tip 4.2: Add Fresh Herbs to Your Dressing
Adding fresh herbs such as cilantro or basil to your dressing also enhances its flavor and aroma. Herbs add a fresh and fragrant dimension to the dressing, which complements the salad's crisp and crunchy vegetables.

Conclusion

In conclusion, making the perfect Asian chicken, cabbage, and noodles salad requires choosing the right vegetables, noodles, protein, and dressing. By following these valuable tips, you can enhance the flavor and texture of your salad and make a nutritious and delicious dish that your family and friends will love.
