6 cups shredded Chinese cabbage (about 1 medium-size head)
1/4 cup finely minced scallions
1 tablespoon finely slivered fresh ginger
2 tablespoons sesame seeds
1/3 cup rice vinegar
1 tablespoon light soy sauce
1/3 cup Oriental sesame oil
1 tablespoon finely minced fresh coriander leaves
Hot red pepper flakes to taste

Steps:

  • Put the cabbage in a large bowl. Toss with the scallions and ginger.
  • Put the sesame seeds in a dry skillet over medium-high heat and toast until golden, about three minutes. Remove from heat; set aside.
  • Mix the vinegar, soy sauce and sesame oil together. Pour the dressing over the cabbage and toss gently. Add the coriander leaves and red pepper flakes and toss again.
  • Transfer to a serving bowl and sprinkle with the toasted sesame seeds. The salad is ready to serve, but it can wait, at room temperature, an hour or two before serving.

1 medium cucumber, halved lengthwise and thinly sliced
1 cup snow peas, cut up
1/4 cup rice vinegar
1 tablespoon salad oil
2 teaspoons toasted sesame oil
1/2 teaspoon sugar
1/4 teaspoon salt
1/4 teaspoon crushed red pepper flakes
4 cups Chinese cabbage, shredded (Napa cabbage)
1/2 cup honey-roasted peanuts or 1/2 cup dry roasted peanuts, coarsely chopped

Steps:

  • In a large bowl combine cucumber and pea pods. For dressing, in a small bowl stir together vinegar, salad oil, sesame oil, sugar, salt, and crushed red pepper. Pour dressing over cucumber and pea pods, stirring to coat. Cover and chill for at least 4 hours or up to 24 hours.
  • Stir Chinese cabbage into cucumber mixture. Sprinkle with nuts. Makes 8 servings.

1/2 c fish sauce
1/4 c mirin

1/2 c or more slivered almonds
1/2 c or more unsalted sunflower seeds
1/4 c butter, melted
1/2 c salad oil

1/4 c rice wine vinegar (non- seasoned preferred)
1/4 c granulated sugar
1 clove garlic
1 Ichiban soup flavour packet

Steps:

  • Cut up sui choy (quarter head but don't cut through) into fine ribbons. Place in bowl. Break up noodles into small pieces. Add noodles, nuts and butter to saute pan, and saute until golden. Don't overcook. Cool before adding to sui choy (don't add until just before serving). Prepare salad dressing (add all ingredients togethr and blend). The salad can be made ahead just keep cabbage, noodle mixture and dressing apart until serving.
