Asian Chicken Burger with Spicy Lemongrass Mayo and Pickled Asian Slaw image

Provided by Kelsey Nixon

Categories     main-dish

Time 55m

Yield 4 servings

Number Of Ingredients 21

1 cup mayonnaise
1 to 2 tablespoons chili sauce, such as Sriracha
1 tablespoon bruised and finely minced lemongrass
Zest and juice of 1 lime
Kosher salt and freshly ground pepper
1 1/2 pounds ground chicken, half dark and half white meat
2 tablespoons hoisin sauce
1 tablespoon toasted sesame oil
1 tablespoon soy sauce
4 cloves garlic, minced
4 scallions, green and white parts minced
Kosher salt and freshly ground pepper
4 sesame-seed hamburger buns, halved and buttered
Pickled Asian Slaw, for serving, recipe follows
1/4 cup rice wine vinegar
2 tablespoons toasted sesame oil
2 cloves garlic, minced
Kosher salt and cracked black pepper
2 tablespoons thinly sliced pickled ginger
1/4 small head napa cabbage, finely shredded (about 3 cups)
1/4 red bell pepper, thinly sliced

Steps:

  • For the spicy lemongrass mayo: Mix together the mayonnaise, chili sauce, lime zest and juice and lemongrass in a small bowl. Season with salt and pepper and set aside. For the Asian chicken burger: Combine the chicken, hoisin, sesame oil, soy sauce, garlic and scallions in a large bowl. Mix together and form into 4 equal patties about 1/2-inch thick and 4 inches wide. This patty will be a bit wetter than your average patty because of the sauces and flavor in there. Sprinkle each side of the patties generously with salt and pepper. Create a small well in the center of each patty, using your thumb. Cook your patties on the griddle over medium heat until golden brown on each side and 160 degrees F, 4 to 5 minutes per side. Because of the sugar content in these patties, they can burn easily so watch your heat. Let rest 5 minutes. Place your buns on the griddle and toast them. For assembling: Place some of the spicy lemongrass mayo on each side of the buns. Add the chicken patties and top with the Pickled Asian Slaw. Finish with the top bun and serve with additional slaw and mayo on the side.
  • Add the rice wine vinegar to a mixing bowl and whisk in the sesame oil and garlic. Season with salt and pepper. Add the ginger, cabbage and peppers and toss to coat with the dressing. Adjust the seasoning and let sit 20 minutes to let the flavors meld together before serving. Yield: 2 cups.

ASIAN PORK BURGER

Asian Pork Burger image

I am a big fan of American classics like burgers and pizza, but sometimes you need to push things a little bit and try to come up with something that is a bit different. My wife and I both love Asian food and we love burgers, so one day I got inspired to whip up this recipe. They turned out amazing the first time; you just have to try these. They are so flavorful you can eat them without a bun. I would recommend putting some extra teriyaki sauce on them.

Provided by Norm Walker

Categories     World Cuisine Recipes     Asian

Time 30m

Yield 8

Number Of Ingredients 10

2 pounds ground pork
1 small apple - peeled, cored, and chopped
½ red onion, chopped
½ green or red bell pepper, chopped
¼ cup teriyaki sauce
¼ cup apple cider
1 teaspoon ground ginger
½ cup bread crumbs
1 teaspoon black pepper
1 teaspoon soy sauce

Steps:

  • Mix the ground pork, apple, onion, bell pepper, teriyaki sauce, apple cider, ground ginger, bread crumbs, black pepper, and soy sauce together in a mixing bowl until evenly combined; shape into 8 patties. Chill the patties in the freezer for 30 minutes so they are not soft when placed on the grill.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Cook the burgers on the preheated grill until firm, hot, and no longer pink in the center, about 5 minutes per side. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C).

When it comes to burgers, it is not uncommon to think of a juicy beef patty sandwiched between two soft buns. However, with the rise of fusion cuisine, burger recipes have now gone beyond the traditional American-style burger. Thus, we have all sorts of variations, including the Asian-style burger. Asian burger recipes use different flavors and ingredients that are characteristic of Asian cuisine. If you are looking to make an Asian burger, here are some valuable tips that you should keep in mind.

Tip 1: Choose the right protein

The protein is the main ingredient in a burger patty. When making an Asian-style burger, it is important to choose the right protein that can handle the spices and strong flavors. Popular choices include ground pork, turkey, chicken, and even tofu. If you are using meat, it is best to use a lean cut with around 15-20% fat content. This will help prevent the patty from becoming too tough or dry.
Tip 1.1: Use Asian-style seasonings
Using appropriate seasonings is key to making an Asian-style burger. Some popular seasonings are garlic, ginger, soy sauce, sesame oil, and sriracha. You can also experiment with chili paste, curry powder, and five-spice powder. These seasonings will help elevate the flavor of the meat and give it an authentic Asian taste.

Tip 2: Add texture and crunch

One of the things that make burgers great is the different textures that come together in each bite. To make an Asian burger even better, it is essential to add texture and crunch. You can add crunch by topping the burger with ingredients like lettuce, cucumbers, or raw onions. You can also add texture by mixing in ingredients like grated carrots, water chestnuts, or chopped scallions into the patty.
Tip 2.1: Play with different toppings
In addition to adding texture, experimenting with different toppings can take your Asian burger to the next level. Traditional toppings like cheese, ketchup, and mustard may not work as well with an Asian-style burger. Instead, try toppings like kimchi, pickled vegetables, cilantro, or avocado. These toppings will add more flavor and authenticity to your burger.

Tip 3: Use a light bun or substitute

Using the right bun or substitute for your burger is important as it can impact the overall flavor and texture of your burger. When making an Asian burger, it is best to use a lighter bun or substitute. Brioche or sourdough buns may be too heavy and overpower the flavor of the burger. Instead, opt for a steamed bun, lettuce wrap, or even a rice cake.
Tip 3.1: Make your own bun
If you want to take it a step further, you can make your own bun that suits your Asian-style burger. For example, you can make a matcha bun for a Japanese-inspired burger or a coconut milk bun for a Thai-inspired burger. Making your own bun will give your burger a unique twist and add to the overall experience.

Tip 4: Don't forget the sauce

Sauces are essential in any burger as they add moisture and flavor to the patty. When making an Asian-style burger, it is important to choose the right sauce that complements the other ingredients. Common sauces include teriyaki sauce, hoisin sauce, peanut sauce, or even a spicy mayo. You can also make your own sauce using ingredients like miso, ginger, or honey.
Tip 4.1: Use the sauce to tie everything together
After you have chosen the toppings, bun, and patty, the sauce is the final ingredient that ties everything together. You can adjust the sauce based on your preference, adding more or less for more or less intense flavor. By choosing the right sauce, you can make your Asian burger more cohesive and appetizing.

Tip 5: Experiment with fusion styles

Asian burgers do not have to be solely authentic. One of the benefits of fusion cuisine is the ability to combine different styles and flavors to create a unique dish. You can experiment with different fusion styles when making an Asian-style burger. For example, you can make a Korean-Mexican fusion burger by adding kimchi, gochujang, and cilantro to ground beef. Or, you can make a South Asian-inspired burger by using ground chicken, curry powder, and mango chutney.
Tip 5.1: Transport the flavors of different dishes into your burger
Another tip for experimenting with fusion styles is to transport the flavors of other Asian dishes into your burger. For example, you can make a teriyaki burger by adding teriyaki sauce and grilled pineapple to the patty. Or, you can make a satay burger by adding peanut sauce, cucumber, and cilantro to the patty. By combining different flavors, you can create an Asian-style burger that is unique and delicious.

Conclusion

Making an Asian-style burger requires attention to detail and experimentation. By choosing the right protein, adding texture and crunch, using a light bun or substitute, choosing the right sauce, and experimenting with fusion styles, you can create an Asian burger that is delicious and unique. With these valuable tips, you can elevate your burger game and impress your family and friends.
