Time 40m

Number Of Ingredients 19

12 ounces flank steak ((sliced ⅛-inch thick into 2- to 3-inch pieces))
1 teaspoon water
¼ teaspoon baking soda
1 teaspoon cornstarch
2 teaspoons vegetable oil
4 cups bok choy ((250g, cut into 1x3-inch pieces, washed and drained))
¾ cup Bunashimeji or Beech mushrooms, washed and drained ((50g))
¾ cup sugar snap peas or snow peas ((65g, washed and drained))
½ cup warm water or beef stock
¼ teaspoon sesame oil
2 teaspoons light soy sauce
1 teaspoon dark soy sauce ((or mushroom flavored dark soy sauce if you have it))
1 tablespoon oyster sauce
¼ teaspoon sugar
3 tablespoons canola oil ((divided))
½ teaspoon minced ginger
2 cloves garlic ((finely minced))
1 tablespoon Shaoxing wine
2 teaspoons cornstarch ((mixed with 1 tablespoon water))

Steps:

  • Mix together the marinade ingredients with the beef until well-coated, and set aside for 30 minutes or overnight. Next, prepare your veggies and set aside.
  • In a small bowl, mix the water (or beef stock, if using), sesame oil, soy sauces, oyster sauce and sugar, and set aside.
  • Heat your wok on high heat and spread 2 tablespoons of oil around the perimeter to coat. Once the wok and oil start to smoke, add the beef, and use your metal wok spatula to spread the beef in one even layer. Sear for 30 seconds. Turn the beef to sear the uncooked sides for another 30 seconds. At this point, the beef should be about 80% done. Turn off the heat and transfer the beef back to the marinade bowl.
  • Next, with the heat back on high, add the ginger and 1 tablespoon of oil to the wok. Cook for 10 seconds, and add the garlic. After 5 seconds, add the mushrooms and stir fry for another 15 seconds, giving them a good sear. Add the Shaoxing wine.
  • Next, add the snap peas and the bok choy, and stir fry on the highest heat for another 20 seconds until the bok choy begins to wilt. Stir in the beef and your prepared sauce mixture. Gather everything in the center of the wok.
  • When everything comes back up to a simmer, and the sides of the wok begin to super-heat, Stir fry everything in a circular motion so the beef and vegetables hit the sides of the wok--this gets you that wok hay flavor!
  • Pour the cornstarch slurry in the center of the wok while stirring. The sauce will immediately thicken, so work fast to stir everything together for another 20 seconds to evenly coat the beef and vegetables in the sauce. There should not be any standing sauce - everything should be clinging to the beef and vegetable stir fry. This is the classic restaurant-style preparation, but you can add more stock and salt or soy sauce to taste if you like a saucier stir-fry.
  • Turn off the heat and transfer your beef vegetable stir-fry to a serving plate; you can also dish it out individually on a bed of rice for a great one-plate meal. Enjoy immediately. Though you probably don't need us to tell you that.

ASIAN BEEF & VEGETABLE CASSEROLE

Asian Beef & Vegetable Casserole image

Enjoy Asian flavours but wanting a low cost meal? Then this recipe - which uses slow-cooking to get lots of flavour from some of the cheaper cuts of beef - may be just what you're looking for. Michelle Southan's recipe for Asian Beef and Vegetable Casserole is from the August 2007 issue of the 'Australian Good Taste' magazine. Michelle suggests that you "put away your wok and get ready for aromatic slow-cooked beef, Asian style". Some conversions which may be useful in making this recipe: 90g = 3oz; 300g = approx. 91/2oz; 1.5 kg = 3lbs; 4cm = 11/2"; 125ml = 4 fluid ounces; 500ml = 16 fluid ounces.

CHINESE-STYLE BRAISED BEEF ONE-POT

Chinese-style braised beef one-pot image

Great for casual entertaining, when you fancy a warming beef stew but with some more vibrant flavours

Provided by Jane Hornby

Categories     Dinner, Main course

Time 2h40m

Number Of Ingredients 14

3-4 tbsp olive oil
6 garlic cloves, thinly sliced
good thumb-size piece fresh root ginger, peeled and shredded
1 bunch spring onions, sliced
1 red chilli, deseeded and thinly sliced
1 ½kg braising beef, cut into large pieces (we used ox cheek)
2 tbsp plain flour, well seasoned
1 tsp Chinese five-spice powder
2 star anise (optional)
2 tsp light muscovado sugar (or use whatever you've got)
3 tbsp Chinese cooking wine or dry sherry
3 tbsp dark soy sauce, plus more to serve
500ml beef stock (we used Knorr Touch of Taste)
steamed bok choi and steamed basmati rice, to serve

Steps:

  • Heat 2 tbsp of the oil in a large, shallow casserole. Fry the garlic, ginger, onions and chilli for 3 mins until soft and fragrant. Tip onto a plate. Toss the beef in the flour, add 1 tbsp more oil to the pan, then brown the meat in batches, adding the final tbsp oil if you need to. It should take about 5 mins to brown each batch properly.
  • Add the five-spice and star anise (if using) to the pan, tip in the gingery mix, then fry for 1 min until the spices are fragrant. Add the sugar, then the beef and stir until combined. Keep the heat high, then splash in the wine or sherry, scraping up any meaty bits. Heat oven to 150C/fan 130C/gas 2.
  • Pour in the soy and stock (it won't cover the meat completely), bring to a simmer, then tightly cover, transfer to the oven and cook for 1½-2 hrs, stirring the meat halfway through. The meat should be very soft, and any sinewy bits should have melted away. Season with more soy. This can now be chilled and frozen for up to 1 month.
  • Nestle the cooked bok choi into the pan, then bring to the table with the basmati rice straight away and tuck in.

These hearty and delicious dishes often incorporate the spicy and savory flavors of Asian cuisine and combine them with comforting and familiar elements of Western casseroles. These recipes are ideal for busy families who want a one-pot dish that is easy to make, packed with nutrients, and above all, delicious.

Ingredients

The beauty of Asian beef vegetable casserole recipes is that they are highly customizable, and each cook can add their unique twist to the dish. However, there are a few essential ingredients that are common in most recipes. These include:
1. Beef:
Beef is the primary protein source in these recipes. Often, recipes call for leaner cuts of beef, such as sirloin, flank, or chuck roast.
2. Vegetables:
Vegetables are an essential component of Asian beef vegetable casseroles. The most common vegetables used include bell peppers, onions, carrots, mushrooms, and broccoli.
3. Sauces:
Asian-inspired sauces add the distinct flavors to these dishes. Soy sauce, teriyaki sauce, hoisin sauce, oyster sauce, and chili sauce are some of the most commonly used.
4. Starches:
Starches help thicken the sauce and provide depth to the dish. Rice, noodles, and potatoes are the most commonly used.

Preparation

The preparation of the Asian beef vegetable casserole can vary depending on the recipe. However, here are the general steps involved in most recipes:
1. Preheat the oven:
Preheat the oven to the temperature mentioned in the recipe.
2. Brown the beef:
Place a large skillet over medium-high heat and add a tablespoon of oil. Once the oil is hot, add the beef and cook until browned.
3. Add the vegetables:
Once the beef is browned, add the vegetables, and sauté for a few minutes until slightly softened.
4. Add the sauces:
Next, add the sauces mentioned in the recipe and stir to combine.
5. Add the starches:
Mix in the rice or noodles into the beef and vegetable mixture, or layer the potatoes on top of the mixture.
6. Transfer to the oven:
Transfer the skillet or casserole dish to the oven and cook for the time specified in the recipe until the dish is bubbly and the starches are cooked through.

Tips for customizing

It is easy to customize Asian beef vegetable casserole recipes according to your preferences. Here are a few tips to consider:
1. Spice level:
If you prefer mild flavors, choose sauces with lower spice levels, such as teriyaki sauce. Conversely, if you want to incorporate some heat, use chili sauce or add diced jalapenos.
2. Vegetables:
Feel free to add your favorite vegetables to the casserole, such as zucchini, green beans, or spinach.
3. Protein matter:
If you want to try something different, substitute the beef with chicken or shrimp.
4. Cheese talk:
Add a layer of cheese to the top of the casserole before baking to create a golden and bubbly top layer.

Conclusion

In conclusion, Asian beef vegetable casserole recipes are versatile, easy to make, and full of flavors. The combination of beef, vegetables, sauce, and starches provides a balanced meal that is comforting and hearty. Customize these recipes according to your preferences to create mouth-watering dishes that your family will love.

Casseroles have long been known to be an easy and hearty meal that can be prepared in advance and fed to a large group of people. One variation of a casserole that has been gaining popularity is an Asian beef vegetable casserole recipe. This dish is not only delicious, but it also provides a nutritious and balanced meal. In this article, we will be discussing valuable tips to keep in mind when preparing an Asian beef vegetable casserole.

Choose the right meat

When preparing an Asian beef vegetable casserole, it is important to choose the right cut of meat. The best cuts of beef for a casserole recipe are those that have a lot of connective tissue, such as chuck roast or beef brisket. These cuts contain a lot of collagen which breaks down during cooking and turns into a gelatinous texture, adding richness and flavor to the dish.

Cut vegetables properly

The vegetables used in the casserole should be cut into small, bite-sized pieces to ensure they cook evenly. Some vegetables, like carrots and potatoes, can take longer to cook than others, so it's important to cut them smaller to prevent them from being undercooked. Chopping the vegetables into even-sized pieces will also help them cook at the same rate, resulting in a more uniform dish.

Brown the meat

Before adding the beef to the casserole, it should be browned on all sides first. This step helps to enhance the flavors and adds a nice color to the dish. Heat up a large skillet over high heat and add a tablespoon of oil. Once the oil is hot, add the beef and cook until browned on all sides. Remove from the skillet and set aside.

Layering technique

The layering technique is the key to success when making an Asian beef vegetable casserole. The goal is to create a balanced dish with all the ingredients evenly distributed throughout. Start by pouring a small amount of broth or sauce into the bottom of the casserole dish. Add a layer of vegetables followed by a layer of beef. Repeat this process until all the ingredients are used up, ending with a layer of vegetables on top.

Add spices and seasonings

Spices and seasonings are what give a casserole recipe its unique taste. To make an Asian beef vegetable casserole, consider using ginger, garlic, soy sauce, and sesame oil. These ingredients will add depth and richness to the dish. Add the spices and seasonings in layers as you're building the casserole to ensure each layer is well-seasoned.

Cooking time and temperature

The cooking time and temperature for an Asian beef vegetable casserole is typically around 350°F for 1.5 to 2 hours. It's important to cover the pan with foil or a lid during the first hour of cooking to prevent the casserole from drying out. Remove the lid or foil during the last 30 minutes of cooking to allow the vegetables to brown on top. Keep an eye on the casserole during the last 30 minutes to prevent it from overcooking.

Let it rest

Once the casserole is finished cooking, it's important to let it rest for at least 10 minutes before serving. This will allow the juices to redistribute and the casserole to cool down a bit, making it easier to handle. Cover the casserole with foil to keep it warm while it rests.

Conclusion

An Asian beef vegetable casserole is a delicious and nutritious dish that can be enjoyed by the whole family. By choosing the right meat, cutting vegetables properly, browning the meat, layering the ingredients, seasoning well, cooking at the right temperature and time, and letting it rest before serving, you can create a flavorful and balanced casserole recipe that everyone will love. Try experimenting with different vegetables and spices to make it your own.
