Yield Makes 4 servings

Number Of Ingredients 13

1 cup shelled pistachios
4 large pears, peeled, cored, and halved
2 tablespoons extra virgin olive oil
4 (1/3-inch-thick) round slices ricotta salata or Greek manouri cheese
8 cups trimmed, torn arugula leaves
For the dressing
1/4 cup extra virgin olive oil
4 tablespoons honey
4 tablespoons balsamic vinegar
2 tablespoons fresh orange juice
1 teaspoon chopped fresh thyme
1/2 teaspoon crushed pink peppercorns
Salt and freshly ground black pepper to taste

Steps:

  • Heat the grill to medium.
  • Place the pistachios in a shallow, heavy pan and place on the grill rack. Pull down the lid (make sure the ventilation holes are open), and smoke for about 3 minutes. Open the lid once, shake the pan back and forth to keep the nuts from burning, and continue smoking another minute or two, until lightly browned. Remove and set aside.
  • In a medium bowl, toss the pears with the olive oil. Place on the hottest part of the grill rack, turning until there are light grill marks on each of the pear wedges, about 3 minutes. Remove.
  • Place the cheese rounds on the grill rack over the medium-hot spot on the grill and cook just until the cheese is branded lightly with grill lines. Flip carefully and repeat on the other side. Remove.
  • Divide the arugula evenly among four plates. Cut each cheese round into quarters. Top the arugula with alternating wedges of grilled ricotta salata and grilled pears. Add the smoked pistachios.
  • Make the dressing:
  • Whisk together all the dressing ingredients until smooth and pour in equal amounts over each salad. Serve.

Arugula pear and orange salad is a perfect choice if you want to impress your guests with a refreshing and light salad. The combination of earthy arugula leaves, juicy pears, and sweet oranges creates a perfect harmony of flavors that is hard to resist. If you're planning to make this salad, we've got you covered with some valuable tips that will make your salad taste better and look more appetizing. Tip 1: Select the Best Ingredients The first rule of making a good salad is to choose high-quality ingredients. When making an arugula pear and orange salad, select the freshest arugula leaves, ripe pears, and juicy oranges. It's best to buy the ingredients from the local farmer's market or grocery store, where you can find the freshest produce. Always check for quality when selecting the ingredients for the salad. Tip 2: Wash and Dry the Arugula Properly Arugula is known for its earthy and bitter taste, which makes it a perfect ingredient for salads. To use arugula in your pear and orange salad, you need to wash and dry it properly. Fill a bowl with cold water and place the arugula leaves in the bowl. Move them around gently to remove any dirt or debris. Drain the water and rinse the leaves again. Use a salad spinner to dry the leaves and ensure that no water droplets remain. This ensures that the salad is crispy and fresh, rather than soggy. Tip 3: Cut the Pears in Advance Pears are an essential ingredient of this salad, and they require some preparation before using them. Cut the pears into thin slices in advance, so they are ready to use when making the salad. This saves you time and allows you to focus on other aspects of the salad. We recommend that you use ripe, sweet pears that have a soft texture. Tip 4: Peel the Oranges Correctly Peeling oranges can be tricky, but it’s an important step in making an arugula pear and orange salad. You can peel the oranges using your fingers or a sharp knife. Start by removing the top and bottom parts of the orange, then cut off the skin from top to bottom, following the curve of the fruit. Ensure that you remove as much of the white pith as possible, as it has a bitter taste that can affect the flavor of the salad. After peeling, slice the oranges into thin pieces. Tip 5: Add Toppings for Flavor The toppings you choose for your arugula pear and orange salad can make a significant difference in the overall taste. We recommend adding chopped nuts or seeds, such as almonds, walnuts, or sunflower seeds, to add a crunchy texture to the salad. You can also sprinkle some crumbled feta cheese or goat cheese to enhance the flavor. You can add other toppings, such as sliced avocado, cherry tomatoes, or even diced chicken breast, for extra protein. Tip 6: Dress the Salad Before Serving Dressing the salad with the right condiments is essential to enhance its taste. You can use a standard dressing, such as olive oil and balsamic vinegar, or try something new, such as a honey mustard dressing or a vinaigrette. You can also mix the dressing with the toppings to create a more uniform flavor. When dressing the salad, start by adding a small amount of the dressing, then toss the salad gently to coat all the ingredients. You can add more dressing if required, but don't add too much, as it can make the salad soggy. Tip 7: Serve the Salad in a Presentable Manner Finally, presenting the salad in an appetizing manner will make it look more appetizing and encourage people to try it. We recommend using a wide and shallow bowl that allows the colors and textures of the salad to be displayed. Place the arugula leaves on the bottom, followed by the sliced pears, oranges, and toppings. Drizzle the dressing on top and garnish with fresh herbs or a sprinkle of black pepper. You can also serve the salad in individual bowls, which adds a touch of elegance to the presentation. In conclusion, making an arugula, pear, and orange salad is straightforward, and with the above tips in mind, you cannot go wrong. Remember to select the best ingredients, wash and dry the arugula properly, cut the pears in advance, and peel the oranges correctly. Adding toppings for flavor, dressing the salad before serving, and presenting it in a presentable manner will make you look like a pro in the kitchen. Try out these tips, and you will impress your guests with the perfect arugula, pear, and orange salad!
