This is an old family favourite. I can't remember where I got the recipe, but I have been making these squares for 25 years. These spicy squares are excellent served hot or cold. If you are not a fan of alot of herbs, than please, add the amount you would prefer, this dish is very versatile.

2 (10 ounce) jars marinated artichokes
1 onion, small, chopped
2 garlic cloves, chopped
1/2 cup breadcrumbs
2 cups old cheddar cheese, grated
6 large eggs, beaten
1 teaspoon salt
1 teaspoon white pepper
1 teaspoon dried parsley
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon dried thyme
1 teaspoon dried rosemary
2 teaspoons Tabasco sauce

Steps:

  • Preheat oven to 350°.
  • Drain juice from one jar of artichokes into frying pan.
  • Sauté onion and garlic in the artichoke juice, simmer and cool.
  • Chop artichokes and mix with the cooled onions and garlic.
  • Combine artichoke mixture, breadcrumbs, cheese, eggs, salt, pepper, parsley, oregano, basil, thyme, rosemary and Tabasco sauce together until well blended.
  • Pour the artichoke mixture into a greased 8x8-inch or 9x9-inch pan.
  • Bake in a 350° oven for 40 minutes.
  • Let cool 5 minutes; cut and enjoy.

1 carton (8 ounces) spreadable chive and onion cream cheese
2 cans (14 ounces each) water-packed artichoke hearts, rinsed, drained and chopped
1/2 teaspoon minced garlic
2 tubes (8 ounces each) refrigerated crescent rolls

Steps:

  • In a small bowl, beat the mozzarella cheese, cream cheese, artichokes and garlic until blended. , Unroll both tubes of crescent dough into rectangles. Place dough in an ungreased 15x10x1-in. baking pan; press onto the bottom of pan, sealing seams and perforations. Spread with artichoke mixture. , Bake at 375° for 18-20 minutes or until crust is golden brown. Cut into squares.

1 tablespoon margarine
1 (8 ounce) package fresh mushrooms, chopped
1 onion, chopped
1 clove garlic, minced
4 eggs, beaten
¼ cup bread crumbs
¼ teaspoon salt
⅛ teaspoon hot pepper sauce (such as Tabasco®)
⅛ teaspoon ground black pepper
⅛ teaspoon dried oregano
⅛ teaspoon garlic salt
2 (6.5 ounce) jars marinated artichoke hearts, drained and chopped
¾ pound shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 11x7-inch baking dish.
  • Melt margarine in a skillet over medium-high heat; saute mushrooms, onion, and garlic in hot butter until the onion is clear, 5 to 7 minutes.
  • Beat eggs, bread crumbs, salt, hot sauce, pepper, oregano, and garlic salt together in a bowl. Stir mushroom mixture, artichokes, and cheese into the egg mixture; pour into the prepared baking dish.
  • Bake in preheated oven until the egg is set in the middle, 35 to 40 minutes. Cool slightly in baking dish before cutting into squares to serve.

2/3 cup shredded Parmesan cheese, divided

1/4 cup chopped green onions (green portion only)
2 tablespoons finely chopped fresh dill
1/4 teaspoon pepper
5 large eggs
1 cup heavy whipping cream

  • Preheat oven to 350°. Unroll crescent roll dough into a long rectangle; place in ungreased 11x7-in. baking dish. 1/4 c chopped red onion
3 clove garlic, minced
2 Tbsp butter
4 eggs, beaten
12 oz artichoke hearts
1/4 c dry bread crumbs
1/2 lb cheddar cheese, grated
1 Tbsp dried parsley
1/4 tsp salt
1/4 tsp oregano
1/4 tsp black pepper
1/4 tsp hot pepper sauce

Steps:

  • 1. Drain and finely chop artichoke hearts.
  • 2. Saute onion and garlic in butter.
  • 3. Mix eggs, artichokes, bread crumbs, cheese, parsley and seasonings.
  • 4. Add onions and garlic.
  • 5. Turn into buttered 9 x 9 pan. Bake at 325 for 40-45 minutes or until set.

1/2 cup vegetable oil, plus
3 tablespoons vegetable oil, divided
1 cup chopped mushroom
1/4 cup thinly sliced celery
1 (13 3/4 ounce) can artichoke hearts, drained and chopped
1/3 cup chopped green onion
1/2 teaspoon dried marjoram, crushed
1/4 teaspoon dried oregano, crushed
1/4 teaspoon ground red pepper
2 cloves garlic, minced
1 cup shredded cheddar cheese
1 cup shredded monterey jack cheese
2 eggs, slightly beaten
1 1/2 cups all-purpose flour
1/2 teaspoon salt
1/4 cup milk

Steps:

  • Heat 3 tbs oil in medium skillet over medium-high heat.
  • Add mushrooms,celery and garlic and sautee till celery is tender.
  • Remove from heat, stir in artichoke hearts, onion, marjoram, oregano and ground red pepper Add cheeses and eggs, mix well and set aside.
  • Combine flour and salt in a medium bowl.
  • Combine 1/2 cup vegetable oil and the milk in a small bowl.
  • Add to flour mixture, stir until mixture forms a ball.
  • Press dough in bottom and 1 1/2 inches up sides of 13x9x2 inch pan.
  • Bake in preheated 350 degree oven for 10 minutes.
  • Spread artichoke mixture on baked crust.
  • Continue baking about 20 minutes more or until center is set.
  • Cool slightly, cut into 24 squares.
  • Serve warm.

4 tablespoons grated smoked gouda cheese
6 ounces cream cheese, softened (3/4 of 8 oz. pkg)
1/4 cup sour cream
1/8 teaspoon red cayenne chili pepper flakes
1/4 teaspoon seasoning salt
1 egg
1/3 cup chopped shallot
1 (14 ounce) can artichoke hearts, drained and chopped
1/8 cup chopped sun-dried tomato

Steps:

  • Preheat oven to 375*F.
  • Unroll dough into long rectangle in ungreased 13 x 9 inch pan; seal perforations. Press over bottom and 1/2 inch up sides to form crust. Sprinkle with Gouda cheese.
  • Bake at 375*F. for 5 minutes.
  • In small bowl, beat cream cheese until smooth. Add sour cream, red pepper flakes, salt and egg; blend well. Spread over partially baked crust.

  • Preheat oven to 350 degrees. Spray a 13" x 9" baking pan with non-stick cooking spray. Set aside. For Filling: Heat oil in medium skillet. Add mushrooms, celery and garlic. Saute until celery is tender. Remove from heat. Stir in artichoke hearts, green onion, marjoram, oregano, and cayenne. Add cheddar cheese, Monteray Jack cheese, and eggs. Mix well. Set aside. For Pastry: Combine flour and salt in a medium mixing bowl. Blend oil and milk in a small bowl; add to flour mixture. Stir with fork until mixture forms a ball. 6 1/2 ounces marinated artichokes, reserve marinate, cut in thirds

1 cup breadcrumbs (or can use cracker crumbs)

Steps:

  • Saute green onion and garlic in the oil marinade from the artickoke jar.
  • Combine all ingredients in greased, large casserole (11 X 7 X 1 inch).
  • Bake at 350 degrees for 40 minutes.
  • Cut into squares, hence the name of the dish!
  • Can serve hot or cold.

2 cloves garlic, minced
1 cup grated mozzarella cheese

3 egg whites, lightly beaten
1 egg, lightly beaten
1/4 cup whole wheat bread crumbs

Spinach Artichoke Squares Recipe - (4/5) image

Puff Pastry

Steps:

  • In a medium sauté pan, heat 1 tablespoon olive oil over medium heat. Add 4 chopped scallions and 1 clove minced garlic; cook until fragrant, 1 minute. Add 2 cups roughly chopped artichoke hearts and 12 ounces fresh spinach; cook until the spinach wilts, 2 to 3 minutes. Stir in 8 ounces cream cheese. Roll out the puff pastry a little to flatten it. Cut the pastry into 2½-inch squares. Scoop 2 tablespoons of the filling onto the center of each square and then fold in the edges of the puff pastry. Top each square with 1 tablespoon grated Parmesan cheese. Transfer to a parchment-lined baking sheet and bake at 400°F until golden brown, 15 to 17 minutes.

12 Rhodes White Dinner Rolls , thawed & risen
1 (14-ounce) can artichoke hearts, drained and chopped
1 (10-ounce) package frozen leaf spinach, thawed and squeezed to drain, chopped
1 cup shredded Parmesan cheese, divided
2/3 cup light mayonnaise
2/3 cup sour cream
2 cloves garlic, minced
1 tablespoon fresh basil, finely chopped

Steps:

  • Combine rolls and roll into an 11x16-inch rectangle. Place in a sprayed 10x15-inch jelly roll pan. Pre bake crust at 350°F 10-15 minutes or until light golden brown. Let cool slightly. Combine artichokes, spinach, 3/4 cup Parmesan cheese, mayonnaise, sour cream, garlic and basil and mix well. Spread mixture evenly over pre baked crust. Sprinkle with 1/4 cup Parmesan cheese. Bake at 350°F 15-20 minutes. Serve warm.

Safflower oil and/or olive oil
1/3 cup minced onion
3 minced garlic cloves
4 eggs
1 (14 oz can) artichoke hearts, drained, chopped
1/4 cup dry breadcrumbs
1/2 lb. low-fat Swiss cheese or mix Emmenthaler and cheddar
fresh garden herbs (chives, etc.)
1/2 tsp. salt
dash pepper
dash hot pepper sauce

Steps:

  • In a large skillet over medium heat, heat safflower oil, add onion and garlic. Saute until onion is soft. In a large bowl, beat eggs, add artichoke. Stir in remaining ingredients. Rub olive oil inside a 7 x 11-inch baking dish. Heat oven to 325°F. Pour artichoke mix into baking dish. Bake for 25-30 minutes or until set. 10 more minutes if using multiple dishes. Broil for 3 minutes for nice golden top. Cool before cutting into squares. Can refrigerate the night before for easy cutting next day. Makes @30 squares. Can be served warm or room temperature.

1/2 teaspoon dried marjoram leaves

12 oz jar marinated artichoke hearts, finely chopped (food processor best)
10 saltine crackers, finely crushed (food processor)
1 small onion, finely chopped
1 - 2 scallions, finely chopped
4 eggs, beaten
8 oz shredded sharp cheddar cheese (or mix of cheeses)
2 Tbsp parmesan cheese

Steps:

  • 1. Preheat oven 325 - Spray 8" square pan
  • 2. Drain Artichoke hears, reserving 2 tablespoons of marinade.
  • 3. sauté onion in the marinade, drain.
  • 4. Combine onion with chopped artichoke hearts and remaining ingredients.
  • 5. Pour into sprayed 8" square baking dish. Bake at 325 for 35 to 40 minutes. Cool thoroughly. Cut into 1" squares. Reheat and serve warm.

2 (6 ounce) jars marinated artichoke hearts
1 small onion, finely chopped
1 clove garlic, minced
4 large eggs
1/4 cup dry breadcrumbs, unseasoned
1/8 teaspoon black pepper
1/8 teaspoon dried oregano
1/8 teaspoon Tabasco sauce
2 tablespoons fresh parsley, chopped
1/2 lb cheddar cheese, grated

Steps:

  • Preheat oven to 350 degrees F.
  • Drain the oil from one of the jars of artichoke hearts directly into a skillet.
  • Don't turn on the skillet just yet.
  • Drain the other jar of artichokes hearts, this time discarding the oil.
  • Chop all of the artichoke hearts and set aside.
  • Now turn on your heat (to medium-high) under the skillet with the artichoke oil in it.
  • Add the minced garlic and the onions and saute until golden, about 5-10 minutes.
  • Remove from the skillet and put into a large mixing bowl,along with the chopped artichoke hearts.
  • Beat eggs together until they are frothy and then stir in breadcrumbs and the seasonings.
  • Combine with the artichoke mixture and the cheese.
  • Pour into a greased rectangular casserole dish and bake for 30 minutes.
