ARTICHOKE CRAB CAKES

Number Of Ingredients 6

1 pound pound fresh jumbo lump crabmeat, drained and picked
1 jar 6 oz. jar quartered, marinated artichoke hearts, drained
1/2 cup fine, dried breadcrumbs
1/4 cup mayonnaise
1 large egg, lightly beaten
1/2 teaspoon kosher salt

Steps:

  • Stir together all ingredients in a medium bowl.
  • Shape mixture into 8 patties.

I have yet to eat at this restaurant, but it is my goal to do so the next time I vacation at WDW. This appetizer is served at Victoria and Albert's at the Grand Floridian.

Number Of Ingredients 13

1 cup(s) diced artichoke bottoms(canned or frozen)
1 pound(s) lump crabmeat
3/4 cup(s) panko bread crumbs
1 teaspoon(s) finely chopped red onion
1/2 teaspoon(s) chopped fresh herbs(parsley, thyme, and chives)
1/2 cup(s) mayonnaise
1 - egg yolk
1 teaspoon(s) dijon mustard
1 teaspoon(s) worcestershire sauce
1/2 teaspoon(s) tabasco sauce
- coarse salt, to taste
- freshly ground black pepper, to taste
1/4 cup(s) unsalted butter

Steps:

  • In a mixing bowl, combine artichokes, crabmeat, bread crumbs, onion, and herbs.
  • Add the mayonaisse, egg yolk, mustard, Worcestershire sauce, Tabasco, salt, and pepper. Mix thoroughly. Divide mixture into 8 large or 16 small crab cakes.
  • Heat butter in hot saute pan. Fry cakes till golden brown on each side. Serve immediately.
