Artichoke, Cheese and Olive Antipasto image

A great way to start your Italian meal! I usually serve it with crusty bread slices that have been toasted in the oven until crisp for dipping into the marinade. Keeps for a week in the refrigerator and the longer it stands the better it gets!

Tip #1: Choose quality ingredients

The key to making a delicious artichoke cheese and olive antipasto is to use high-quality ingredients. Choose fresh artichokes that are firm, plump, and have tightly closed leaves. For the cheese, you can choose a range of different types, such as sharp cheddar or tangy goat cheese. Finally, make sure you choose good quality olives that have been cured in brine or oil.

Tip #2: Preparation is key

The preparation of the ingredients is crucial to making a great antipasto. Start by cleaning the artichokes under cold water, then remove the outer leaves until you reach the pale yellow leaves at the heart of the artichoke. Cut off the top of the artichoke, then trim off the tough outer layer of the stem. Steam or boil the artichokes until they are tender, then cut them into small pieces. For the cheese, cut it into small cubes or grate it into fine shreds. For the olives, remove the pits and slice them into thin pieces.

Tip #3: Add complementary flavors

Artichoke cheese and olive antipasto is a simple dish, but you can add extra flavor by including complementary ingredients. For example, you can add roasted red peppers, capers, or sun-dried tomatoes to the mix. These ingredients will add an extra layer of flavor and texture to the antipasto that will delight your taste buds.

Tip #4: Dress it up with a flavorful dressing

A good dressing can make all the difference in the final taste of your antipasto. A simple dressing of olive oil, balsamic vinegar, garlic, and Italian herbs can enhance the flavors of the other ingredients. You can also experiment with different types of dressings, such as lemon juice and honey or mustard and honey.
