HOT FETA, ARTICHOKE AND ROASTED RED PEPPER DIP
This dip was devoured at my recent party. The guests loved the extra kick that the feta and red peppers gave to classic artichoke dip. Serve with crackers, bagel chips, pita chips, et cetera!

- Preheat oven to 350 degrees F (175 degrees C).
- Mix together the artichokes, peppers, feta, mayonnaise, and Parmesan cheese in a bowl; spread into the bottom of a shallow baking dish.

I found this in a local newspaper and took it to a Christmas party. It was a huge hit! I used low-fat mayo and cream cheese and served with pita chips.

- Preheat oven to 350 degrees. Place feta in middle of a 9-inch pie dish. Pour oil over cheese; sprinkle remaining ingredients on and around it. Cover with parchment-lined foil and bake until heated through, about 40 minutes. Let cool slightly before serving with crackers or crostini.

This dip is the result of combining 3 of my favorite types of dips into one amazing super-dip! I actually prepared it before a camping trip last weekend and heated it on the small bbq we brought along and it turned out great that way too. Try it and you will love it!

- Preheat oven to 375 degrees F.
- In a food processor, chop the spinach, garlic, feta and artichoke hearts.
- In a medium bowl combine the artichoke mixture with the remaining ingredients, stirring to combine. Spoon into an 8" x 8" baking dish (or similar).
- Bake in the preheated oven for 20-25 minutes or until cheese is melted and bubbly.
- Serve with cubed sourdough bread or tortilla chips.

FETA ARTICHOKE DIP WITH ALMONDS AND TOASTED PITAS
Steps:
- FOR DIP: Preheat the oven to 350 degrees. Spread the almonds onto a cookie sheet. Toast for 10 minutes. Set aside. Combine all other ingredients into a mixing bowl. Add ½ of the almonds to the mixture. Pour mixture into a baking dish and top with the rest of the almonds. Cover with foil. Bake for 20 minutes at 350 degrees. After 20 minutes, remove foil and continue to bake 10 more minutes. FOR PITAS: Slice pitas into triangular wedges. Toss them in a large mixing bowl with olive oil and salt to taste. Toast them in the oven for 10 minutes at 350 degrees.
