ITALIAN HERB BREAD I
This aromatic bread can be served with dinner, or the dough can be used for pizza.

Steps:
- Mix yeast, warm water, and white sugar together in a large bowl. Set aside for five minutes, or until mixture becomes foamy.
- Stir olive oil, salt, herbs, garlic powder, onion powder, cheese, and 3 cups flour into the yeast mixture. Gradually mix in the next three cups of flour. Dough will be stiff.
- Knead dough for 5 to 10 minutes, or until it is smooth and rubbery. Place in an oiled bowl, and turn to cover the surface of the dough with oil. Cover with a damp linen dish towel. Allow to rise for one hour, or until the dough has doubled in size.
- Punch dough down to release all the air. Shape into two loaves. Place loaves on a greased cookie sheet, or into two greased 9 x 5 inch loaf pans. Allow to rise until doubled in size, about a 30 minutes.
- Bake at 350 degrees F (175 degrees C) for 35 minutes. Remove loaves from pan(s), and let cool on wire racks for at least 15 minutes before slicing.

PROSCIUTTO, ROSEMARY AND PEPPER BREAD
With the additions of prosciutto, fresh rosemary and cracked pepper, a basic bread becomes a festive loaf. The extra rising period gives the bread a more compact crumb and deeper flavor. If your main course is a simple roast, this bread goes well with dinner, or you can slice and serve it as an appetizer with a glass of wine.

- In a large bowl or in the bowl of a heavy-duty electric mixer, sprinkle the yeast over the water and stir. Let stand until the yeast softens, about 10 minutes. Stir to dissolve the yeast.
- Using a wooden spoon or the paddle blade of the mixer, stir in the oil, salt and pepper. Gradually beat in enough flour to make a shaggy dough that clears the sides of the bowl.
- If kneading by hand, turn out the dough onto a lightly floured work surface. Knead the dough, adding more flour as needed, until the dough is smooth and elastic, about 10 minutes.
- If kneading by machine, change to the dough hook and knead on medium-low speed until the dough is smooth and elastic, about 8 minutes. If desired, knead on the work surface to check the consistency.
- Shape the dough into a ball. Transfer the dough to a lightly oiled large bowl. Turn to coat the dough with oil. Cover tightly with plastic wrap. Let stand in a warm place until doubled in volume, about 1 hour.
- Punch down the dough and shape into a ball. Return the dough to the bowl, turn to coat with oil, cover and let rise until doubled again, about 45 minutes.
- Position a rack in the center of the oven and preheat to 400 degrees F. Lightly oil a large baking sheet.
- Turn out the dough onto the work surface. Knead, gradually working in the prosciutto and rosemary. Flatten the dough into a 12-inch disk. Starting at a long end, roll up jelly-roll style. Pinch the seams shut. Place on a baking sheet, seam side down. Cover loosely with plastic wrap. Let rise until doubled in volume, about 30 minutes.
- Using a very sharp knife, cut 3 shallow diagonal slashes in the top of the bread. Bake until the bread is golden brown and sounds hollow when tapped on the bottom, 35 to 40 minutes. Cool completely on a wire rack. If desired, wrap in aluminum foil and store at room temperature up to 8 hours before serving.
AROMATIC HERBED BREAD FILLED WITH PROSCIUTTO

Steps:
- Place all the bread ingredients except prosciutto in the bread machine pan in the order suggested by the manufacturer.
- Select dough cycle and start machine.
- At end of cycle take dough out and punch dough down and flatten; roll to a rectangle. place prosciutto over in a single layer then roll up as a jelly roll.
- Score top. Place loaves on greased cookie sheet. Cover; let rise until double, about 40 hour.
- Preheat oven to 400 degrees F.
- Brush loaf with milk. Sprinkle with herbs. Bake until a hollow sound when tapped, about 25 minutes; cool on wire racks.

For the bread:
- 3 cups of all-purpose flour
- 1 packet (7g) of dried yeast
- 1 cup of warm water
- 1 teaspoon of sugar
- 1 teaspoon of salt
- 1 tablespoon of olive oil
- 2 tablespoons of minced fresh rosemary
- 2 tablespoons of minced fresh thyme
- 2 tablespoons of minced fresh sage
For the filling:
- 8 thin slices of prosciutto
- 2 cups of fresh arugula leaves
Instructions
Preparing the bread:
- In a mixing bowl, combine the flour, salt, sugar, and dried yeast. Mix until well combined.
- Add in the olive oil and warm water and mix well. Knead the dough for a few minutes until it's smooth and elastic.
- Transfer the dough to an oiled bowl, cover with a towel and let it rest for about 10-15 minutes.
- Add in the minced herbs and gently mix until they're evenly distributed into the dough.
- Knead the dough for another minute or two until the herbs are well incorporated. Cover the dough and let it rise for about an hour or until it doubles in size.
- When the dough has risen, transfer it to a lightly floured surface and roll it into a rectangle shape of about 1cm thick.
- Place the prosciutto slices and fresh arugula leaves on the rolled-out dough. Make sure to spread them evenly from edge to edge.
- Roll up the dough tightly, making sure the filling stays inside. Pinch the edges of the roll to seal them.
- Transfer the rolled dough onto a baking tray lined with parchment paper. Using a sharp knife, make a few diagonal slits on top of the bread. This will help the bread rise and bake evenly.
- Brush the top of the bread with some olive oil and sprinkle with some extra fresh herbs.
- Bake the bread in a preheated oven at 180°C (350°F) for about 35-40 minutes or until it's golden brown.
- Remove the bread from the oven and let it cool for a few minutes before slicing and serving.
