- Preheat oven to 325 degrees F (165 degrees C). Lightly grease a medium baking sheet.
- Cut a slit in each jalapeno pepper. Remove and discard seeds and pulp.
- In a medium bowl, mix sausage, baking mix, Cheddar cheese, crushed red pepper, and garlic salt.
- Stuff jalapenos with the Monterey Jack cheese cubes. Shape sausage mixture around the jalapenos to form balls.
- Arrange jalapeno balls on the prepared baking sheet. Bake 25 minutes in the preheated oven, until lightly browned.

- Preheat oven to 350 degrees F (175 degrees C).
- In a bowl, mix the cream cheese, bacon bits, chives, and hot sauce. In a separate bowl, mix the uncooked sausage and Cheddar cheese. On a flat surface, mix the seasoned coating mix, cumin, and chili powder.
- Cut a slit lengthwise into each jalapeno pepper, and remove the seeds. Stuff the peppers with the cream cheese mixture. Press the sausage mixture around the stuffed jalapenos, and roll in the seasoned coating mix to coat.
- Arrange the coated jalapenos on a baking sheet in a single layer. Bake 25 minutes in the preheated oven, until the sausage is evenly brown.

- Cut off stems of jalapenos; using a knife and scooping action, remove all seeds and ridges. Rinse well; be sure you have all the seeds out!
- Combine sausage, egg, and bread crumbs in a bowl.
- Fill jalapenos with cream cheese, using a spoon or cake decorator with large tip.
- Make small patties with the sausage mix; wrap one around each jalapeno, sealing it with your fingers.
- Place on cookie sheet; bake in over at 350 degrees for 20-30 minutes. Let cool, cut in half across the middle. Makes 40 Jalapeno eggs.

Steps:
- 1. Preheat oven to 325°F.
- 2. Trim off the stems of each pepper. Cut a slit down one side of each pepper. Remove the seeds and as much of the white membrane as possible. Set aside.
- 3. In a medium bowl, combine the sausage, Bisquick and garlic salt. Mix well (by hand is easiest).
- 4. Gently insert one or two cubes of the cheese into each jalapeno.
- 5. Pinch off a portion of the sausage mixture and shape it around each jalapeno, covering it completely but don't make too thick. Make into egg shape.
- 6. Roll each "egg" in bread crumbs to coat.
- 7. Arrange the "eggs" evenly on a prepared (sprayed with cookng spray)cookie sheet. Spray "eggs" lightly with cooking spray and bake for 25 minutes until lightly browned.

- Slice jalapenos lengthwise to remove seeds. Stuff jalapenos with Cheddar cheese.

- Preheat the oven to 375 degrees F.
- Cut each jalapeno in half removing the stem and seeds. Place precooked sausage in 1 half of the jalapeno and sprinkle the other half with cheese, roughly reforming the jalapeno.
- Pop open the package of croissant rolls. On a work surface, unroll 1 roll placing the longest side toward you.

- Slice jalapenos in half and clean out seeds (be sure to get them all or they will be hot).
- Mix cheese, onion and garlic salt together and spoon into jalapeno halves.
- Wrap each with 1/2 strip of bacon.
- Place on cookie rack placed over a cookie sheet to catch the drippings.
- Bake at 350 for about 45 minutes or until the bacon is crisp.
- The thin bacon wraps easier.
- I just tuck the ends under the bottom.
- Amazingly, these are not hot if you get all the seeds out.
- There are never enough of them no matter how many I make because they are so popular.

- Slice the peppers in half lengthwise down one side only and scrape out the seeds. If you accidentally cut all the way through, just try to keep the two halves together.
- Mix Bisquick, sausage and cheddar in a large bowl.
- Place the beaten egg in a shallow bowl,.
- also put the Shake N Bake in a shallow bowl.
- Stuff each pepper with shredded jack, then stick the halves back together, if separated.
- Grab a handful of the sausage mixture and wrap around the pepper in the shape of an elongated egg.

- 1. Preheat the oven to 375 and lightly grease a baking sheet.
- 2. Mix together the cream cheese, cheddar cheese, garlic, cilantro and cumin until well blended. Taste and add salt, and adjust seasonings.
- 3. Remove the stems from the jalapeños and cut in half lengthwise. Scoop out the seeds and then cut the sliced jalapeños in half, horizontally. Place about a teaspoon of the cream cheese filling in each jalapeño quarter.
- 4. Take about 1/3 cup of the sausage and pat it into a 3-inch circle and place the stuffed jalapeño in the center of the sausage. Wrap the sausage around the stuffed jalapeño until it's completely covered, and form into an egg shape.
- 5. Once you have wrapped the jalapenos with the sausage, dust each one with flour. Then dip each in beaten egg then in the bread crumbs.
- 6. Place sausage-wrapped jalapeños on the sheet, about an inch apart. Bake for 15-20 minutes, or until the sausage is cooked. For additional browning on top, you can place the sheet under the broiler for 2-5 minutes.
- 7. Serve with buttermilk dressing, queso or salsa.
ARMADILLO EGGS
Steps:
- Finely chop the onions, 3 or 4 jalapenos, and garlic. Let the cream cheese soften as needed. Shred the Pepper Jack cheese. Slice the remaining whole jalapeno peppers in half vertically and clear out all of the seeds and pith. Keep the matched pepper halves together. In a large bowl, mix the cream cheese with the pepper jack cheese. Mix in enough yellow food coloring to approximate the color of egg yolk. The food coloring will not effect the taste but adds a little something special to the presentation. Sauté the onions and diced peppers in vegetable oil or butter over medium heat. Add the garlic to the sauté about 2 minutes prior to completion. Drain and thoroughly mix the sauté with the cheeses. Fill each pepper half and then stick two matched halves together. Refrigerate the stuffed peppers when done. Use another bowl and mix together the sausage, egg, bread crumbs, and a couple of tablespoons of your favorite BBQ rub thoroughly. Place this sausage mixture in the refrigerator when done. Take the stuffed jalapenos out of the fridge along with the sausage mixture. Grab a handful of the sausage and mold it around one of the stuffed peppers. You want to make sure the sausage completely covers the pepper. The final product should take on the shape of the pepper and thus have an egg shape to it. The easiest way to accomplish this shaping process is to use plastic gloves and shape each egg by hand. Try and get an even layer of sausage around each pepper. Sprinkle BBQ rub on the eggs. Bake at 325 degrees for 20 minutes. (These may be frozen ahead of time, then re-heated).

- 1. Mix Monterrey Jack cheese and sausage. Add biscuit mix a little at a time until thoroughly mixed. It should become a thick dough.
- 2. Knead for several minutes then set aside.
- 3. Cut a lengthwise slit on one side of each jalapeno leaving the other side intact. Remove the seeds.
- 4. Stuff each with cheddar cheese. Pinch edges together to close. Set aside.
- 5. Take a small piece of the dough mixture (2 rounded Tbsp.)and flatten it to 1/4 in thick. Wrap it around the stuffed pepper to make an egg shape. Be sure the pepper is sealed completely.
- 6. Dip the "egg" into the beaten egg then roll in the Shake 'n Bake to coat. Repeat with all the peppers.
- 7. Bake at 350 degrees for 20 to 25 minutes or until golden brown.
- 8. If you want to make these ahead of time: Unbaked Armadillo Eggs may be refrigerated up to 2 hours before baking or frozen up to 1 month. If frozen, add about 5 minutes to the baking time.

- You will need toothpicks for this. I buy the strong kind so that they don't break easy. Soak toothpicks in water for about 30 minutes.
- First you will need to cut jalapenos lengthwise in half and remove seeds. You can use canned jalapenos; I just prefer fresh.
- Flatten chicken to about 1" and cut into 4-6 pieces (enough to roll over a jalapeno half). Season with whatever seasonings you prefer. I use my Dad's homemade seasonings.
- Take a chicken piece, roll it around a jalapeno half, then roll 1 slice of bacon over top and secure with a toothpick. This may take a while; I usually do this the night before I grill or bake them.
- Cook on grill until bacon is crisp and chicken is cooked through.
- You can bake these in the oven at 350 degrees Fahrenheit for about 45 minutes; I just like them grilled.
- You can steal some off the grill as you are cooking them! YUM!
- If you have extra jalapenos left over, grill 'em if you can take the heat!

- 1. Grocery list: At produce section, choose medium, firm jalapinos. Try to avoid curved ones and ones that already smell spicy. Amount depends on how many guests enjoy peppers. Figure 3 per adult. (I have found that most of them are not spicy when cooked, more of a "warm bell pepper" flavor.) Boneless skinless chicken breast. Large block of colby-jack cheese. 2 packages of smoked bacon. Box of round toothpicks.
- 2. Start with washing the jalapinos. Slice the jalapinos up and down, (long-ways). Spoon out the seeds and re-wash. (Try to keep original halves together.) Cut rectangle chuncks of chicken breast that would fit snuggly inside a jalapino. (be sure that the chicken is mostly thawed.) Slice cheese at about one MM thick, about 2 inches long. Place cube of chicken inside a half jalapino and lay slice of cheese on top. re-unite other jalapino half to encase chicken and cheese. wrap slice of bacon around the middle of pepper to hold together and secure with toothpick through middle. repeat till all are ready for the grill. Grill time is about 15-20 min. when cheese starts dripping out, and bacon is mostly crispy, they are done. Note: if you rinse toothpicks while prepping, they are less likely to catch fire at ends :) enjoy Armadillo Eggs!

Ingredients
The ingredients for armadillo eggs vary depending on the recipe, but typically include:
- 1 lb ground pork sausage or beef
- 1 cup shredded cheddar cheese

Preparing the Armadillo Eggs
The first step in making armadillo eggs is to preheat your oven to 400 degrees F. Then, in a large mixing bowl, combine the ground meat, cheddar cheese, diced jalapenos, chopped green onions, chopped cilantro, and all of the spices. Use your hands to mix the ingredients together thoroughly.
Next, take a small handful of the meat mixture (about the size of a golf ball) and roll it into a ball. Flatten the ball slightly and then make an indentation in the center. Place a small spoonful of cream cheese into the indentation.
Once you have filled all of the meat balls with cream cheese, take one slice of bacon and wrap it around the outside of the meat ball, securing it with a toothpick. Repeat this process for all of the meat balls.
Cooking the Armadillo Eggs
Once your armadillo eggs are assembled, place them on a baking sheet lined with parchment paper. Bake the armadillo eggs in the preheated oven for 25-30 minutes, or until the bacon is crispy and the meat is cooked through.
Once cooked, remove the armadillo eggs from the oven and let them cool for a few minutes. Then, carefully remove the toothpicks from each egg and serve them hot.
Variations on Armadillo Egg Recipes
