2-1/4 teaspoons baking powder

2 large eggs, room temperature, lightly beaten
1 can (8-1/4 ounces) cream-style corn
1 cup buttermilk
2/3 cup vegetable oil
2 cups shredded cheddar cheese
1 medium sweet red pepper, chopped
2 jalapeno peppers, seeded and diced
4 to 5 green onions, chopped

Steps:

  • In a large bowl, combine the cornmeal, flour, sugar, baking powder, salt and baking soda; set aside. In a small bowl, combine the eggs, corn, buttermilk and oil; stir into the dry ingredients just until blended. Fold in the cheese, peppers and onions. , Pour into a greased 13x9-in. baking dish. 1 stick jimmy dean light sausage
2 c martha white corn meal or you can use yellow
1/2 c all purpose flour
3 tsp baking powder
1 tsp baking soda
1 tsp salt
2 eggs beaten
1 can(s) ortega green chillies
1 medium onion chopped
1 can(s) mexicorn 11 0z
2 c buttermilk
1 stick shredded cheddar cheese 8 oz

Steps:

  • 1. Mix ingreidents to make cornbread.Cornmeal,flour,baking powder,baking soda,salt,eggs and buttermilk.
  • 2. cook sausage till done make sure its crumbled like hamburger meat.Add to wet cornbread mix.
  • 3. Add chillies,mexicorn,onion,and cheese to that and stir all together.
  • 4. Pour mixture into a 10 inch pan or iron skillet and bake at 350 f for 20 to 25 mins or until brown on top and done.

8 ounces bulk pork sausage
2 cups cornmeal
1/2 cup all-purpose flour
3 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 large eggs, beaten
3 canned green chilies, chopped
1 large onion, chopped
1 can (11 ounces) Mexican-style or whole-kernel corn, drained
2 cups buttermilk
1/2 cup shredded cheddar cheese

Steps:

  • In a deep 10-in. cast-iron skillet, fry sausage until done. Reserve 2-3 tablespoons drippings. Crumble sausage. Combine cornmeal, flour, baking powder, baking soda and salt. In separate bowl, combine eggs, chilies, onion, corn, buttermilk and cheese. Add egg mixture to cornmeal mixture. Stir in sausage and reserved drippings. Pour into the greased skillet and bake at 450° for 20-25 minutes or until done. Serve warm from skillet.
