We love how this is made with three ingredients (that are probably in the pantry already) and you can mix and match different boxed cake and pie filling flavors. We opted for lemon cake...

1 box cake mix, any flavor (15.25 oz)
3 large eggs, beaten
1 can(s) pie filling, any flavor (21 oz)
1 pkg cream cheese, optional (8 oz)

Steps:

  • 1. Gather your ingredients. Preheat oven to 350 degrees.
  • 2. In a bowl, dump dry cake mix, eggs, and pie filling. Stir together until well mixed.
  • 3. Pour into a greased 9x13. For an extra inch to the hips, chop room temp cream cheese into chunks. Poke the chunks randomly into the batter after pouring it into the baking pan. Make sure the cheese is in deep.
  • 4. Bake at 350 degrees for 35 minutes or test with a toothpick for doneness.
  • 5. NOTE: Pair flavors of cake mix and pie filling. Apple filling with maybe butter pecan cake mix. Cherry pie filling with a devil's food cake mix, etc. I enjoy a pineapple cake mix with blueberry filling. I do this with a strawberry cake mix and strawberry filling and also blueberry filling.

1 1/4 c blanched almond flour
8 oz very dark chocolate (semi-sweet, bittersweet)
1/2 c unsweetened coconut milk (i use canned, first pressing)
1/2 c unsweetened shredded coconut
3 large eggs
1/2 tsp sea salt
1/2 tsp baking powder
2 Tbsp coconut oil
1/2 tsp vanilla
1/2 c chopped almonds for garnish
1/2 c chopped bittersweet chocolate for garnish (more or less as you desire)

Steps:

  • 1. Preheat oven to 350 degrees F. Grease a 8 x 8 pan with coconut oil.
  • 2. Melt 8 oz. chocolate, 2 T. coconut oil and the coconut milk together, stirring until smooth. Remove from heat to cool slightly.
  • 3. Blend almond flour, salt and baking powder in bowl.
  • 4. Stir vanilla and eggs into slightly cooled chocolate mixture (make sure it's not too hot or it will cook the eggs!), then combine with dry ingredients and mix until well blended.
  • 5. Pour into prepared 8 x 8 pan, and garnish with a sprinkle of coconut, chopped almonds and as much decadent dark chocolate chunks as you like.
  • 6. Bake at 350 for 15 minutes. DO NOT OVER BAKE!!
  • 7. This is simply chocolate bliss, especially if you want to be really naughty and top it while still warm with whipped cream....The nice thing about this cake is, you feel like you're being naughty eating it, but it's actually a pretty healthy deal! I found the original recipe for this on one of those Paleo/Caveman diet websites, and it was horribly dry and somewhat tasteless. After a lot of tweaking, it is finally bursting with flavor and very moist.
