Lean ground beef 2 lb
Large eggs 3
Breadcrumbs 1 cup
Green onion ⅔ cup
Milk ½ cup
Parsley ½ cup
Garlic 3 cloves
Worcestershire sauce 2 tbsp
Salt 1 tsp
Black pepper ¼ tsp
Red pepper 1 (12 ounce) jar
Potatoes mash 3 ½ cups Hot
Cherry tomatoes 8

Steps:

  • Preheat the oven to 375 °F.
  • In a large bowl, mix 2 pounds of ground beef, 3 large eggs, 1 cup of bread crumbs, ⅔ cup of sliced green onions, ½ cup of milk, ½ cup of freshly chopped parsley, 3 cloves of minced garlic, 2 tablespoons of Worcestershire sauce, 1 teaspoon of salt and ¼ teaspoon of pepper until all well combined.
  • Transfer the mixture and divide between two 8-inch round cake pans, spreading evenly over the top to level them out. Bake in the preheated oven for about 20-25 minutes until juices run clear when meat is pierced with a fork, or a food thermometer reaches a heat of 170 °F.
  • Remove pans from the oven; cover loosely with aluminum foil and set aside for 10 minutes to rest.
  • Discard juice from the pans and invert 1 meatloaf onto a serving plate and evenly cover the top with a layer of trimmed roasted red peppers then invert the second meatloaf and place on top of the red peppers.
  • Use a spatula to spread about 2½ cups of the warm mashed potatoes, evenly, all over the top of the meat loaf and up the sides. Spoon the remaining mashed potatoes into a piping bag and decorate the top of your "cake" with twirls and swirls. Pipe a few stars around the sides too.
  • Place 8 cherry tomatoes, stem-ends down, in a circle around top of meatloaf to resemble cherries on top of a cake.
  • Cut wedge-like cake slices and serve immediately.

A small amount of sausage provides great flavor in this easy-to-assemble meatloaf. If you are in a hurry, a 24-ounce package of refrigerated mashed potatoes will provide plenty of "icing" for this special cake. Yields 8 servings.

Number Of Ingredients 12

1 1/2 pounds ground beef
1/2 pound pork sausage (I use sweet)
3 large eggs
1/2 cup milk
1 cup fresh breadcrumbs (I've also used gluten-free bread, finely chopped)
3 sliced green onions (white and green parts)
1/3 cup chopped fresh parsley
1 tablespoon soy sauce (may substitute Worcestershire sauce)
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2-3 cups hot mashed potatoes (may use one 24-ounce package of refrigerated mashed potatoes, heated; see notes)
8 cherry or grape tomatoes, optional for garnish

Steps:

  • Preheat the oven to 375 degrees F. Lightly grease a 1 1/2 quart round casserole dish and line the bottom with parchment paper. (Any similar size round ovenproof dish may be used.) In a large bowl, combine the breadcrumbs with the milk and eggs. Mix in the green onions, parsley, soy sauce, salt and pepper. Add the ground beef and sausage, and thoroughly combine. (I find this easiest to do with my clean hands.) Place the mixture in the prepared baking dish, patting to make level. Bake the meatloaf until the internal temperature reaches 155 degrees F, or about 50-60 minutes. (Precise cooking time will depend on the depth and width of your baking dish.) Cover loosely with foil, and let stand for 10 minutes. Carefully, pour off any juices from the baking dish, and then run a knife around the sides to loosen. Place a flat serving platter over the casserole dish, and flip to invert the meatloaf onto the platter. (I place two slightly overlapping pieces of foil or parchment paper between the meatloaf and the platter before flipping. These will keep the platter clean while the meatloaf is being iced and can be easily pulled from opposite sides once finished.) Using a spatula, spread the mashed potatoes over the meatloaf as you would icing. If any juices leak onto the platter, dab them with a paper towel. Place the tomatoes, stem ends down, in a ring around top of the "cake" to resemble cherries. Cut the meatloaf into wedges, and serve immediately. If not serving immediately, allow the meatloaf to sit at room temperature for up to two hours. Reheat at 300 degrees for 15-20 minutes or until hot.

1/2 cup frozen corn
1 carrot, shredded
1/4 cup dry bread crumbs
1-1/4 lb. baking potatoes (about 4), peeled, quartered
1 cup small cauliflower florets
1/4 cup milk

Steps:

  • Heat oven to 400°F.
  • Mix meat, salsa, corn, carrots and bread crumbs just until blended; press onto bottom of 9-inch pie plate.
  • Bake 30 min. or until meatloaf is done (160ºF). Meanwhile, cook potatoes and cauliflower in boiling water in large saucepan 20 min. or until vegetables are tender.
  • Drain vegetables; return to pan. Add milk; mash until vegetable mixture is light and fluffy. Spread over meat mixture to resemble a frosted cake.

1 jar (14 ounces) pizza sauce
1/2 pound bulk Italian sausage, cooked and crumbled
1 package (8 ounces) sliced pepperoni
3 cups biscuit/baking mix
3/4 cup whole milk
2 large eggs
2 tablespoons butter, melted
1 teaspoon garlic salt
5 to 6 slices mozzarella cheese

Steps:

  • Preheat oven to 375°. In a bowl, combine the pizza sauce, sausage and pepperoni; set aside. In another bowl, combine the biscuit mix, milk, eggs, butter and garlic salt. Spread half of the batter on the bottom and up the sides of a greased 10-in. fluted tube pan. Spoon meat mixture over batter; cover with remaining batter., Bake for 35-40 minutes or until browned and a toothpick comes out clean. Invert onto a baking sheet. Arrange cheese over cake. Return to the oven for 5 minutes or until cheese is melted. Using two large metal spatulas, transfer cake to a serving platter; serve immediately.

3 large eggs
1 cup breadcrumbs
2/3 cup sliced green onion
1/2 cup milk
1/2 cup chopped fresh parsley
3 large garlic cloves, minced
2 tablespoons Worcestershire sauce
1 teaspoon salt
1/4 teaspoon black pepper
1 (12 ounce) jar roasted red peppers, drained and patted dry
3 1/2 cups hot mashed potatoes
8 cherry tomatoes, stems removed

Steps:

  • Preparing the Meat Loaf.
  • 1. Preheat oven to 375°F In a large bowl, combine ground beef, eggs, bread crumbs, green onions, milk, parsley, garlic, Worcestershire sauce, salt and pepper just until blended.
  • 2. Divide mixture between two 8-inch round cake pans, patting to cover pans evenly and make level.

  • Decorating the Meat Loaf.

  • 2. Invert second meat loaf onto red pepper layer. Using a spatula, spread 2 1/2 cups mashed potatoes over top and sides of meat loaf. Spoon remaining potatoes into a pastry bag fitted with a large star tip. Pipe swirls around top edges of cake. Pipe stars around bottom of cake.
  • 3. Place cherry tomatoes, stem-ends down, in a ring around top of meat loaf "cake" to resemble cherries. Cut meat loaf into wedges; serve immediately.

3 large eggs
1 pkg beefy mushroom soup and dip mix (1 ounce)
1 Tbsp steak sauce
2 tsp minced garlic
1 tsp black pepper
4 c prepared mashed potatoes
1 small bell pepper (optional)

Steps:

  • 1. Preheat oven to 350°F. Coat two 8-inch round cake pans with cooking spray. Combine ground beef, bread crumbs, onion, eggs, soup mix, steak sauce, garlic and black pepper in a large bowl; mix until well combined. Divide ground beef mixture in half; press each half gently into a prepared pan.
  • 2. Bake meat loaves until centers are no longer pink and instant-read thermometer inserted in the centers registers 170°F, 55-60 minutes. Do not turn off oven.
  • 3. Invert 1 meat loaf onto an ovenproof serving plate. Spread 1⁄2 cup mashed potatoes evenly on top. Place second meat loaf on top. Spread remaining potatoes on side and top to resemble a cake.
  • 4. Return meat loaf to oven; bake until thoroughly heated, about 10 minutes. Cut flower shapes from bell pepper with mini cookie cutters and place on top of cake, if desired. Cut into wedges to serve.
