APRICOT-AND-CREAM CHEESE SQUARES

Apricot-and-Cream Cheese Squares image

A new take on an old favorite, this modern riff on the apricot-cheese Danish skips the complicated layered dough of the original for a simple focaccia dough. And rather than forming individual pastries, it's baked in a 9-by-13-inch pan and cut into squares. Another thing that makes this recipe easy on the cook, we use canned or jarred apricots rather than fresh.

Provided by Martha Stewart

Categories     Food & Cooking     Breakfast & Brunch Recipes     Bread Recipes

Time 2h20m

Yield Makes 12

Number Of Ingredients 8

1 1/4 teaspoons active dry yeast (from 1 package)
2 tablespoons plus 1 teaspoon and a pinch sugar
6 tablespoons extra-virgin olive oil, plus more for drizzling
1 teaspoon kosher salt
2 cups unbleached all-purpose flour
4 ounces cream cheese, room temperature
1 can (15 ounces) apricot halves in heavy syrup, drained
1/4 cup honey

Steps:

  • In the bowl of a mixer fitted with the dough-hook attachment, combine yeast, 3/4 cup warm water (110 degrees), and pinch of sugar. Let stand until foamy, about 5 minutes. Beat on low speed while adding 2 tablespoons oil, salt, and 1 teaspoon sugar. Slowly add flour while beating until mixture just comes together. Increase speed to medium-high; beat until dough is soft and elastic, 3 minutes.
  • Coat a 9-by-13-inch metal baking pan with 3 tablespoons oil. Transfer dough to pan; press to edges with your hands (being careful not to tear). Cover with plastic wrap and let rise in a warm place until doubled in bulk, about 1 hour.
  • Preheat oven to 425 degrees with a rack in lower third. Press dimple-like indentations all over dough with your fingers. Stir together cream cheese and remaining 2 tablespoons sugar; dot all over dough. Arrange 12 apricot halves on top in a 3-by-4 grid formation. Drizzle with remaining 1 tablespoon oil. Cover with plastic wrap and let rise in a warm place until puffed, 30 minutes.
  • Bake until golden brown on top, 23 to 25 minutes. Let cool in pan 10 minutes, then transfer with two large spatulas to a wire rack. Drizzle with honey and oil; let cool completely. Cut into squares and serve.

APRICOT ALMOND CREAM CHEESE SQUARES

I got this recipe from my girlfriend, after tasting this at her house party, I have been making these bars ever since, they are so delicious, and very rich, also, I have made these for parties, cut them small and served them in tiny muffin cups....I have never had any leftover. Apricot Squares are a type of baked dessert that is both delicious and versatile. These delightful treats are made with apricots, a fruit that has been enjoyed by people for thousands of years. The apricot fruit is known for its juicy and sweet taste, which is further enhanced when it is baked into desserts such as these squares. The apricot squares recipe can be customized to suit your tastes, whether you prefer a delicate and crumbly texture, or something chewy and dense.

The Ingredients

One of the great things about apricot squares is that they can be made using simple and easy-to-find ingredients. The recipe usually calls for butter, sugar, eggs, flour, and dried apricots. Additional ingredients can be used, such as nuts, oatmeal, or other fruits like apples or raspberries. These ingredients can be adjusted based on personal preference, such as the sweetness or texture preferred.

Preparation

To prepare the apricot squares recipe, the dried apricots must first be soaked in hot water. This step softens the apricots, making them easier to chop into small pieces. Once they have been soaked, they can be drained and set aside. The remaining ingredients can then be mixed together in a bowl. The mixture is then divided into two parts; one will be used for the base, while the other will be the crumble topping.

The Base

The base of the apricot squares recipe is created by pressing one of the mixture to the bottom of a baking dish. This layer will be the foundation for the rest of the squares, so it is important to make sure it is evenly spread and compacted. The chopped apricots can then be scattered on top of the base layer, ensuring they are evenly spread.

The Topping

The second half of the mixture is used for the crumble topping. This mixture is usually quite crumbly, so it is important to ensure that it is evenly spread across the top of the apricots. This will create a delicious crunch to the squares when they are baked.

The Baking Process

Once the apricots have been added and the crumble topping has been applied, the apricot squares are ready for baking. They should be placed in an oven preheated to the correct temperature for about 20-25 minutes. Baking times vary depending on the recipe, so it is essential to follow the instructions carefully to avoid overcooking or undercooking the squares. Once they are ready, the apricot squares should be removed from the oven and allowed to cool before slicing and serving.

Conclusion

Apricot Squares are a delightful and easy-to-make dessert that can be customized to suit your own tastes. With a few simple ingredients, you can create a delicious and unique dessert that everyone will love. Whether you prefer something light and crumbly, or chewy and dense, the apricot squares recipe offers a wide range of possibilities. So why not try making your own batch of apricot squares today and enjoy the sweet and juicy taste of apricots in every bite.

Apricot Squares: Tips and Tricks to Make the Perfect Dessert

Apricot squares are a delicious dessert that is perfect for any occasion. These sweet treats are made with a buttery crust and filled with juicy and tangy apricots. They make the perfect dessert for a summer picnic or a winter holiday party. However, making the perfect apricot square can be a daunting task. Here are some valuable tips to consider when making apricot squares.
Ingredient Selection
The first step in making apricot squares is selecting the right ingredients. Choosing high-quality ingredients will ensure that your apricot squares are delicious and delightful. Here are some tips to consider when selecting your ingredients: - Apricots: Pick ripe and juicy apricots. If you cannot find fresh apricots, you can always use canned or dried apricots. Just remember to drain the liquid before using canned apricots. - Flour: Use high-quality flour for your crust. All-purpose flour will work just fine, but you can also use pastry flour, which will make your crust lighter and more delicate. - Butter: Always use unsalted butter for your apricot squares. This will make it easier to control the salt levels in your recipe. - Sugar: Use granulated sugar for your crust and filling. This will ensure that your apricot squares have a smooth and consistent texture.
Crust Preparation
The crust is the foundation of your apricot squares. A good crust should be buttery, flaky, and slightly sweet. Here are some tips to consider when making your crust: - Keep your ingredients cold: To make a good crust, it's essential to keep your butter and flour cold. Cold ingredients will make it easier to cut the butter into small pieces, which will create a flakier crust. You can even chill your bowl and utensils in the freezer before using them. - Use a food processor: A food processor will make it easier to mix the butter and flour together quickly. Just pulse the ingredients until they come together in small pieces. - Add ice water: Add a few tablespoons of ice water to the dough to help it come together. The dough should be crumbly but hold together when squeezed. - Chill the dough: After mixing the dough, wrap it tightly in plastic wrap and refrigerate it for at least 30 minutes. Chilling the dough will make it easier to roll out and will help prevent shrinkage during baking.
Apricot Filling
The apricot filling is the star of your apricot squares. A good filling should be juicy, tangy, and slightly sweet. Here are some tips to consider when making your filling: - Cook the apricots: Cook the apricots over low-medium heat with a bit of sugar and lemon juice. This will help concentrate the flavors and create a jam-like consistency. - Strain the apricots: After cooking the apricots, strain them through a fine-mesh sieve. This will remove any bits of skin or pits and create a smooth and consistent filling. - Add almond extract: Adding almond extract to the filling will give your apricot squares a delicious nutty flavor that complements the apricots perfectly.
Baking and Serving
Baking is the final step in making apricot squares. A good bake should be golden brown, flaky, and delicious. Here are some tips to consider when baking and serving your apricot squares: - Use parchment paper: Line your baking dish with parchment paper. This will make it easier to remove the apricot squares from the dish and will prevent them from sticking. - Chill the squares: After baking the squares, let them cool for a few minutes, then chill them in the refrigerator. Chilling the squares will make them easier to cut and will help set the filling. - Add powdered sugar: Before serving, dust the apricot squares with powdered sugar. This will give them a beautiful finish and add a touch of sweetness. - Serve with whipped cream: Apricot squares are delicious on their own, but they also pair well with whipped cream. Dollop a bit of whipped cream on top of each square for a decadent treat. In conclusion, making the perfect apricot square is all about selecting the right ingredients and following a few simple steps. By following these tips, you can create delicious and delightful apricot squares that everyone will love. Happy baking!
