Time 12h35m

Yield 4

Number Of Ingredients 4

3 ½ pounds very ripe fresh apricots, pitted and halved
4 ½ cups white sugar
1 cup fresh lemon verbena leaves, washed and patted dry
1 (1.75 ounce) package fruit pectin (such as Sure-Jell® Pectin Light for less or no sugar)

Steps:

  • Finely chop apricots.
  • Combine sugar and lemon verbena leaves in the bowl of a food processor; pulse until the leaves are fully incorporated in the sugar (the sugar will become light green).
  • Combine sugar-lemon verbena mixture and apricots in a large bowl. Cover and marinate in the fridge for 4 hours.
  • Inspect 4 jars for cracks and rings for rust, discarding any defective ones. Immerse in simmering water until jam is ready. Wash new, unused lids and rings in warm soapy water.
  • Transfer apricot-sugar mixture to a large pot and stir in pectin. Slowly bring to a full rolling boil that does not stop bubbling when stirred. Cook for 1 minute, stirring constantly.
  • Ladle apricot jam into the prepared jars, filling to within 1/4 inch of the top. Run a clean knife or thin spatula around the insides of the jars to remove any air bubbles. Wipe rims with a moist paper towel to remove any spills. Top with lids and tightly screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 10 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart. Let rest for 24 hours without moving the jars. Gently press the center of each lid with a finger to ensure the lid does not move up or down. Remove the rings for storage and store in a cool, dark area.

Apricots are an excellent fruit to use in salsa recipes due to their wonderful flavor and texture. When combined with lemon verbena, the result is a refreshing and zesty taste that is perfect for summer. Here are valuable tips to help you make the perfect apricot salsa with lemon verbena recipes. 1. Pick the perfect apricots Picking the right apricots for your salsa recipe is crucial to achieving the perfect flavor. Choosing ripe apricots that are slightly soft to the touch is the key to a good salsa. If the apricots are too firm, they will be difficult to cut and may not have the desired sweetness. On the other hand, if they are too soft, they may not hold their shape when diced. 2. Choose fresh lemon verbena Lemon verbena is a wonderful herb that pairs well with apricots. It is essential to use fresh lemon verbena when making apricot salsa to achieve the best flavor. When selecting lemon verbena, look for bright green leaves that are free of blemishes or discoloration. The herb should have a strong lemony scent, as this is an indicator of its freshness. 3. Use the right equipment Having the right equipment can make preparing apricot salsa easier and more enjoyable. You will need a sharp knife, a cutting board, and a mixing bowl. It is also helpful to have a pair of kitchen shears to cut the lemon verbena leaves. 4. Dice the apricots uniformly When dicing the apricots, it is essential to cut them into uniform pieces to ensure even flavor distribution. Cut the apricots into small pieces, about the size of a pencil eraser, to create bite-sized bits. If the pieces are too large, the salsa may be difficult to eat. 5. Combine the flavors gradually It is crucial to combine the flavors gradually when making apricot salsa with lemon verbena. Add the lemon verbena leaves to the diced apricots and stir gently. Gradually add the remaining ingredients, tasting as you go. This will allow you to adjust the seasoning to your desired taste. 6. Balance the sweet and sour Apricots are naturally sweet, while lemon verbena is tart, resulting in a well-balanced combination of sweet and sour. However, it is essential to ensure that the salsa is not too sweet or too sour. Adjust the sweetness by adding honey or agave syrup, and balance the tartness with a squeeze of fresh lime juice. 7. Chill before serving To allow the flavors to meld together correctly, it is essential to chill the apricot salsa before serving. Cover the mixing bowl with plastic wrap and refrigerate for at least an hour before serving. This quick step will take your apricot salsa to the next level. Conclusion Making apricot salsa with lemon verbena is a refreshing and delicious twist to traditional salsa recipes. By following the valuable tips above, you can easily make the perfect apricot salsa that will impress your friends and family. The key to achieving the best flavor is to use ripe apricots, fresh lemon verbena, and to balance the sweet and sour flavors. Don't forget to chill the salsa before serving to allow the flavors to meld together. Happy cooking!
