I will be making this dish again and again. I served it with a side of smashed potatoes with garlic. I hope you all enjoy this delicious dish.

APRICOT MUSTARD GLAZED PORK ROAST
An easy recipe that is great for a dinner party. I found it in a magazine (Women's Day? Family Circle?) while sitting in the waiting area of the hospital emergency room. My family now refers to it as "Emergency Room Roast." I served it with sweet potato casserole and creamed spinach. (BTW, my dad was in the ER but he's just fine now, thank you!)

INCREDIBLE BONELESS PORK ROAST WITH VEGETABLES

Steps:
- 1. Place Pork Loin fat side down in a 9 x 13 pan and arrange vegetables around it.
- 2. In a small bowl mix Garlic powder, onion powder, seasoned salt and black pepper until combined and rub it onto the pork (top only, not the bottom).
- 3. Sprinkle the parsley on top, and then the garlic. Drizzle the olive oil over top of the pork. You can season the vegetables as well, I recommend to. Just sprinkle all of the same dry seasonings over top.
- 4. Add beef broth from one of the corners of the pan, do not pour over pork. Place foil, slightly vented, over the pork, and fitting the pan. Cook it on 325 for 2 1/2 hours. Midway through rotate the pork so it it fat side up and replace the foil so it is covered again.
- 5. After its done take the foil off and put the broiler on HIGH. Flip the pork again to meat side up and broil for 10 minutes. You will do this twice (meat side up, 10 mins, fat side up 10 mins, and then meat side up one last time for 10 mins.) For a total of 30 minutes You may need a few mins longer depending on your oven. Just look to see how browned its getting.
- 6. Let meat rest for 30 minutes.
- 7. Enjoy! The vegetables will have an incredible flavor and so will the meat.
- **You may add more veggies but You'll probably have to go with a bigger pan size.
- **If you'd really like to kick it up, make a roux and add PAN JUICES and some red wine and let it reduce, stirring often to make a nice gravy!

Here are some valuable tips to help you make the best apricot pork roast with vegetables recipes.
Choose the Right Cut of Meat
The first and most important tip when making apricot pork roast with vegetables is choosing the right cut of meat. For this recipe, it is best to use a boneless pork loin roast. The loin roast is a lean and tender cut of pork that is versatile and can be cooked in several ways. It is perfect for pork roast recipes that require a long cooking time, such as apricot pork roast with vegetables.
Brine the Pork Loin Roast
Brining the pork loin roast can help enhance its flavor and prevent it from drying out during cooking. To brine the pork, you need to dissolve salt and sugar in water and other flavorings, such as seasonings or herbs. Then, soak the meat in the brine solution for several hours to allow it to absorb the flavors. Afterward, rinse the meat and pat it dry with a paper towel before seasoning and roasting.
Season the Meat Generously
The next tip is seasoning the meat generously before roasting. Using a combination of herbs and spices can help enhance the flavor of the meat and make it more delicious. You can use a mixture of salt, pepper, garlic powder, onion powder, and any other herbs or spices of your choice. Rub the seasoning mixture all over the meat, making sure to get every nook and cranny for the best flavor.
Use Fresh Vegetables
When making apricot pork roast with vegetables, it is crucial to use fresh vegetables. Fresh vegetables are more flavorful and nutritious than frozen or canned ones. You can use any vegetables of your choice for this recipe. Some great options include potatoes, carrots, green beans, onions, and bell peppers. Cut the vegetables into bite-sized pieces, making sure they are all similar in size to ensure even cooking.
Add Apricot Glaze
Apricot glaze is what makes apricot pork roast with vegetables recipes special. The glaze is made by combining apricot preserves, honey, Dijon mustard, and soy sauce. The apricot glaze gives the dish a sweet and tangy flavor that complements the savory taste of the pork and vegetables. You can brush the glaze over the meat and vegetables several times during cooking to help enhance the flavor and achieve that gorgeous golden color.
Roast at the Right Temperature
The oven temperature is another essential factor to consider when making apricot pork roast with vegetables. Roasting at the right temperature can help ensure that the meat and vegetables cook properly and retain their flavors and juices. For this recipe, it is best to roast the pork at 350°F for about 1 hour and 30 minutes, or until the pork reaches an internal temperature of 145°F. You can use an instant-read thermometer to check the temperature of the meat accurately.
Let Rest Before Carving
After removing the apricot pork roast with vegetables from the oven, it is essential to let it rest for a few minutes before carving. Resting the meat allows the juices to redistribute throughout the meat and keep it moist and tender. Cover the meat loosely with aluminum foil and let it rest for about 10-15 minutes before carving. This will make it easier to carve into slices or serve as desired.
Use Leftovers for Other Recipes
Finally, apricot pork roast with vegetables recipes can yield leftovers, which can be used for other recipes.
