1 cup chopped apricot
1/2 cup currants
1/2 cup sultana
1/2 cup sugar
1/4 lb butter, softened
2 cups self raising flour
2 large eggs, beaten
chopped preserved gingerroot (optional)
chopped pecans or walnuts (optional)

Steps:

  • Grease a 7'x3'x2' loaf tin.
  • Pour a (250ml) cup of boiling water over fruit, sugar and butter.
  • Add the eggs and flour.
  • Pour into the loaf tin and bake in a moderate oven for about 45 minutes.

A wonderful stuffing recipe for your turkey or indeed lamb, beef or game birds - this is baked in a bread (loaf) tin and looks very impressive when turned out, as well as being easy to slice and serve. It can also be served as an alternative type of "meatloaf" with salad, pickles and chutneys........or even better, in sandwiches. I have also made this as a vegetarian option, leaving out the sausage meat and adding more breadcrumbs to the stuffing loaf.

butter, for greasing
4 pecan halves
5 bay leaves
85 g butter
1 tablespoon olive oil
2 onions, chopped
1 teaspoon ground coriander
50 g pecans, chopped
100 g fresh white breadcrumbs
140 g pork sausage (or skinned sausages)
75 g ready-to-eat dried apricots
25 g dried cranberries or 25 g craisins
1 small orange, finely grated zest only
4 -6 sage leaves, finely chopped
1 large egg, beaten

Steps:

  • For the topping: butter a 1kg (2 lb) loaf tin and line the base with greaseproof paper. Lay the four pecan halves and the bay leaves alternately in a line along the bottom of the tin. Preheat the oven to 190C/375F/gas 5.
  • For the stuffing: heat 50g of the butter for the stuffing in a large frying pan with the oil until the butter has melted. Add the onions and fry for 8-10 minutes until softened and starting to turn golden, stirring occasionally. Stir in the ground coriander and the rest of the butter and fry for another 3-4 minutes to soften and to caramelise the onions a bit more. Tip in the nuts and stir them around until they start to look toasty.
  • Remove the pan from the heat and mix in the breadcrumbs, sausage meat, apricots, cranberries, orange zest, sage leaves, egg and some salt and pepper to season. When combined, spoon the stuffing into the tin and pack it down lightly. Cover with a piece of buttered greaseproof paper.
  • Bake for 30 minutes, then remove the paper and bake for another 5 to 10 minutes. Remove from the oven and leave to stand for a few minutes.
  • Discard the paper, loosen the sides with a round-bladed knife and turn out the stuffing so the pecans and bay leaves are on the top. Slice to serve.

¼ cup dried apricots, chopped
1 tablespoon orange zest
2 tablespoons orange juice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan. In a small bowl, combine sultanas, apricots, orange rind and orange juice. Let stand for 10 minutes.
  • In a large bowl, cream butter and sugar together. Beat in egg. Stir in fruit. Stir in flour alternately with milk. Pour batter into prepared pan.

½ cup cream cheese, softened

This is a sweet bread that seems quite fancy and is actually not much more work than a simple French loaf. I went to an Irish bakery once and they had apricot bread. In my imagination, this is the recipe I was thinking of so I made this up when the Irish bakery didn't read my mind.

1 ½ teaspoons salt
½ cup dried apricots, quartered
4 cups bread flour

Steps:

  • Place water, olive oil, and salt into one side of a bread machine. Place 1/3 of the apricots on top of this fluid mixture with 2 cups of flour. Place more apricots in the middle of the flour, pour remaining flour on top, followed by remaining apricots. This will help weaker bread machines integrate the apricots.
  • Run French loaf cycle for a 2-pound loaf. Remove from the machine after the cycle is done, about 3 1/2 hours.

1 ½ teaspoons vegetable oil
1 ½ tablespoons honey
½ cup rye flour
2 ½ cups bread flour

1 teaspoon active dry yeast

412 1/2 g apricots in juice (halves)
2 (125 g) puree (apple)
1/3 cup brown sugar
2 eggs (lightly beaten)
1/4 cup buttermilk
2 tablespoons olive oil
2 teaspoons lemon rind (finely grated)
1 1/2 cups plain flour
2/3 cup wholemeal self-rising flour
1/2 teaspoon bicarbonate of soda

Steps:

  • Preheat oven to 180C (160C fan forced).
  • Grease a 7cm deep, 8cm x 19cm (base) loaf pan and line with baking paper, allowing 2cm overhang at long ends.
  • Drain apricots and place on a plate line with paper towel and pat dry with paper towel and then roughly chop (take them off the paper before chopping though).
  • Combine apple puree, sugar, eggs, buttermilk, oil and lemon rind in a jug.
  • Sift flours and bicarbonate of soda into a bowl and then add puree mixture and stir until just combined (con't over mix).
  • Fold in apricots and spoon mixture into prepared pan.
  • Bake for 1 hour 10 minutes or until a skewer inserted in centre comes out clean.
  • Stand for 10 minutes and then turn out onto a wire rack to cool.
  • TO FREEZE - slice loaf and wrap individual slices in plastic wra[, then foil and freeze for up to 1 month and thaw in fridge for 1 to 2 hours, I've packed similar loafs frozen in lunch box and by the time you are ready to eat they are defrosted and ready.

1 teaspoon vanilla
3/4-1 cup brown sugar

1 pinch salt
1/2 cup melted butter or 1/2 cup margarine
1 cup light brown sugar

1 grated orange, juice and rind of

1/2 cup chopped dried apricot
1 large cooking apple

Steps:

  • Preheat the oven to 350 degrees F.
  • Grease a 2 pound loaf pan.
  • Sift together the flour, baking powder, bran and salt into a large mixing bowl.
  • Add the melted butter, sugar, eggs, orange rind and juice.
  • Stir, then beat with an electric mixer until smooth.

2 cups bran flakes
1/2 cup sultana
1/2 cup dried apricot, chopped
1/2 cup sugar
1 1/4 cups milk
1 banana, very ripe and mashed
1/2 cup walnuts, roughly chopped
1 1/2 cups self raising flour
1/4 cup rolled oats

Steps:

  • Put the bran flakes, sultanas, apricots, sugar and milk into a bowl and mix well. Leave to soak for an hour.
  • Preheat oven to a moderate heat.
  • Grease and line a loaf pan (10 x 21cm). Add the banana and walnuts to the soaking mixture and fold in the sifted flour. Mix well and put mix into the loaf pan. Smooth the top of the loaf and sprinkle with oats.

175g unsalted butter , softened, plus extra for greasing
175g dried apricot , chopped
zest 2 large orange , juice of 1
175g golden caster sugar
3 medium eggs , beaten
280g self-raising flour
drop of milk (optional)
50g icing sugar

Steps:

  • Heat oven to 160C/140C fan/gas 3. Grease and line a 900g loaf tin with baking parchment. In a saucepan, heat the apricots with the orange zest and all but 1 tbsp of the juice. Simmer gently for 5 mins until the apricots have absorbed all the juice. Set aside to cool.
  • Beat the butter and sugar in a bowl until light and fluffy. Gradually beat in the eggs, then fold in the flour. Stir in the cooled apricots. If the mixture is dry at this stage, add a drop of milk.
  • Scrape the batter into the tin and smooth the top with a spatula. Bake for 50 mins-1 hr until a skewer inserted into the middle comes out clean. Cool in the tin for 10 mins before removing, then leave on a wire rack to cool completely.
  • Gradually add the reserved orange juice to the icing sugar, stirring until smooth and slightly runny. Drizzle the icing in a zigzag pattern over the top of the cake and leave to set.

3/4 cup Dried apricots
1 cup Lukewarm water (For soaking apricots)
1 Orange
1/2 cup Raisins
2/3 cup Sugar
2 tablespoons Butter or margarine, melted
1 Egg
2 cups All purpose flour
2 teaspoons Baking powder
1 teaspoon Salt
1 teaspoon Baking soda
1/2 cup Walnuts, chopped
1 teaspoon Vanilla extract

Steps:

  • Preheat oven to 350F. Lightly grease a 9x5 inch loaf pan; set aside.
  • In a bowl, cover apricots with lukewarm water & let stand 30 minutes; drain. Remove zest from Orange. Juice the Orange & reserve. Place apricots, zest & raisins in food processor or finely chop. Add enough boiling water to Orange juice to make 1 cup and pour in a bowl over ground fruit. Stir in butter & sugar; beat in egg. In separate bowl, stir together flour, baking powder, salt, baking soda & walnuts; add to fruit mixture along with vanilla & stir just until flour is moistened. Pour into prepared loaf pan.
  • Bake for 55-60 minutes. Makes 1 loaf.
