APRICOT JAM

Apricot Jam image

I love to save money, especially with my big family. So making my own jams and jellies is a favorite hobby of mine to share with my kids. This jam is not only fun to make, but it is also very delicious. There's nothing like your own fresh jam on toasted Italian bread.

Time 2h

Yield 50

Number Of Ingredients 4

8 cups fresh apricots - peeled, pitted, and crushed
¼ cup lemon juice
6 cups white sugar
5 (1 pint) canning jars with lids and rings

Steps:

  • Mix apricots and lemon juice in a large pot; add sugar. Slowly bring to a boil, stirring until sugar dissolves. Cook and stir until apricot mixture thickens, about 25 minutes. Remove from heat and skim foam if necessary.
  • Meanwhile, prepare jars, lids, and rings by cleaning and sterilizing in dishwasher or boiling water bath. Leave lids in simmering water until ready to seal jars.
  • Ladle hot jam into hot sterilized jars, leaving about 1/4 inch of space on top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil, then carefully lower the jars into the pot using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process for 15 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

APRICOT JAM

Apricot Jam image

Making jam is one of the best ways to harness the flavor of apricots during their short season, to enjoy during the colder months. In this recipe, we give the fruit's natural pectin a jump-start by macerating the apricots with sugar and lemon before cooking; the acid in the lemons activates the apricot's pectin, reducing the cooking time and preserving more flavor and color. We also added a touch of vanilla to coax out the mellow notes of the fruit and balance the mixture's tartness. Apricot jam tastes great with scones or slathered on rustic bread--or swirled into vanilla ice cream. It's also the classic choice for melting and brushing over pastries and fruit tarts.

Provided by Food Network Kitchen

Categories     condiment

Time 50m

Yield 3 1/2 cups

Number Of Ingredients 4

2 pounds pitted, quartered apricots
1 3/4 cups sugar
Zest of 1 lemon plus 1 tablespoon lemon juice
1 teaspoon vanilla bean paste or 1/2 vanilla bean, split lengthwise and seeds scraped (see Cook's Note)

Steps:

  • Toss the apricots, sugar, lemon zest and juice and vanilla in a large saucepan to combine, then mash slightly to release some of the apricot juice. Set aside for 10 minutes to allow the apricots to macerate and the sugar to dissolve. Meanwhile, place a small plate in the freezer to chill; this will be used to test the doneness of the jam.
  • Place the saucepan over medium-high heat. (See Cook's Note for suggested add-in.) Bring the mixture to a boil and then reduce the heat to medium, stirring frequently. Continue to cook until the jam becomes thick and syrupy, about 35 minutes. To test doneness, place a small amount of the jam onto the chilled plate and freeze for 2 minutes. Drag your finger or a spoon through the jam. If it holds its shape and thickness, the jam is done; remove from the heat. If it's runny, continue to cook and test again in 5-minute increments. Once the jam has reached the right consistency, transfer to jars and cool completely before storing, tightly covered. The jam will keep in the refrigerator for up to 6 months.

PERFECT-FOR-PARTIES BAKED BRIE IN PUFF PASTRY WITH APRICOT JAM

Perfect-for-Parties Baked Brie in Puff Pastry with Apricot Jam image

This is a classic dish for any type of gathering, and one we always put out. Imagine a croissant filled with melted Brie cheese and sweet fruit and jam. That's what this dish is. It's a pull-apart appetizer that can be spread on toast points or eaten as is. It's one of those centerpiece starters that is the talk of the party. Puff pastry is a cook's friend. It's great for making quick pastries and even beef Wellington. We always keep a pack in the freezer.

Provided by Jet Tila

Categories     appetizer

Time 1h40m

Yield 4 servings

Number Of Ingredients 7

1 (8-ounce [224-g]) wheel of Brie
1 sheet puff pastry, frozen
3 tablespoons (60 g) apricot preserves
1 small Granny Smith apple, peeled, cored and cut into small dice
1/4 teaspoon ground cinnamon
1 large egg beaten with 1 tablespoon (15 ml) milk
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400°F (200°C).
  • Using a large chef's knife, cut the white rind off the top of the wheel of Brie and discard. Put the disk into the freezer and at the same time pull out the sheet of puff pastry. Allow the puff pastry to thaw until it is pliable but still cold, about 30 minutes.
  • Roll the puff pastry to a 14-by-14-inch (35.5-by-35.5-cm) square. Using a pizza cutter or knife, cut a 1/2-inch (1.3-cm) wide strip from one edge of the pastry. Transfer the dough to a parchment-lined baking sheet. Place 1 tablespoon (20 g) of the preserves at the center of the pastry and then the frozen Brie wheel. Top with the apple and cinnamon, then dollop the remaining 2 tablespoons (40 g) of preserves on top. Gather the four corners of the dough, one at a time, across the Brie to enclose it completely. Tie a simple knot with the strip of dough to make a purse.
  • Brush the entire top and sides of the purse with the egg wash. Sprinkle with salt and pepper. If at any point the pastry seems like it's melting or too soft, put it in the freezer for 5 to 10 minutes before continuing. Make sure the pastry is well chilled before baking.
  • Bake on the middle rack of the oven for 30 to 40 minutes, turning the baking sheet halfway through, until the pastry is golden brown and cooked through. Transfer to a wire rack and let cool for 8 to 10 minutes before serving warm.

APRICOT PINEAPPLE JAM WITH PECTIN RECIPE - (4/5)

Apricot Pineapple Jam with Pectin Recipe - (4/5) image

Provided by Foodiewife

Number Of Ingredients 5

5 cups of apricots, (approximately 12 apricots, skins removed and pitted, about 4 pounds) and chopped
1 medium sized pineapple, peel and core removed (about 1 cup)
1 box pectin
6 cups sugar, divided (4 1/2 cups and 1 1/2 cups)
1 pat butter

Steps:

  • EQUIPMENT NEEDED: Water bath canning pot and rack. Clean jars, lids and rims. Clean towels, long tongs and a jar lifter (or tongs with rubber grips) Pot of water for metal lids and rims. Bowl of ice water (to remove apricot skins) PREPARE THE APRICOTS: To easily remove apricot skins, cut a small "x" at the bottom of each fruit. Gently dunk into a pot of boiling water for 1-2 minutes. Remove, with a slotted spoon. Starting with the "x", peel the skins off by sliding with your thumbs. It's that easy! UPDATE: I found a faster way to peel apricots. Cut them in half, pit them and place them (face down) onto a foil-lined baking sheet. Cut an "X" on top of each apricot, with a knife. With the rack on it's highest position, broil for 5-6 minutes. Remove, allow to cool until safe to hold in your hand. Grab the skin on the "x" and pull off. Easy! Using a food processor (or by hand, if you prefer), pulse the apricots until they are chunky smooth-- not pureed. You want bits of apricot for texture. Strain the apricots and reserve the juice. PREPARE THE PINEAPPLE: NOTE: I used fresh pineapple. You could try canned, but I think fresh pineapple tastes the best. Trim the pineapple by removing the top, cutting off the shell and then cutting into quarters. Removing the core, is easier. I like to use my food processor, but you can cut the pineapple, by hand. I pulse the cut pineapple until it's fine but not pureed. Strain the pineapple, reserving the juice with the apricot juice. I ended up with about 3/4 cups juice. In a large pot, add the fruit, box of pectin and 1 1/2 cups sugar. Combine and bring to a low boil. Slowly stir in the remaining sugar. Add 1/2 cup of the reserved juice. Bring to a continuous roll, stirring frequently, so it doesn't stick. Bring to a gel stage (approximately 10 minutes). I like to chill a plate in my freezer. Spoon a little of the cooked fruit on the cold plate. Run your finger through it, and see if it separates. Let is sit a minute more and feel the texture. If it gels, it's ready. Pour into sterilized clean class jars with lids. Set the filled jars in a rack, covered by at least 2" of boiling water. Keep the pot covered and set a timer for 10 minutes, from when the water begins to rapidly boil. Remove from the pot, carefully, with a jar lifter onto a clean towel. Listen for the "pop" of the vacuum on the lids...and/or press a finger on the top. If it's firm, you have a good vacuum. If a jar is not sealed, properly, you can repeat the water bath boil method, or refrigerate this jar and eat within 2 weeks.

Number Of Ingredients 3

500g whole dried apricot , chopped
juice 3 large lemons
1 ½kg jam sugar

Steps:

  • Put the apricots in a large pan, add 1.5 litres water, cover and leave overnight to soak.

  • Remove from the heat and add the sugar, stirring until it dissolves. Return to the heat and boil rapidly for 20 mins or until setting point is reached. To check this, remove the plate from the fridge, put a spoonful of jam onto the plate and pop it back in the fridge for a few mins - the jam should wrinkle when you push it with your finger. Apricot jam is a delicious way to preserve the fresh flavor of apricots throughout the year. It’s easy and convenient to make your own jam at home with a few simple steps. However, perfecting the art of making apricot jam can be a challenge. This article will provide valuable tips for making the best apricot jam.

Choosing the right apricots

The quality of apricots used in making apricot jam is key to getting the perfect jam. When selecting apricots, it’s important to choose ripe, unblemished fruits. Ripe apricots should have a rich golden color with a little bit of red blush. They should also have a distinct fragrant aroma. If apricots are not ripe enough, they will lack flavor and if they are overripe, they will be too soft and likely to become mushy when cooked.
Storing apricots
It’s important to store apricots properly to prevent them from spoiling before you make jam. If you are not using them immediately, store them in the refrigerator in a container or Ziploc bag for up to five days. You can also freeze apricots for later use by washing them, removing the pits, and placing the fruits in a freezer bag.

Prepping the apricots

Before making the jam, you need to prepare the apricots. Start by washing and drying the fruit. Cut the apricots in half, remove the pit, and dice the flesh into small pieces. If you want a smooth jam, you can use a blender or food processor to puree the apricots. However, keep in mind that a puree will result in a thicker jam than one made with chunky fruit pieces.
Addition of pectin
Pectin is a natural fiber found in many fruits and vegetables. It’s what gives jelly and jam its thick texture. Apricots do contain some natural pectin, but it’s often not enough to make a firm jam. Therefore, it’s essential to add powdered pectin to the apricots during the cooking process. Follow the instructions on the pectin package for the correct amount to add.

Sweetening the jam

Most people add sugar to their apricot jam to sweeten it. The amount of sugar you add will determine the sweetness level of your jam. The recommended ratio of fruit to sugar is usually 1:1, but this can vary depending on the recipe.
Use of honey or artificial sweetener
If you want to reduce the amount of sugar in your apricot jam or use a natural alternative, you can substitute honey for sugar. Honey will add a unique flavor to the jam, but keep in mind that it will also change the texture of the finished product. You can also use artificial sweeteners if you prefer. However, you will need to adjust the amount of pectin you add to achieve the right consistency.

Adding flavor

While apricot jam is delicious on its own, you can enhance the flavor by adding other ingredients. For instance, you can add lemon juice for a tangy flavor or vanilla extract for a sweet, aromatic flavor. You can also add other fruits, such as strawberries or peaches, to create a unique flavor combination.
Spices
In addition to fruit, you can also add spices to your apricot jam to add warmth and depth of flavor. Cinnamon or cardamom are popular choices for apricot jam. Remember to use only a small amount of spices, so as not to overpower the apricot flavor.

Cooking the jam

The cooking process is the most critical part of making apricot jam. The length of cooking time affects the consistency of the jam. You also need to stir the mixture continuously to prevent the jam from burning.
Cooking time
The cooking time depends on several factors, such as the amount of fruit, sugar, and pectin used. However, on average, apricot jam usually takes about 20-25 minutes to cook. You will know the jam is ready when it has a thick, syrup-like consistency and passes the “wrinkle test.” To do this, place a small amount of the jam on a cold plate and push it gently. If it wrinkles, it means the jam has set correctly.
Stirring the mixture
While the mixture is cooking, you need to stir it continuously to prevent it from burning. You can use a wooden spoon or a spatula to stir the jam. Make sure to scrape the bottom of the pot to mix any fruit that has settled there.

Filling and storing the jam

After cooking, filling and storage of the jam is also crucial. Proper storage is the key to keeping your jam fresh and delicious for longer.
Filling the jars
When filling the jars with the jam, clean the jars and lids first, then sterilize them by boiling in water. Fill the jars with hot jam and leave about a quarter-inch space at the top to allow for expansion during storage. Wipe any spills off the rim with a clean, damp cloth.
Storing
Store the apricot jam in a dark, cool place away from direct sunlight. Properly stored apricot jam can last up to a year. Once the jar is opened, refrigerate the jam and use it within a few weeks.

Conclusion

Making apricot jam is an easy process using simple ingredients. However, following these tips will ensure your apricot jam turns out perfect every time. When choosing apricots, make sure they are ripe and unblemished. Preparing the apricots involves washing, dicing or pureeing the fruit. After adding sugar and pectin and flavoring, cook the mixture and stir continuously. Always sanitize the jars and store the jam properly in a cool, dark place. Follow these tips for perfect apricot jam every time.
