One 7- to 8-pound cured smoked ham, bone in
2 cups apricot jam
2 tablespoons unsalted butter, plus more for greasing the foil

1 tablespoon red wine vinegar
1 bay leaf
Pinch of ground cloves

CLASSIC PINEAPPLE-APRICOT GLAZED HAM

Classic Pineapple-Apricot Glazed Ham image

A gorgeous glazed ham calls for a celebration, but it can be a bit daunting to make one. It doesn't have to be that way. As long as you buy the right ham (that's what your butcher is for, friends!), it's a snap to put together a flavorful, fragrant glaze -- and that's really all you need to make this showstopper of a roast.

Provided by Food Network Kitchen

Categories     main-dish

Time 3h55m

Yield 12 servings

Number Of Ingredients 7

One 9- to 10-pound bone-in fully-smoked ham (butt or shank half)
2 tablespoons whole cloves
Zest and juice of 2 limes
8 thin slices fresh ginger
2 cups unsweetened pineapple juice
1 cup apricot preserves
1/4 cup Dijon mustard

Steps:

  • For the ham: Remove the ham from the refrigerator and bring to room temperature, about 30 minutes. Preheat the oven to 325 degrees F.
  • Trim off any skin from the ham. Use a sharp paring knife to score through the fat in a diagonal crosshatch pattern without cutting through to the meat. Insert the cloves into the ham, placing them at the intersections of the cuts (you may have some cloves left over).
  • Put the ham, flat-side down, on a rack in a roasting pan. Pour 1/4 inch water into the bottom of the pan. Transfer to the oven and roast until a thermometer inserted into the thickest part of the ham registers 130 degrees F, about 2 hours and 30 minutes (about 15 minutes per pound).
  • Meanwhile make the glaze: Squeeze the lime juice into a small saucepan. Add the ginger and pineapple juice. Bring to a boil, reduce the heat and simmer until reduced to 1/2 cup, 8 to 10 minutes. Strain, then stir in the lime zest, apricot preserves and Dijon.
  • Increase the oven temperature to 425 degrees F. Pour half the pineapple glaze over the ham and brush to coat. If the water in the bottom of the pan has evaporated, add more. Return the ham to the oven and roast, basting every 10 minutes with the remaining glaze, until glossy and well browned, about 45 minutes more.
  • Let the ham rest for 15 minutes before carving. Carve the ham into slices and serve.

The History of Apricot Glazed Ham

Ham has been a popular dish for centuries and has always been a staple of the holiday season. Apricot glazed ham, however, is a more recent addition to the traditional ham recipes. The origin of the apricot glaze is not clear, but it is believed to have originated in the United States in the late 19th century. The use of apricots in cooking can be traced back to ancient times in China and Babylon, where the fruit was prized for its health benefits and versatility. In the Middle Ages, apricots were introduced to Europe through the Silk Road and quickly became popular in cooking. The combination of apricots and ham was likely the result of experimentation in the kitchen. The sweet and tangy glaze complements the salty flavor of the ham, creating a perfect balance of sweet and savory.

Ingredients Used in Apricot Glazed Ham Recipes

The ingredients used in apricot glazed ham recipes vary, but the basic recipe usually includes a ham, apricot jam or preserves, brown sugar, honey, Dijon mustard, and a variety of spices. Some recipes may also include pineapple juice, ginger, cinnamon, or cloves to add an extra layer of flavor. The ham used in this recipe can be any type of ham, but spiral hams are particularly popular due to their ease of preparation and uniformity in size. The apricot jam or preserves used in the glaze can be homemade or store-bought, but it is essential that the jam is of high quality to ensure a flavorful glaze. The brown sugar and honey are used to sweeten the glaze and help it caramelize on the ham. Dijon mustard adds a tangy flavor to the glaze and helps thicken it, while spices such as ginger, cinnamon, and cloves add complexity to the flavor profile.

How to Prepare and Cook Apricot Glazed Ham

To prepare apricot glazed ham, start by carefully trimming the excess fat from the ham. This will help the glaze adhere to the ham and prevent it from becoming too greasy. Score the surface of the ham in a criss-cross pattern, creating small diamond shapes. This will allow the glaze to seep into the ham, making it more flavorful. In a saucepan, combine the apricot jam or preserves, brown sugar, honey, Dijon mustard, and spices. Heat the mixture over medium heat, stirring occasionally, until it is smooth and well combined. Place the ham in a roasting pan and brush the glaze over the surface of the ham, making sure to get the glaze in between the diamond shapes. Cover the ham with foil and roast in a preheated oven according to the ham's cooking instructions. Remove the foil during the last 30 minutes of cooking to allow the glaze to caramelize. Once the ham is fully cooked, remove it from the oven and let it rest for 10-15 minutes before carving. Spoon any remaining glaze over the ham before serving.
Tips for Cooking Apricot Glazed Ham
  • Choose a high-quality ham for the best flavor.
  • Trim excess fat from the ham before cooking.
  • Score the surface of the ham to allow the glaze to penetrate.
  • Use a meat thermometer to ensure that the ham is fully cooked.
  • Let the ham rest before carving to allow the juices to redistribute.
  • Serve the ham with additional apricot glaze on the side.

Ham is one of the most popular meats for holiday feasts, especially during Easter and Christmas. Glazing a ham adds flavor and enhances its appearance. Apricot glazed ham is one of the best ways to prepare a ham for a holiday dinner. However, making an apricot glazed ham can be challenging for beginners. Therefore, this article will provide some valuable tips to make a perfect apricot glazed ham.

Tip 1: Choose the right ham

The quality of the ham you choose will affect the overall taste of the dish. A high-quality ham will have a better taste, more tenderness, and fewer preservatives. The best kind of ham for this recipe is a bone-in, spiral-cut ham. A spiral cut ham is pre-sliced, which makes serving easier. Bone-in hams retain more moisture, which makes them more flavorful and juicy. Also, make sure to choose a ham that is not overly salty.

Tip 2: Make the glaze

The apricot glaze is the star of the show. To make a good glaze, you need to use good quality ingredients. You will need apricot jam, brown sugar, honey, Dijon mustard, cider vinegar, and spices. In a saucepan, mix all the ingredients and cook over medium heat, stirring occasionally, for 5-7 minutes until the glaze is thick and bubbly. Make sure the glaze hasn't cooled completely before applying it to the ham.

Tip 3: Prepare the ham

Before applying the glaze, the ham needs to be prepared. Remove the ham from the packaging and allow it to come to room temperature for 30 minutes. Preheat the oven to 325°F. Line a roasting pan with foil or parchment paper, then place the ham in the pan, flat side down. Cover the ham with foil or a lid and bake for 1 hour.

Tip 4: Apply the glaze

After the ham has baked for 1 hour, remove the foil or lid and brush the ham with the apricot glaze, making sure to cover the entire ham. Return the ham to the oven and bake for another 30-45 minutes, basting the ham with the glaze every 10-15 minutes until the ham is heated through and the glaze has caramelized. Add some fresh apricots around the ham for a more festive look.

Tip 5: Let the ham rest

Once the ham is cooked, remove it from the oven and let it rest for 15-20 minutes before slicing. This allows the juices to redistribute, making the ham tastier and more tender. Also, be sure to reserve any leftover glaze to serve alongside the ham.

Tip 6: Add some spice

To add an extra layer of flavor to your apricot glazed ham, you can add some spices to the glaze. Cinnamon, nutmeg, cloves, and cayenne pepper are great options. Just make sure not to overdo it, as you don't want to overpower the sweet apricot flavor.
Cinnamon:
Cinnamon adds warmth and depth to the glaze. It pairs well with apricots and enhances the earthy flavors of ham. Add 1/2 teaspoon of ground cinnamon to the glaze for a subtle hint of spicy sweetness.
Nutmeg:
Nutmeg adds a warm, aromatic flavor to the glaze. It pairs well with cinnamon and clove. Add a pinch of ground nutmeg to the glaze for a subtle flavor boost.
Cloves:
Cloves add a sweet and spicy flavor to the glaze. They pair well with apricots and complement the savory flavors of ham. Add a pinch of ground cloves to the glaze for a warm and comforting aroma.
Cayenne Pepper:
Cayenne pepper adds a spicy kick to the glaze. It balances the sweetness of the apricot and adds depth to the flavor profile. Add 1/4 teaspoon of ground cayenne pepper to the glaze for a subtle spicy heat.
