GLAZED CORNISH GAME HENS WITH APRICOT PISTACHIO DRESSING

Glazed Cornish Game Hens With Apricot Pistachio Dressing image

Cornish game hens are festive and readily available. I've even made them the centerpiece of a holiday meal. These little birds cook much more quickly than other holiday roasts, such as lamb or ham. I normally figure on one hen (in the 1 1/2- to 2-pound range) to serve every two guests - especially if you also plan to have a first course and a dessert.

Yield 8

Number Of Ingredients 9

4 Cornish game hens (about 1 1/2 pounds each), cut down the backbone with heavy-duty scissors and spread open
2 cups kosher salt
3 tablespoons olive oil
2 medium-large onion, cut into medium dice
1 cup dried apricots, cut into medium dice
½ cup apricot jam
¼ cup balsamic vinegar
½ cup pistachio nuts, coarsely chopped
½ cup chopped fresh parsley

Steps:

  • Brining the hens before roasting improves their flavor: Dissolve 2 cups of kosher salt in a clean bucket filled with 5 quarts of water. Add prepared hens and soak for 2 hours. Rinse thoroughly; pat dry.
  • Adjust oven rack to upper middle position, and heat oven to 450 degrees.
  • Heat oil in a large skillet. Saute onions until softened, about 7 minutes. Stir in apricots, then spread mixture onto a large (about 18-by-12-inch) lipped cookie sheet. Lay hens over the mixture. Mix jam and vinegar, and brush all but a few tablespoons over hens.
  • Bake hens, brushing 2 or 3 times with remaining jam mixture and accumulated pan juices, until hens are golden brown and juices run clear, about 45 minutes. Turn heat from bake to broil, then cook until hens are spotty brown, watching carefully so they don't burn, 4 to 5 minutes.
  • Transfer hens to a large platter with tongs, then cut in half at the breastbone to create individual servings.
  • Return apricot dressing to the oven and broil to evaporate some of the excess liquid, about 5 minutes longer. Stir in pistachios and parsley. Spoon in a mound next to hens.

One popular way to prepare Cornish hens is to glaze them with a tasty sauce, such as apricot ginger glaze. This glaze adds a sweet and tangy flavor to the hens, making them a hit with everyone. However, making Cornish hens with apricot ginger glaze can be tricky, especially if you haven't done it before. In this article, we'll share some valuable tips on how to make the perfect apricot ginger glazed Cornish hens.

Choosing the Right Hens

The first step in making great apricot ginger glazed Cornish hens is to choose the right birds. Cornish hens are small chickens that weigh around 2 pounds each. You'll want to make sure that the hens you choose are fresh and of high quality. Look for hens that are plump, with no signs of discoloration or odor. If you're buying frozen hens, make sure they have been properly thawed before cooking.
Preparing the Hens
Once you have chosen your hens, the next step is to prepare them for cooking. Rinse the hens and pat them dry with paper towels. You can remove any excess fat or skin if you prefer. Rub some olive oil, salt, and pepper onto the hens to season them.
Making the Apricot Ginger Glaze
The key to making great apricot ginger glazed Cornish hens is to make a flavorful glaze that will complement the taste of the hens. Here's a recipe for a simple yet delicious apricot ginger glaze:
  • 1 cup apricot preserves
  • 1/4 cup honey
  • 3 tablespoons soy sauce
  • 1 tablespoon minced ginger
  • 1 tablespoon minced garlic
  • Salt and pepper to taste
Combine all the ingredients in a small saucepan and bring to a boil over medium heat. Reduce the heat to low and simmer for about 5 minutes, stirring occasionally. The glaze should thicken and become syrupy.
Basting the Hens
To achieve that perfect glazed finish on your hens, you'll need to baste them with the glaze as they cook. You can do this by using a pastry brush to apply the glaze to the hens every 10 minutes or so. Be careful not to apply too much glaze at once, as this can cause it to run off the hens and onto the pan.
Cooking the Hens
Cornish hens can be cooked in a variety of ways, but one of the most popular methods is to roast them in the oven. Preheat your oven to 375°F. Place the hens on a baking sheet or in a roasting pan, breast-side up. Roast the hens for about 45 minutes, basting them with the glaze every 10 minutes. The hens should be golden brown and fully cooked when they're done. You can check the internal temperature of the hens with a meat thermometer. The temperature should read 165°F.
Serving the Hens
Once your apricot ginger glazed Cornish hens are done, you can serve them in a variety of ways. You might consider pairing them with some roasted vegetables, such as carrots or Brussels sprouts. You can also serve them with a side of rice or couscous. Don't forget to pour any leftover glaze over the hens before serving for an extra burst of flavor.

Conclusion

Making apricot ginger glazed Cornish hens can be a fun and rewarding experience. With the right ingredients and techniques, you can create a dish that's sure to impress your dinner guests or family. Remember to choose quality hens, make a flavorful glaze, baste the hens regularly, and cook them to perfection.
