APRICOT FRIED PIES
I found this recipe in a Southern Living Magazine about 20 years ago. It was for apple fried pies but my mother and I modified it for dried apricots. I don't make these often because it is time consuming to roll out each individual fried pie.

The crust of a fried pie is just as important as the filling. You want a crust that is light and flaky, with just the right amount of sweetness. When it comes to making the filling for your apricot fried pies, you want to make sure it is thick and not too runny. This will prevent the filling from leaking out during the frying process. You can add a bit of cornstarch or flour to thicken the filling if needed.Don't Overfill the Pies
When filling your pies, it can be tempting to add as much filling as possible. However, this can cause the pies to burst during the frying process. Only add a small amount of filling to each pie, and make sure the edges are sealed well.Fry in Hot Oil
To get that beautiful golden color and crispy texture, you need to fry your pies in hot oil. Use a deep fryer or a large pot to heat the oil to 350 degrees Fahrenheit. Fry the pies for about 2-3 minutes on each side, or until they are golden brown.Drain on Paper Towels
After frying the pies, it's important to drain them on paper towels to remove any excess oil. This will also help to keep the pies crispy. Conclusion
