GLAZED CORNISH GAME HENS WITH APRICOT PISTACHIO DRESSING

Glazed Cornish Game Hens With Apricot Pistachio Dressing image

Cornish game hens are festive and readily available. I've even made them the centerpiece of a holiday meal. These little birds cook much more quickly than other holiday roasts, such as lamb or ham. I normally figure on one hen (in the 1 1/2- to 2-pound range) to serve every two guests - especially if you also plan to have a first course and a dessert.

Provided by Ben S.

Categories     Main Dish Recipes

Yield 8

Number Of Ingredients 9

4 Cornish game hens (about 1 1/2 pounds each), cut down the backbone with heavy-duty scissors and spread open
2 cups kosher salt
3 tablespoons olive oil
2 medium-large onion, cut into medium dice
1 cup dried apricots, cut into medium dice
½ cup apricot jam
¼ cup balsamic vinegar
½ cup pistachio nuts, coarsely chopped
½ cup chopped fresh parsley

Steps:

  • Brining the hens before roasting improves their flavor: Dissolve 2 cups of kosher salt in a clean bucket filled with 5 quarts of water. Add prepared hens and soak for 2 hours. Rinse thoroughly; pat dry.
  • Adjust oven rack to upper middle position, and heat oven to 450 degrees.
  • Heat oil in a large skillet. Saute onions until softened, about 7 minutes. Stir in apricots, then spread mixture onto a large (about 18-by-12-inch) lipped cookie sheet. Lay hens over the mixture. Mix jam and vinegar, and brush all but a few tablespoons over hens.
  • Bake hens, brushing 2 or 3 times with remaining jam mixture and accumulated pan juices, until hens are golden brown and juices run clear, about 45 minutes. Turn heat from bake to broil, then cook until hens are spotty brown, watching carefully so they don't burn, 4 to 5 minutes.
  • Transfer hens to a large platter with tongs, then cut in half at the breastbone to create individual servings.
  • Return apricot dressing to the oven and broil to evaporate some of the excess liquid, about 5 minutes longer. Stir in pistachios and parsley. Spoon in a mound next to hens.

This spicy salad with little jewels of dried apricot in the mix would be welcome at lunch or a simple weekday dinner. You can prepare the salad and dressing ahead of time. APRICOT CURRY DRESSING

Something a little different. For those on WW points ..... 1Tbps = 1 point. For those not watching their weight you can use standard ingredients :) This dressing quickly became our all time favourite. You can add more of what you like, ie, garlic or curry powder to vary the taste. If the mixture is too thick for what you want to use it for, just add some fat free or low fat milk to thin it down.

Apricot dressing is a delicious and healthy addition to any salad. It adds a sweet and tangy flavor that complements the fresh vegetables and greens. Making your own apricot dressing is easy and can be tailored to your personal taste. In this article, we will provide some valuable tips to help you create the perfect apricot dressing without using a recipe. Tip 1: Choose high-quality apricots Using high-quality fresh apricots is essential for creating a flavorful and delicious dressing. When choosing apricots, look for fruit that is fragrant, plump, and firm to the touch. Avoid apricots that are too soft or have any mold or bruising. If fresh apricots are not in season or are not available in your area, you can use canned or dried apricots instead. Just make sure to use unsweetened varieties to control the amount of sugar in the dressing. Tip 2: Pair apricots with complementary ingredients To create a balanced and delicious apricot dressing, you need to pair the fruit with complementary ingredients. Tart flavors work well with apricots since they help balance the sweetness. Some complementary ingredients to consider include: - Vinegar: Apple cider vinegar or balsamic vinegar add a bright, tangy flavor to the dressing. - Citrus: Fresh lemon, lime, or orange juice can brighten up the apricot flavor and add a zesty kick. - Mustard: Dijon or whole-grain mustard can add a savory depth to the dressing. - Herbs: Basil, thyme, or rosemary can add a fragrant and earthy note to the dressing. Tip 3: Use a blender or food processor To create a smooth and creamy dressing, it is best to use a blender or food processor. Start by blending the apricots and other ingredients on low speed, gradually increasing the speed until the mixture is smooth and well combined. If the dressing is too thick, you can add a little water or olive oil to thin it out. Alternatively, you can use a whisk or immersion blender to mix the ingredients together, but the results may be slightly less smooth and consistent. Tip 4: Don't be afraid to experiment One of the great things about making your own apricot dressing is that you can adjust the flavors to your liking. Don't be afraid to experiment with different ingredients and ratios until you find the perfect combination. You can add more or less vinegar, citrus, mustard, or herbs to suit your taste. If the dressing is too sweet, you can balance it out with a little extra vinegar or citrus. If it's too tangy, you can add a touch of honey or maple syrup to mellow out the acidity. Tip 5: Store the dressing properly Once you've made your apricot dressing, it's important to store it properly to keep it fresh and prevent spoilage. Store the dressing in an airtight container in the refrigerator for up to a week. If the dressing separates or thickens, give it a good shake or stir before using it. If you notice any signs of spoilage, such as a sour smell, mold, or discoloration, discard the dressing immediately. Conclusion Apricot dressing is a nutritious and flavorful addition to any salad. By using high-quality apricots and pairing them with complementary ingredients, you can create a delicious and versatile dressing that can be adjusted to your personal taste. Using a blender or food processor will help you achieve a smooth and creamy texture, and don't be afraid to experiment with different flavors and ratios. Remember to store the dressing properly to keep it fresh and enjoy it throughout the week.
