APRICOT CHEESE DELIGHT (ORANGE SALAD)
I have been eating this since childhood and love it! "Cooking time" includes chilling time and is estimated. I normally make this the day before I need it.

Steps:
- Drain pineapple and save the juice for topping.
- Dissolve Jello in the 2 cups of hot water.
- Fold in apricots (with juice), drained pineapple, and marshmallows. Chill until firm.
- To make the topping, combine sugar and flour in a saucepan.
- Blend in egg and butter.
- Add pineapple juice, and cook over low heat, stirring constantly until thickened.
- Cool thoroughly.
- Fold in whipped cream, and spread topping over congealed salad.
- Sprinkle with grated cheese, and chill.
SYLIVA'S PEACH DELIGHT
This is a wonderful summer dessert. Everyone at the family reunion has gotten to expect it. It is easy to "lighten up" by using low fat and sugar free ingredients. If you use fresh peaches instead of canned sprinkle some lemon juice over them to prevent browning. I make the 4th layer first because it takes so long for it to cool. Is better if made a day ahead.

Steps:
- Layer 1.
- Mix together first three ingredients and spread in 9'"x 12" baking dish. Bake at 375 for 15-20 minutes or until lightly browned. Cool completely.
- Layer 2.
- Mix together cream cheese , confectioners sugar and whipped topping well and spread on crust and refrigerate.
- Layer 3.
- Place peaches evenly over 2nd layer.
- Layer 4.
- Mix sugar, corn starch, and jello well. Stir in water and cook over medium heat until thick and clear. Cool completely. Pour over peaches and refrigerate.

- Filling: Preheat oven to 375°F. Stir together peaches, apricots, granulated sugar, cornstarch, lemon juice, cardamom, allspice, and salt. Divide mixture between six 1 1/2-cup ramekins or gratin dishes (about 1 1/3 cups each).
- Biscuits: In a bowl, whisk together flour, granulated sugar, baking powder, baking soda, and salt. Cut in butter to form clumps no larger than small peas. Stir in buttermilk and cream until a soft, sticky dough forms.
- Spoon about 1/3 cup dough on top of each ramekin (fruit mixture should not be completely covered). Brush tops with cream; sprinkle with sanding sugar. Transfer to a baking sheet and bake until golden brown and bubbling, 55 to 70 minutes. Let cool 30 minutes; serve with ice cream.

- Preheat oven to 400 degrees F (200 degrees C). Line 2 baking sheets with parchment paper.
- Cut each sheet of puff pastry into nine 3-inch squares. Dab a small amount of apricot preserves into the center of each square. Fan 3 slices of peach over the preserves, leaving a slim border of pastry exposed. Spoon a small amount of apricot preserves over the peach slices.
- Bake in the preheated oven, 1 baking sheet at a time, until puff pastry turns golden, about 10 minutes.
- Thin remaining apricot preserves with 2 teaspoons hot water in a small bowl to make a glaze.
- Spoon some of the glaze over each baked tartlet. Return to the oven and bake until tartlets are golden brown, about 2 minute more. Repeat with second baking sheet. Cool tartlets on a wire rack before serving, about 10 minutes.

This is my most asked-for recipe. I've used it for many years, which is obvious from my recipe card that's yellowed and full of stains. The fruity appearance and taste of this easy-to-make bread blend beautifully with our warm Florida sunshine. It's always a hit whenever I serve it.

- Preheat oven to 350°. Soak apricots in warm water for 30 minutes. Meanwhile, in a bowl, cream the sugar, butter and egg. Stir in orange juice. Combine flour, baking powder, baking soda and salt; stir into creamed mixture just until combined. Drain apricots well; add to batter with nuts. Pour into a greased 9x5-in. loaf pan. Bake at 350° for 55 minutes or until bread tests done. Cool 10 minutes in pan before removing to a wire rack.

APRICOT DELIGHT ~ (OR PEACH)
I love this salad, and I've made it with both peach and apricot jello, and love them both. Quite refreshing! It's a great salad for a pot luck. Enjoy!

Steps:
- 1. In a medium sauce pan, bring the pineapple and juice to a boil - stir in jello until dissolved and simmer for 5 minutes. Set aside to cool.
- 2. In large bowl, beat the cream cheese and sugar together until well blended. Add the pineapple mixture and baby food, then mix until well blended.
- 3. Fold in cool whip & nuts.
- 4. Spread into a 9 x 13 baking dish and refrigerate until set.
- 5. Serve salad as is or with whipped cream. I sometimes sprinkle nuts on top, before refrigerating. Enjoy! I find this salad refreshing.
