3/4 teaspoon vanilla extract
1/4 teaspoon kosher salt
2 cold large eggs
1/2 cup all-purpose flour

Stir in flour until well incorporated, then beat vigorously for 30-40 strokes. Stir in nuts or chocolate chips.
  • Using a spatula, spread batter into a thin, even layer to edges and into corners of prepared sheet (batter will seem scant but brownies will rise to about 1/4" thick).
  • Bake brownies until firm to the touch and a tester inserted into the center comes out with moist crumbs (not runny batter) attached, 15-18 minutes.
  • Transfer to a wire rack and let cool completely. Cut into 36 pieces and serve.

1 large egg
1/2 teaspoon pure vanilla extract
3/4 teaspoon almond extract

Steps:

  • Heat oven to 350°F
  • Spread the almonds on a rimmed baking sheet and toast, tossing occasionally, until golden, 4 to 5 minutes; let cool. (Or, toast on the stove top in an iron skillet ~ stir constantly til golden. Be careful not to burn them!).
  • In a food processor, pulse ½ cup of the almonds with ½ cup of the brown sugar until the almonds are finely ground. Transfer to a medium bowl and stir in the flour, baking soda, and salt.
  • With an electric mixer, beat the butter and the remaining ½ cup brown sugar at medium speed until creamy, about 2 minutes. Add the egg, vanilla extract, and almond extract and beat to combine. Reduce the mixer speed to low and gradually mix in the flour-nut mixture just until combined (do not overmix). Gently fold in the remaining ½ cup almonds.
  • Form the dough into two 12-by-1½-inch logs. Refrigerate, tightly wrapped, until firm, about 2 hours or up to 2 days.
  • Heat oven to 350° F with the racks in the upper and lower thirds. Working with 1 log at a time (keep the other chilled), cut it into ¼-inch slices and place the slices on 2 baking sheets, spacing them 2 inches apart. Bake, rotating the baking sheets halfway through, until golden, 9 to 11 minutes. Transfer to a wire rack to cool.
  • Keep the cookies at room temperature in an airtight container for up to 5 days.

The recipe uses almond flour and other healthy ingredients that make them tasty, healthy, and guilt-free. If you're thinking of preparing almond brownie thins, this article will provide you with valuable tips to ensure the best possible outcome.

Select High Quality Ingredients

The first tip is to ensure that you choose high quality ingredients. The quality of your ingredients will significantly impact the outcome of your almond brownie thins. Always purchase high-quality almond flour, cocoa powder, and eggs. Preferably, choose organic items as they are healthier and reduce the risk of exposure to harmful pesticides.
The Best Almond Flour
Choosing the right flour is essential to making the perfect almond brownie thins. The best almond flour is made from blanched almonds that are ground into a fine powder. This type of almond flour works best as it is light, fluffy and has a smooth texture. It is crucial to use the right consistency of almond flour to ensure that your brownies are not crumbly and do not have a gritty texture.
The Best Cocoa Powder
Cocoa powder is a crucial ingredient in any brownie recipe. When making almond brownie thins, it is essential to use high-quality unsweetened cocoa powder. Look for cocoa powder that is natural, without any added sugars or artificial flavors. This guarantees that you get the right level of chocolate flavor and taste.
The Best Eggs
Eggs help bind the ingredients together, making your almond brownie thins less crumbly. It is best to use fresh eggs for the recipe. It is also important to use medium-sized eggs as it gives the right amount of moisture and structure to your brownies.

Measure Accurately

Measuring your ingredients accurately is critical when making almond brownie thins. The correct measurements ensure that your brownies have the right consistency, taste, and texture. Use a digital kitchen scale or measuring cups and spoons to measure your ingredients.
Weighing Your Ingredients
Weighing your ingredients is the most accurate way to measure them. This method guarantees that the proportion of the ingredients is appropriate and produces consistent results. Therefore, it is essential to have a good quality digital kitchen scale that is sensitive enough to weigh small quantities.
Measuring Cups and Spoons
If you do not have a kitchen scale, measuring cups and spoons can come in handy. Use cups that have level measurements marked on them. To measure flour, spoon it into the measuring cups without packing it down. When it comes to measuring liquids, use a liquid measuring cup and ensure that you have the right amount based on the recipe.

Mix Thoroughly

Mixing is crucial when making almond brownie thins, as it helps blend the ingredients and create a homogenous mixture. Ensure that you mix thoroughly to avoid any lumps and unevenness. The best mixing techniques depend on the equipment you have, but you can use a whisk, a spatula, or an electric mixer to blend the ingredients.
Using an Electric Mixer
An electric mixer is a great tool to use when making almond brownie thins. It helps combine the ingredients quickly and more efficiently. When using an electric mixer, start on low speed and then gradually increase the speed to ensure thorough blending.
Using a Spatula
Some prefer mixing brownie ingredients with a spatula, as it allows greater control over the mixing process. Use a plastic or silicone spatula as it is gentle on the ingredients and minimizes the amount of air introduced into the mixture.
Using a Whisk
A whisk is useful when mixing ingredients that require beating, such as eggs. A whisk consists of a wire head that helps incorporate air and create a light and fluffy mixture.

Cooking Time and Temperature

The temperature and time of baking are essential factors that impact the outcome of your almond brownie thins. These factors depend on the type of oven, size of the pan, and the consistency of the batter. It is essential to follow the recipe instructions precisely so that you achieve the right texture and taste.
Preheating the Oven
Preheating the oven ensures that it reaches the desired temperature before you put your brownie mix in. Preheat your oven to 350°F or the temperature specified in the recipe.
Cooking Time
The cooking time for almond brownie thins varies based on the oven and the thickness of the batter. When baking thin brownies, the preferred time is between 12-15 minutes. It is recommended to set a timer to avoid overcooking or burning your brownie thins.
Using a Brownie Pan
Using a brownie pan is essential when making almond brownie thins. Ensure that the pan has the right dimensions as per the recipe. You can use a non-stick pan, which makes the brownies easy to remove and prevents sticking. You can also use parchment paper to line the bottom of the pan, which guarantees easy removal and helps retain the brownies' shape.

Cooling and Serving

What's better than the aroma of brownies coming out of the oven? However, it is crucial to allow your almond brownie thins to cool before serving. Cooling allows them to firm up and helps the flavors develop.
Cooling Time
Place the brownies on a wire rack and allow them to cool for at least 15 minutes. This cooling period helps the brownies set and makes them easier to cut. If you prefer fudgy almond brownie thins, you can cool them in the refrigerator for 30-40 minutes.
Serving
When serving your almond brownie thins, use a sharp knife to cut them into even pieces. Serve them while still warm or at room temperature, either plain or with your preferred topping or glaze.
