Sweet potatoes are one of the most nutrient-dense vegetables you can add to your diet. They are an excellent source of fiber, vitamins, and antioxidants that promote good health. When mixed with apricots and orange, sweet potatoes make for a perfect nutritious and delicious meal that can be served any time of the day.

Choosing the Right Sweet Potatoes

When making apricot and orange sweet potato recipes, it's imperative to pick the right sweet potatoes. Not all sweet potatoes are created equal, and therefore, selecting the right type of potato can make all the difference. Choose sweet potatoes that are firm and have smooth surfaces. The color of the sweet potatoes should also be bright and uniform throughout. Avoid any sweet potatoes with soft spots, bruises, or signs of decay as these could indicate spoilage.

Preparing the Sweet Potatoes

After choosing the right sweet potatoes, it's essential to prepare them perfectly. The first step in preparing sweet potatoes is to wash them thoroughly under running water to get rid of any dirt, grime, or debris. You can also use a vegetable brush to scrub off any stubborn dirt. Next, preheat your oven to 400°F. Pierce your sweet potatoes with a fork several times to help release any steam produced during cooking. Then wrap each sweet potato in aluminum foil and place them on a baking sheet. Place the baking sheet in the oven, and bake for approximately 45-60 minutes, depending on the size of the sweet potatoes.

Adding Apricots and Orange

Adding apricots and orange to sweet potatoes can create a sweet, tangy, and savory dish that tantalizes your taste buds. Begin by peeling and chopping your apricots into small bite-sized pieces. Next, zest your oranges to obtain small pieces of orange peel. Ensure you don't get the white pith as it has a bitter taste. Your filling will have a stronger orange flavor if you use fresh orange juice extracted directly from the oranges. Mix the apricots and orange zest with a touch of honey and cinnamon. After your sweet potatoes have cooled down, cut them down the center and scoop out a small amount of the flesh from each side. Mix the flesh with the apricot and orange filling, and then stuff the mixture back into the sweet potatoes.

Baking the Filled Sweet Potatoes

To bake your filled sweet potatoes, return them to the 400°F oven for 10-15 minutes, depending on how crispy you like your potatoes. Once your sweet potatoes are ready, take them out of the oven, and allow them to cool down for a few minutes before serving.

Add Some Protein

Although sweet potatoes mixed with apricots and oranges are delicious all by themselves, adding some protein to your meal can enhance the dish's nutritional value. For instance, cooked chicken or turkey can be an excellent addition to your sweet potato recipe. Tofu is also a perfect alternative that adds some protein to the dish.

The Bottom Line

Sweet potatoes mixed with apricots and oranges are delicious and nutritious. By following the above tips, you'll end up with a mouthwatering dish that's healthy, low in calories, and packed with essential vitamins and minerals.
