Steps:
- Remove skin from the kielbasa and slice into bite-sized pieces.
- Heat oil in a large frying pan over medium heat. Add kielbasa, bell pepper, onion, and garlic. Fry until veggies have softened, 5 to 7 minutes. Season with salt and pepper.
- Stir in apple, then cover with Cheddar cheese. Cover the pan and cook until cheese has melted, about 3 minutes.

- Cut kielbasa into 1" pieces and combine with brown sugar, applesauce, mustard, and garlic in 3 quart crockpot. Cover and cook on low for 6-8 hours until thoroughly heated.
KIELBASA WITH APPLE CARAWAY SAUERKRAUT
Steps:
- Preheat oven to 425 degrees. In a large oven-proof skillet over medium heat, saute kielbasa until browned, about 4 minutes on each side. Remove kielbasa to a plate and keep warm. In the same pan, saute the onion and the apple for 1 minute. Drain and rinse the sauerkraut and add it to the apples and onion in the skillet. Add the chicken stock and caraway seeds to the pan and stir. Return the kielbasa to the skillet and cover. Put covered skillet in hot oven and cook for 15 to 20 minutes.

KIELBASA WITH GOLDEN ONIONS AND APPLE
Steps:
- Lightly score each piece of sausage in several places with a sharp paring knife. Heat 1 tablespoon oil in a 12-inch heavy skillet over moderate heat until hot but not smoking, then brown half of sausage, turning occasionally, until golden, about 4 minutes. Transfer to a bowl and cover to keep warm. Pour off fat from skillet and wipe skillet clean. Add remaining tablespoon oil to skillet and brown remaining sausage in same manner, transferring to bowl as cooked.
- Wipe skillet clean again, then cook onions with salt and pepper in butter over moderate heat, stirring occasionally, until golden brown, 15 to 20 minutes. Meanwhile, peel, core, and finely chop apple. Stir apple and broth into onion mixture and simmer briskly, uncovered, stirring occasionally, until apple is tender, 6 to 7 minutes. Add sausage and simmer, stirring, until heated through, about 1 minute.
KIELBASA WITH BAKED APPLES
This is one of my recipes from New Years Day 2006. It was easy to make and the flavor was amazing. I should have made more.

Steps:
- Slice your Kielbasa into bite size pieces. I prefer Beef Kielbasa, but other flavors will also work. Be sure it is cold when you slice it so the juices do not run.
- Lightly coat a 9x14 glass baking dish with unflavored cooking spray.
- Pour one can of your apple pie filling into your baking dish. Spread it around evenly without crushing the apples.
- Arrange your Kielbasa pieces in your dish, then pour your remaining can of apple pie filling over them.
- Cover your baking dish with tinfoil. Insert into your oven and bake at 350 degrees for about 20 minutes.
- After 20 minutes, turn your Kielbasa slices over, arrange your Maraschino cherries among the apples in your baking dish, re-cover with your tinfoil and continue baking another 20 minutes.
- Remove from your oven and serve your Kielbasa in your baking dish. Your guests will bombard you with compliments as they gobble up every single piece of juicy Kilebasa. They'll eat all the apples and cherries too.

Each year on the night of the Oscars, we fix a meal that has one item from each of the five nominated films for Best Picture. In 2008, "No Country for Old Men" was nominated and this recipe for kielbasa caught my eye. This food "traverses West Texas" as sausage is big in Texas. We tried it and really liked it. This is also a great breakfast dish with pancakes or oatmeal. Hope you like it, too.
