NORWEGIAN APPLE CAKE

Norwegian Apple Cake image

Though quite straightforward, this recipe for Norwegian apple cake from Nevada Berg's cookbook "North Wild Kitchen" did raise a question. A whole tablespoon of cinnamon? Really? But it was not at all excessive, giving the cake autumnal fragrance and flavor along with a nicely burnished surface. What this recipe also offers is great flexibility. Though it calls for an 8-inch springform, it also worked in a 9-inch and a 10-inch, the latter providing a little less cake in proportion to topping (though no change in cooking time). Larger pans require more fruit. And on that score, in place of apples the recipe works well with fresh figs and peaches. Small purple plums, pears, apricots and even bananas are some other options to consider.

Time 1h45m

Yield 10 servings

Number Of Ingredients 11

4 tart apples, like Granny Smith
1 cup/227 grams (2 sticks) salted butter, softened, plus more for greasing the pan
2 cups/255 grams all-purpose flour
1 1/2 teaspoons baking powder
1 1/4 cups/250 grams granulated sugar
3 large eggs, at room temperature
1/2 cup/4 ounces whole milk
1/3 cup/32 grams sliced almonds
2 tablespoons dark brown sugar
1 tablespoon cinnamon
Whipped cream or vanilla ice cream for serving

Steps:

  • Peel and core apples; slice 1/2-inch thick. Set aside. Use some of the butter to grease an 8-inch springform cake pan. Dust with a little flour. Heat oven to 350 degrees.
  • Sift or whisk flour with baking powder. Set aside. In the bowl of a standing mixer, beat granulated sugar with 3/4 cup (1 1/2 sticks) of the butter for several minutes, until light and fluffy. Beat in eggs, one at a time, then beat mixture about 3 minutes until creamy. Gradually add flour mixture in three batches, alternating with milk, mixing well after each addition. Transfer batter to pan.
  • Arrange the apple slices on top of batter in tight overlapping concentric circles, gently pressing them in a bit. Scatter almonds on top. Dust with brown sugar and cinnamon. Dot with remaining butter. Place in the oven and bake about 1 hour, until a cake tester comes out clean, the top has browned and feels fairly firm to the touch.
  • Allow to cool in the pan until just warm. Remove sides of pan and serve with whipped cream or ice cream. If cake has cooled completely it can be warmed before serving.

SWEDISH APPLE CAKE (ÄPPELKAKA)

Swedish Apple Cake (Äppelkaka) image

An easy and moist cake baked with a hint of cardamom and topped with caramelized apples. The perfect fall fika treat!

Provided by Kristi

Categories     Fika

Time 1h10m

Number Of Ingredients 14

3 medium granny smith apples (peeled, cored and cut into ½ inch thick wedges (about 1 pound))
2 tablespoons unsalted butter
3 tablespoons packed light brown sugar
1 teaspoon cinnamon
1 cup all-purpose flour
1 teaspoon baking powder
½ teaspoon fine salt
½ teaspoon ground cardamom
¾ cup granulated sugar
¼ cup packed light brown sugar
2 large eggs
6 tablespoons unsalted butter (melted and cooled)
¼ cup sour cream
1 teaspoon vanilla

Steps:

  • Preheat the oven to 350 degrees. Grease and flour a 9 inch springform pan. Make the Apple Topping: Heat butter in a 12 inch nonstick skillet over medium heat. Add apples and sauté until they are lightly caramelized, about 5-8 minutes. Add brown sugar and cinnamon and continue to cook, stirring constantly, until sugar dissolves and apples are evenly coated, about 1 more minute. Remove apples from the heat and set aside.
  • Make the cake: Whisk flour, baking powder, salt and cardamom together in a medium bowl and set aside. Whisk sugars and eggs together in a large bowl until fully combined. Slowly add melted butter to sugar and egg mixture and continue whisking until uniform in texture. Add sour cream and vanilla and whisk until fully combined. Add flour mixture and whisk until batter just comes together.
  • Scrape batter into prepared pan and even out the top with a small offset spatula. Arrange apples over the top of the batter in two concentric circles. The apples should just touch each other but not overlap. Reserve the butter and sugar mixture that remains in the skillet. Transfer the cake to the oven and bake until golden brown and a toothpick inserted into the center of the cake comes out clean or with just a few moist crumbs attached, about 40-50 minutes.
  • Add a couple of teaspoons of water to the skillet along with the reserved butter and sugar mixture leftover from making the apple topping. Cook over medium heat until warm and syrupy in texture, about 1-2 minutes. Brush syrup over the top of the cake, particularly the apples. Cool cake for at least 20 minutes on a wire rack and serve.

What is Appletorte?

Appletorte is a traditional Scandinavian dessert consisting of a sweet apple filling baked between two layers of pastry dough. The pastry dough typically includes butter, flour, and sugar, while the apple filling usually contains grated apples, sugar, cinnamon, and a touch of lemon juice for tartness. The name "Appletorte" comes from the German words "Apfel" which means "apple" and "Torte" which means "cake".
Origins of Appletorte
Appletorte has its roots in German cuisine, but the dish became popular in Scandinavia during the 19th century when many Germans migrated to the region. The dessert eventually became a staple of Scandinavian cuisine and is now commonly found in bakeries and restaurants throughout the region.
Regional Variations of Appletorte
Although Appletorte is a popular dessert throughout Scandinavia, there are some regional variations in the recipe. For example, in Norway, the pastry is made with a mix of wheat flour and oats, while in Sweden, a sprinkle of almond flakes is often added to the top of the cake to give it a little extra crunch. Finnish Appletorte usually has a thicker filling and is baked in a deeper dish, while Danish Appletorte is often served with a dollop of whipped cream or vanilla ice cream.
Popular Types of Appletorte
There are many different variations of Appletorte, each with their own unique twist. Here are some of the most popular types of Appletorte: - Classic Appletorte - This is the most common type of Appletorte, consisting of two layers of pastry dough with a sweet apple filling in between. - Caramel Apple Torte - This variation of Appletorte includes a drizzle of caramel sauce over the top of the cake, adding an extra layer of sweetness. - Cream Cheese Apple Torte - This version of Appletorte includes a layer of sweet cream cheese filling in between the layers of pastry dough and apple filling, creating a richer and creamier version of the classic dessert. - Apple Streusel Torte - This variation of Appletorte includes a crunchy streusel topping made with flour, butter, and sugar. The streusel adds a delicious crunch to the cake and balances out the sweetness of the apple filling.
Serving Appletorte
Appletorte is typically served as a dessert, although it can also be enjoyed as a snack or breakfast pastry. The cake can be enjoyed warm or cold, depending on personal preference. Some people like to serve Appletorte with a dollop of whipped cream or a scoop of vanilla ice cream to add an extra layer of sweetness.
Conclusion
Appletorte is a delicious and classic Scandinavian dessert that has been enjoyed for generations. Although the recipe has variations depending on the region, the core ingredients and preparation are similar. Whether served warm or cold, with or without cream, Appletorte is sure to satisfy any sweet tooth.

Appletorte is a traditional Scandinavian apple cake that has been enjoyed for many generations. This sweet and savory dessert is perfect for any occasion, whether it's a special celebration or a simple family dinner. The recipe generally includes a crust, a layer of sliced apples, and either a crumbly or creamy topping. While there are many variations of this classic dessert, there are a few tips and tricks that can make your appletorte recipe stand out from the crowd.

Tip 1: Use the Right Apples

The type of apples you use in your appletorte recipe can make a big difference in the final product. Choose apples that are firm and slightly tart, as they will hold up well in the oven and provide a nice balance to the sweetness of the cake. Golden Delicious, Honeycrisp, Granny Smith or Braeburn are all good options to use as they will compliment the other ingredients rather than overpower them.

Tip 2: Spice it Up

Adding a touch of spice to your appletorte recipe can take it from good to great. Cinnamon, nutmeg, cardamom, and ginger are popular choices that can bring a warmth and depth of flavor to the cake. Be sure to balance the quantity of these spices; you want them to complement the other flavors in the recipe and not dominate. As a rule of thumb, use no more than a teaspoon of each spice for a typical appletorte recipe.

Tip 3: Play with the Toppings

The topping is a defining feature of appletorte, so consider experimenting with different textures and flavors. For example, a streusel topping of flour, sugar and butter can add a crispy, crumbly texture that complements the softness of the apples. Alternatively, a whipped cream topping can provide a lighter, creamier finish that contrasts nicely with the sweet fruit. You can also add nuts, raisins or other dried fruits to the topping which can make for a delightful addition to the recipe.

Tip 4: Bake it Right

The way you bake your appletorte can make or break the outcome. First, be sure to grease the baking dish generously, so that the cake doesn't stick to the pan. Also, it is important to bake the appletorte at the right temperature. Set the oven at 350°F (180°C) and bake the cake for approximately 45-50 minutes until it is golden brown on top and the apples are tender. However, baking times may vary depending on the oven so ensure you check it from time to time for progress.

Tip 5: Enhance with Additional Ingredients

While keeping the essence of appletorte intact, There are several additional ingredients that you can experiment with to produce a delicious cake such as using ginger snap or digestive biscuit crumbs for the base instead of cake crumbs; Also, adding brown sugar or maple syrup for a caramelized sweetness or mixing both bread crumbs and almond flour together with butter for the base which yields for extra flavor and texture.

Conclusion

Appletorte is a delightful dessert that is perfect for any occasion. The recipe is fairly straightforward, but there are a few tips and tricks you can use to make it truly exceptional. By using the right apples, adding a touch of spice, experimenting with toppings, baking it properly, and enhancing it with additional ingredients the appletorte recipe will yield a fantastic outcome that can impress both, you and your guests.
