BANANA NUT BREAD TORTE WITH CREAM CHEESE ICING image

2 cups butter
2 cups sugar
4 eggs
2 teaspoons vanilla extract
3 cups flour
1 teaspoon salt
2 teaspoons baking soda
4-5 bananas, skin removed
1 1/2 cups sour cream
1 cup walnuts, chopped for cake
3 cups walnuts, toasted and chopped
Icing
3 (8 ounce) packages cream cheese, softened
2 teaspoons vanilla
3 cups powdered sugar

Steps:

  • Preheat oven to 350 degrees. Butter and flour a 10" cake pan. In a mixer bowl cream butter and sugar. Add eggs and vanilla. Slowly add flour, salt and baking soda until combined. Mix in bananas, sour cream and nuts. The mixer with break apart the bananas. Pour batter into cake pan and bake for 60-70 minutes or until inserted knife is removed clean. Cool slightly before removing from pan. When cool remove to wire rack to cool completely. To prepare icing. In a large mixing bowl with paddle attachment beat cream cheese until smooth; add vanilla. Slowly add powdered sugar one cup at a time to prevent fly away sugar. Mix on high approximately 4 minutes until icing is light and fluffy. Slice cooled cake into three equal portions horizontally. Place bottom layer on cake plate, spread layer with 1 cup of icing. Repeat with second and third layer. Finish icing the outside of your cake. Decorate the border with shells or attractive pattern. Press toasted chopped walnuts around the sides to cover. Refrigerate to set about 30 minutes before serving.
