3 ½ cups unbleached all-purpose flour
3 tablespoons ground cinnamon
1 ½ tablespoons ground nutmeg
2 teaspoons ground cloves
1 teaspoon ground ginger
1 teaspoon baking soda
1 teaspoon salt
½ teaspoon baking powder
2 cups dark brown sugar
1 cup white sugar
1 cup unsweetened applesauce
4 eggs, lightly beaten
1 (15 ounce) can solid-pack pumpkin
½ cup water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 2 loaf pans with cooking spray.
  • Mix flour, cinnamon, nutmeg, cloves, ginger, baking soda, salt, and baking powder together in a large bowl.
  • Combine brown sugar, white sugar, applesauce, and eggs in a large bowl. Add pumpkin and mix well. Add flour mixture alternately with water, mixing well between additions. Divide between the prepared loaf pans.

1/2 cup sweetened applesauce (70° to 80°)
2 tablespoons brown sugar
1 tablespoon canola oil
1-1/2 teaspoons apple pie spice
3/4 teaspoon salt
3 cups bread flour
1/3 cup quick-cooking oats
2 tablespoons nonfat dry milk powder
2-1/4 teaspoons active dry yeast

Steps:

  • In bread machine pan, place all ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available., Check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed. Bake according to bread machine directions.

1 egg
1 cup applesauce
4 tablespoons butter or 4 tablespoons margarine, melted
1/2 cup dark brown sugar, firmly packed
1/4 cup granulated sugar
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon grated nutmeg
1/2 cup currants or 1/2 cup raisins
1/2 cup pecans, chopped

Steps:

  • Preheat oven to 350°F Line the bottom and sides of a 9"x5" loaf pan with waxed paper and grease.
  • Break the egg into a bowl and beat lightly. Stir in the apple sauce, butter or margarine, brown sugar and granulated sugar.
  • In another bowl, sift together the flour, baking powder, baking soda, salt, cinnamon and nutmeg. Fold the dry ingredients into the applesauce mixture in three batches.
  • Stir in the currants or raisins and chopped pecans.
