1 teaspoon baking powder
1/4 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1/4 teaspoon salt
8 tablespoons unsalted butter
1 cup packed light brown sugar
2 large eggs
1/2 cup unsweetened applesauce
1 teaspoon pure vanilla extract
1 tablespoon brandy (optional) or 1 tablespoon dark rum (optional)
1 baking apple, peeled, cored, and finely diced (Rome or Cortland)
1/2 cup raisins (dark or golden)
2 1/2 tablespoons heavy cream
1/2 cup packed light brown sugar
2 1/2 tablespoons unsalted butter
1 teaspoon light corn syrup
1/2 teaspoon pure vanilla extract

Steps:

  • Position oven rack in center; preheat oven to 350°; butter a 13 x 9 inch baking pan, line bottom with parchment paper, butter the paper and dust the inside of the pan with flour; tap out the excess flour and put the pan on a baking sheet.
  • Whisk the flour, baking powder, baking soda, spices, and salt together.
  • In a saucepan, melt the butter over low heat; add in the brown sugar and stir with a whisk until it is melted and the mixture is smooth, about 1 minute; remove pan from the heat.
  • Still working in the saucepan, whisk in the eggs one at a time, mixing until they are blended.
  • Add in the applesauce, vanilla, and applejack; whisk until the ingredients are incorporated and the mixture is once again smooth.

I ran across this recipe a few weeks ago in one of my cooking magazines and wanted to post them. You can either use the chunky applesauce or the regular applesauce in this recipe. It tastes great with both. PS. I made these this weekend for my son who just loves these, I made these with Splenda.

2 cups all-purpose flour
1 teaspoon baking soda
3/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 cup butter or 1/2 cup margarine, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups applesauce
1 cup chopped pecans or 1 cup walnuts
1 cup raisins
powdered sugar, sifted

Steps:

  • In a bowl or other container, mix flour with baking soda, cinnamon, and nutmeg.
  • In a large mixing bowl, cream butter with sugar until light and fluffy.
  • Add eggs and vanilla; beat well.
  • Stir in flour mixture.
  • Add applesauce, pecans and raisins and stir until blended.
  • Pour into a greased and floured 15x10x1-inch jelly roll pan.
  • Bake in preheated 350° oven 25 minutes, or until done.

1 cup firmly packed brown sugar
1 cup margarine, softened
2 cups sweetened applesauce
1/2 cup low-fat buttermilk
4 eggs
4 cups unbleached all-purpose flour
2 cups oats, quick-cooking
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 cup semisweet chocolate morsel
1/2 cup chopped walnuts
1/2 cup raisins (optional)
glaze
2 1/4 cups confectioners' sugar
1/4 cup reduced-fat milk (2%)
2 tablespoons margarine, softened (2 tbsp = 1/4 stick)
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350°F Spray 15x10x1-inch baking pan with baking spray.
