I had some homemade applesauce to use up so I created this recipe on the spot. Honestly, I didn't bother to measure the ingredients as I was putting this together, so feel free to play with the amounts.

1 cup applesauce (homemade is best!)
1/2 cup plain yogurt (vanilla flavored is good!)
1/2 cup orange juice, freshly squeezed
1/2 banana, cut into chunks
5 -6 ice cubes, crushed

Steps:

  • Place all ingredients in blender and blend until smooth, about 45 seconds to 1 minute.
  • The smoothie probably won't need any sweetening, but if it does, add a little bit of honey or sugar to taste.
  • For a less thick version, add more yogurt or juice.

This apple smoothie recipe is an excellent healthy breakfast idea or snack. It's made with frozen applesauce, almond milk, ground flaxseed, and your favorite nut butter.

2 4-oz. apple sauce cups, frozen*
1 cup unsweetened almond milk (or any kind of milk)
2 tablespoons rolled oats
2 tablespoons nut butter (any kind)
1 teaspoon ground flax seed
1 teaspoon maple syrup
1/4 teaspoon ground cinnamon

Steps:

  • First, freeze 2 4-oz. applesauce cups for at least 2 hours or overnight.
  • Once frozen, run the applesauce cups under hot water for a few seconds to remove from the plastic. Then place into a high-speed blender.
  • Add the rest of the ingredients and cover.
  • Blend on high for around a minute or until smooth.

We use only a little sugar, plus lemon juice, salt and cinnamon, providing a balanced flavor and the perfect amount of sweetness.

4 pounds assorted apples, such as Golden Delicious, Gala, Honeycrisp or McIntosh (about 8), peeled, cored and chopped
1/4 cup sugar
Kosher salt
1 tablespoon freshly squeezed lemon juice
1/4 teaspoon ground cinnamon

Steps:

  • Combine the apples, sugar, 1 cup water and 1/2 teaspoon salt in a large pot. Bring to a simmer over medium-high heat, stirring occasionally. Reduce the heat to medium-low. Cover with a tight-fitting lid and cook until the apples are very soft, 18 to 20 minutes.
  • Stir in the lemon juice and cinnamon. Let cool for 5 minutes or so, then transfer the apple mixture to a blender, filling no more than halfway. Remove the center cap from the lid and place it on the blender. Cover the lid with a folded kitchen towel to catch splatters and pulse until smooth. Alternatively, puree in the pan with an immersion blender.
  • Transfer the applesauce to a bowl and refrigerate until cool, about 1 hour. Store leftover applesauce in an airtight container in the refrigerator for up to 5 days.

McIntosh apples make a traditional applesauce, but using a mix of varieties gives dimension. You can stir in up to three tablespoons dark-brown sugar, if you like.

4 pounds apples, such as McIntosh, Gala, and Braeburn
1/4 cup fresh lemon juice (from 2 lemons)
3 tablespoons dark-brown sugar (optional)

Steps:

  • Peel, core, and slice apples.
  • In a large pot, bring apples, lemon juice, and 1 1/2 cups water to a boil over high. Reduce heat and simmer until apples are very soft and falling apart, 25 to 30 minutes.
  • Mash with a potato masher or pulse in a food processor until smooth with small chunks remaining. (Add sugar, if using.)
  • Let cool, then transfer applesauce to airtight containers.
