APPLESAUCE & RAISIN CAKE

Applesauce & Raisin Cake image

Found in the All*You Magazine from March 2009. A nice moist cake with the fun of a pretty glaze. I've made this with both raisins and dried cranberries and they both work really well. Feel free to use what suits your tastebuds the best. It is a great cake to have when you expect company as it is light and goes great with a mug of coffee.

Time 1h

Yield 1 cake, 8 serving(s)

Number Of Ingredients 14

8 tablespoons unsalted butter, room temperature
1 cup sugar
1 large egg, room temperature
1/2 teaspoon baking soda
1 cup unsweetened applesauce (thicker is better)
2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon clove
1/4 teaspoon nutmeg
1/2 cup raisins (or dried cranberries)
6 tablespoons fresh lemon juice
2 cups confectioners' sugar

Steps:

  • Preheat oven to 350F and butter a 9x5" loaf pan and line bottom with parchment paper and butter paper. (This makes removing it from the pan so much easier).
  • Beat butter and sugar with an electric mixer until light and fluffy. Beat in egg.
  • Stir baking soda into applesauce in a separate bowl.
  • Mix dry ingredients together.
  • Add dry ingredients in to butter mixture alternating with the applesauce. Mix just until blended well - don't overmix or the cake will be dense.
  • Gently stir in raisins.
  • Pour batter into pan and bake until top springs back when pressed - about 50 minutes (check at 45 minutes).
  • Cool in pan on a wire rack for 10 minutes then turn out onto the rack to cool completely.
  • Make glaze by mixing the lemon juice with the confectioner's sugar until smooth. Spoon glaze over the cooled cake and let set up before serving.

Applesauce raisin bran coffee cake is a delicious and easy-to-make dish that is perfect for breakfast, brunch, or even as a dessert. It is a great way to use leftover bran cereal, and the addition of raisins and applesauce makes it both moist and flavorful. In this article, we will be sharing valuable tips on how to make the best applesauce raisin bran coffee cake.

Tip #1: Use fresh ingredients

When making applesauce raisin bran coffee cake, it is important to use fresh ingredients. This will not only ensure that your cake is tasty but also help it rise properly. Using stale cereal, expired baking powder or baking soda, and old raisins can adversely affect the taste and texture of your coffee cake.
How to ensure freshness of ingredients:
  • Check the expiration date of baking powder and baking soda before using them.
  • Store bran cereal and raisins in airtight containers to prevent them from becoming stale.
  • Use fresh eggs in your recipe. You can tell if an egg is fresh by placing it in a bowl of water. A fresh egg will sink while an old egg will float.

Tip #2: Mix the ingredients properly

Mixing the ingredients properly is key to making a good applesauce raisin bran coffee cake. Overmixing can lead to a tough and dry cake, while undermixing can result in a cake that doesn't rise properly. It is important to mix the ingredients just until they are combined and no streaks of flour remain.
How to mix the ingredients properly:
  • Use a stand mixer or hand mixer to mix the ingredients. Alternatively, you can mix the ingredients by hand using a whisk or a spatula.
  • Start by mixing the wet ingredients together in one bowl.
  • In a separate bowl, mix the dry ingredients together.
  • Add the dry ingredients to the wet ingredients slowly, and mix just until they are combined. Do not overmix.

Tip #3: Grease the pan properly

Greasing the pan properly is essential to prevent your applesauce raisin bran coffee cake from sticking to the pan. A well-greased pan will also make it easier to remove the cake from the pan once it is done baking.
How to grease the pan properly:
  • Use cooking spray or vegetable oil to grease the pan evenly, making sure to cover all the sides and corners of the pan.
  • If you are using a non-stick pan, you can skip greasing the pan. However, it is still recommended to lightly coat the pan with cooking spray to ensure easy release of the cake.
  • You can also line the bottom of the pan with parchment paper to prevent the cake from sticking to the pan.

Tip #4: Bake the cake at the right temperature

Baking your applesauce raisin bran coffee cake at the right temperature is important to ensure that it cooks evenly and doesn't dry out. A too high temperature can cause the cake to burn on the outside while remaining raw on the inside, while a too low temperature can result in a cake that is dense and heavy.
How to bake the cake at the right temperature:
  • Preheat your oven to the temperature specified in the recipe. Usually, applesauce raisin bran coffee cakes are baked at 350°F (175°C).
  • Use an oven thermometer to make sure that your oven is calibrated correctly and is really at the temperature you set it to.
  • Do not open the oven door frequently during baking as this can cause the temperature to fluctuate and affect the cooking time.

Tip #5: Cool the cake properly

Cooling the cake properly is crucial to prevent it from becoming soggy and to ensure that it holds its shape. A hot cake is also more likely to stick to the pan when you try to remove it. It is recommended that you let your applesauce raisin bran coffee cake cool for at least 10 minutes before removing it from the pan.
How to cool the cake properly:
  • Remove the cake from the oven and let it cool in the pan for 10-15 minutes before removing it from the pan.
  • Use a knife to loosen the sides of the cake from the pan. Place a wire rack over the top of the cake and invert the cake onto the rack.
  • Let the cake cool completely on the wire rack before serving.

Conclusion

Making a perfect applesauce raisin bran coffee cake is not rocket science. However, following these valuable tips can make a big difference in the quality of your cake. Always use fresh ingredients, mix the ingredients properly, grease the pan, bake the cake at the right temperature, and cool the cake properly. With these tips in mind, you are well on your way to making a delicious and moist cake that your family and friends will love.
