An applesauce spice bundt cake with unbeatable flavor and texture!

1/2 cup butter ((room temperature))
1 cup sugar
1 large egg
1 cup raisins
1 cup black walnuts ((or English walnuts))
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon cloves
1/2 teaspoon nutmeg
1 teaspoon cinnamon
1 1/2 cups unsweetened applesauce

Steps:

  • Grease a 10 cup bundt cake pan generously with shortening, then dust with flour (or use our perfect cake release). Preheat the oven to 350º Fahrenheit.
  • In the bowl of a stand mixer (or using a hand mixer), cream the butter and sugar until well blended and smooth, scraping the sides of the bowl as needed.
  • Add the egg. Mix until blended.
  • Mix in the raisins and walnuts.
  • In a small bowl, whisk together the flour, soda, salt, cloves , nutmeg and cinnamon.
  • Add the applesauce and flour to the butter mixture alternately, mixing well between each addition. Batter will be thick.
  • Add the batter to the pan by large spoonfuls and smooth out evenly.
  • Bake for 45 minutes or until the top of the cake springs back when you touch it. The exact time will depend on the shape of your bundt cake pan. If it makes a thicker cake, it could take up to an hour to bake. Ours took 45 minutes in the Autumn Wreath Bundt Pan.
  • Allow the cake to cool in the pan for 5 minutes, then turn out on a cake plate to cool completely.
  • Dust with powdered sugar if desired.

1/2 cup shortening
2 tablespoons molasses
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1/2 teaspoon salt
1-1/2 cups applesauce
1 cup raisins

Steps:

  • In a bowl, cream the sugar and shortening. Beat in molasses until blended; set aside. Sift together flour, baking soda, cinnamon, cloves and salt; add to creamed mixture alternately with applesauce, beating well after each addition. Stir in raisins., Pour into a greased and floured 10-in. tube pan. Bake at 350° until a toothpick comes out clean, about 45 minutes. Cake will not rise to top of pan. After 10 minutes, remove cake from pan and cool on a wire rack.

3 c flour
2 tsp baking soda
1 tsp cinnamon
1/2 tsp allspice, ground
2 stick butter, softened
1 c brown sugar
1 c sugar
1 egg
2 c applesauce
1 c chopped nuts (i used pecans, toasted if desired)
1 c raisins
RUM GLAZE
2 Tbsp butter
1 c powdered sugar
1/2 tsp rum flavoring
3-4 tsp milk

Steps:

  • 1. Heat oven to 350. Grease and flour (or spray) bundt pan generously.
  • 2. Combine flour, soda, cinnamon, and allspice. Set aside.
  • 3. In large bowl, mix together butter, brown sugar and sugar until creamy. Beat in egg. Add applesauce and mix until just combined. Add flour mixture one cup at a time until fully incorporated. Stir in raisins and nuts by hand.
  • 4. Spoon into bundt pan. Cook 60-70 minutes until wooden skewer inserted comes out clean. Cool in pan for about 10 minutes before removing.
  • 5. To make glaze, melt butter in microwave. Add all remaining ingredients, mixing well until smooth. Let cool slightly before spooning over cooled cake.

This is an old recipe that my grandma got off of a VB apple sauce can. She always iced it with plain boiled icing. If you can't find pastry flour, you can mix you own by combining cake flour and all-purpose flour in a ratio somewhere between two parts cake flour to one part all-purpose and one part cake flour to one part all-purpose.

1/2 cup shortening
1 cup sugar
2 eggs
1 cup raisins
1/3 cup walnuts
2 cups pastry flour

Steps:

  • First sift flour, spices and soda.
