Nonstick vegetable oil spray

2 teaspoons baking powder
1/2 teaspoon baking soda

1/2 cup unsweetened applesauce
1/3 cup low-fat buttermilk
2 tablespoons vegetable oil
1 large egg yolk

1/2 teaspoon (packed) grated lemon peel
2 large egg whites

Steps:
