APPLESAUCE CARROT CAKE

Applesauce Carrot Cake image

I got this recipe from the newspaper, but the person who sent it in said it was from a Seneca applesauce jar. It's very good, and the applesauce in the icing makes a tasty variation.

VEGAN APPLESAUCE CARROT CAKE

Vegan Applesauce Carrot Cake image

This recipe is the best Vegan Carrot Cake recipe I've ever tasted. Its delicious and unique in that you pre-cook a few of the ingredients which I think accounts for the moistness of this cake. I've changed a few things to suit my own tastes. This cake is quite deep and very heavy. I like to frost it with a Vegan Cream Cheese Icing. The original recipe was found on recipe.com

Applesauce Carrot Cake Recipes: Overview

Carrot cake is a classic dessert that is loved by many. It is typically made with grated carrots, nuts, and topped with cream cheese frosting. However, there are many variations of this recipe that can be made to cater to different dietary requirements or just add some fun flavors. One of these variations is the applesauce carrot cake, which replaces some of the oil and sugar with applesauce.

Applesauce Carrot Cake: Benefits

Using applesauce in the recipe instead of oil and sugar has a number of benefits. Applesauce is a healthier alternative because it contains less fat and calories than oil, and less sugar too. Applesauce adds moisture to the cake, and it also makes the cake a bit denser and chewier. Applesauce can also add a hint of sweetness and apple flavor to the cake, giving it a unique twist.
Applesauce Carrot Cake: Ingredients
To make an applesauce carrot cake, you will need the following ingredients:
  • 3 cups grated carrots (about 4-5 medium sized carrots)
  • 1 cup unsweetened applesauce
  • 1 cup granulated sugar
  • 4 eggs
  • 1 cup vegetable oil
  • 2 cups all-purpose flour
  • 2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/4 tsp nutmeg
Applesauce Carrot Cake: Directions
To make an applesauce carrot cake, follow these steps:
  1. Preheat the oven to 350°F (180°C).
  2. In a large mixing bowl, whisk together the eggs, applesauce, vegetable oil, and sugar until well combined.
  3. Add in the grated carrots and mix until evenly distributed.
  4. In a separate mixing bowl, sift together the flour, baking soda, cinnamon, salt, and nutmeg.
  5. Gradually fold the dry ingredients into the wet ingredients, stirring until well combined.
  6. Pour the batter into a greased 9x13 inch cake pan, and smooth the top with a spatula.
  7. Bake the cake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool for at least 20 minutes before slicing and serving.
Optional: Applesauce Carrot Cake Frosting
To complement the flavors of the cake, you can also add a cream cheese frosting:
  1. In a mixing bowl, beat 8 oz. cream cheese and 1/4 cup unsalted butter until smooth.
  2. Add in 2 cups confectioner's sugar, 1 tsp vanilla extract, and 1-2 tbsp milk, and beat until smooth and creamy.
  3. Spread the frosting evenly over the cooled cake and decorate with chopped walnuts or pecans if desired.

When it comes to desserts, carrot cake is a classic favorite. However, have you ever tried making a carrot cake with applesauce? Applesauce adds an extra layer of flavor and moisture to the cake. Here are some valuable tips to help you make a delicious applesauce carrot cake.

Choose the Right Applesauce

The type of applesauce you use can make a big difference in the flavor and texture of your cake. Look for unsweetened applesauce, as it will give you more control over the sweetness of the cake. If you prefer a sweeter cake, you can always add in some sugar or honey. Additionally, choose a smooth applesauce to ensure a smooth texture in the cake.

Grate the Carrots Properly

Grating the carrots properly can make a big difference in the overall texture of the cake. Avoid using a food processor to grate the carrots, as it can create too fine of a texture. Instead, use a box grater with large holes to create a coarser texture. This will give your cake a bit of texture and crunch.

Choose the Right Flour

All-purpose flour is the most commonly used type of flour in cakes. However, for this recipe, it’s recommended to use cake flour. Cake flour is finer and softer than all-purpose flour, giving your cake a tender and light texture.

Don’t Overmix the Batter

Overmixing the batter can lead to a tough and dense cake. Mix the dry ingredients together in one bowl and the wet ingredients in another. Then, gently fold the dry mixture into the wet mixture until they are just combined. Be careful not to overmix!

Include the Right Spices

The spices used in the cake can make a big difference in the flavor. Cinnamon and nutmeg are classic spices that pair well with carrot cake. You can also add a bit of ginger for an extra kick. Be sure to use fresh spices for the best flavor.

Incorporate Additional Mix-Ins

If you want to add some extra texture and flavor to your cake, consider adding in some additional mix-ins. Chopped walnuts or pecans are a classic addition to carrot cake. You can also add in shredded coconut or raisins for extra sweetness.

Choose the Right Frosting

The frosting is just as important as the cake itself. Cream cheese frosting is a classic choice for carrot cake. It’s creamy and tangy, balancing out the sweetness of the cake. However, if you’re looking for a healthier option, consider using a whipped cream frosting or a Greek yogurt frosting.

Let the Cake Cool Completely Before Frosting

It’s important to let the cake cool completely before frosting it. If you frost the cake while it’s still warm, the frosting will melt and slide off. Once the cake has cooled, use a spatula to spread the frosting evenly over the top and sides of the cake.

Store the Cake Properly

To keep your cake fresh, store it in an airtight container in the fridge. This will prevent it from drying out and will keep the frosting from melting. The cake will keep for up to a week in the fridge.

Conclusion

Making an applesauce carrot cake is a delicious twist on a classic dessert. By following these valuable tips, you can ensure that your cake turns out perfectly every time. Try making this recipe for your next gathering and impress your guests with your baking skills!
