1 cup buttermilk
⅔ cup brown sugar
⅓ cup applesauce (such as Mott's®)
1 egg
1 teaspoon vanilla extract
1 cup self-rising flour
½ cup chopped walnuts
½ cup sweetened dried cranberries (such as Craisins®)

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease 12 muffin cups or line with paper liners.
  • Mix bran cereal and buttermilk together in a bowl; let sit for 10 minutes.
  • Beat brown sugar, applesauce, egg, and vanilla extract together in a bowl until smooth; stir into bran cereal mixture. Stir flour into bran cereal mixture until batter is well mixed; fold in walnuts and dried cranberries. Spoon batter into the prepared muffin cups.

3/4 cup milk
1/2 cup unsweetened applesauce
1/2 cup dark molasses
1/3 cup vegetable oil
2 large eggs
1 1/2 cups unbleached all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup raisins
1 cup chopped peeled apple

Steps:

  • In a bowl, add the bran cereal, milk, applesauce, molasses, oil, and eggs; whisk together to combine.
  • Let stand for 5 minutes.
  • In a large bowl, add the flour, baking powder, baking soda, and salt; stir to combine.
  • Add in the raisins and apple; toss to coat.
  • Add the bran mixture to the flour mixture; fold in until dry ingredients are just moistened; do not overmix.

1 cup low-fat milk
1/2 cup unsweetened applesauce
1 egg
2/3 cup brown sugar

Steps:

½ cup applesauce
¼ cup canola oil
1 egg

I like it because it is a healthy muffin. I substitute Egg Beaters for the eggs. Instead of 1 cup of oil I use 1/2 cup oil and 1/2 cup applesauce, but that is up to you. I like to use frozen blueberries as then the colour doesn't turn the flour that yucky blue colour. You will have to test for doneness as it takes longer.

400 g any flavour yogurt (about 1-2/3 cups)
2 teaspoons baking soda
3/4 cup brown sugar (increase to 1 cup if you prefer sweeter muffins)

2 cups natural bran (not cereal, the real wheat bran)
2 teaspoons vanilla
2 cups flour (can be white or whole wheat)

1 cup blueberries (I always use about 2 cups, I like lots of blueberries in my muffins)

Steps:

  • Preheat oven 350°.
  • Line 12 muffin cups with paper liners or spray with Pam.
  • Measure yogurt into medium bowl and mix in baking soda, it will foam and it is supposed too; set aside.
  • In a large bowl beat together sugar, eggs and oil.

  • In a separate bowl mix together flour and baking powder.
  • Gradually add the flour and yogurt mixtures alternately to the sugar mixture.
  • Fold in blueberries.
  • Bake 20-35 minutes.
