APPLES WITH HONEY AND CRUSHED WALNUTS
Tradition is a beautiful thing, unless it requires you to make something you don't enjoy making or eating. For me, that's charoset. Classically, it's an apple-walnut mixture (occasionally including a touch of cinnamon or dried fruit, or a combination) that ranges from chunky-relish to chunky-paste, and it's never been my favorite thing on the table. I've always wanted it tangier, crunchier and, well, I wanted a salad. This is that salad. It's meant to be more acidic than sweet, but adjust with vinegar and honey as needed to suit your preference. A note: Nearly everyone who ate this salad said it was their favorite part of the whole meal, which bruised my matzo ball ego, but I thought you should know.

Steps:
- Heat oven to 325 degrees. Spread walnuts in an even layer on a rimmed baking sheet. Toast walnuts until golden brown and fragrant, 8 to 10 minutes. (You can also do this in a toaster oven.) Let cool. Using your hands or a knife if you like, crush or finely chop walnuts. Set aside.
- Thinly slice apples (with a mandoline or a sharp knife) any way you please. (Rounds are excellent if you don't mind eating the edible core.) Scatter the slices onto a large serving platter or bowl. Drizzle 2 tablespoons apple cider vinegar over apples, and season with salt and pepper; give them a little toss and drizzle with 2 tablespoons honey. Taste an apple slice and adjust seasoning with more vinegar or honey, as needed. Sprinkle with walnuts, and finish with a drizzle of olive oil, flaky salt and pepper.
APPLE-WALNUT CRISP
I used McIntosh apples for this but Granny Smith will do also, though you might have to bake the crisp slightly longer if using Granny Smith apples. This is the best apple crisp!

APPLE AND WALNUT HAROSETH
This very classic Ashkenazi haroseth, which is a ceremonial part of the Passover Seder, is made from diced apple, toasted walnuts, a touch of cinnamon and a shower of sweet Passover wine. It's meant to represent the mortar used by the Israelites when they were slaves in Egypt. The sweeter the apples you use, the less honey you'll need to add at the end. But tart apples are nice here, too, as long as you balance their acidity. If you can't get Manischewitz or another sweet Passover wine, ruby port is a fine substitute. You can make this haroseth one day ahead and store it in the refrigerator; just mix it well before serving to reincorporate any liquid that might have seeped out of the mix.

DEEP-DISH HONEY APPLE GALETTE
Like a pie but with only one crust, like a galette but thicker, this deep-dish number is the best of all worlds. The buttery crust (made by hand for flakiest results) dramatically envelopes apples that are sweetened mostly with honey. A splash of vinegar is added for acidity, and, of course, there's a little cinnamon (if you like). Truthfully, any apple is good here, but the tart baking varieties tend to hold their shape and give a bit more structure to the finished dish. Bake in a 9-inch springform pan for tall, festive sides, or a deep-dish 9-inch pie plate for a more rustic feel.

Steps:
- Make the crust: Combine flour, sugar and kosher salt in a large bowl, and use your hands to mix well.
- Add the butter to the bowl, and use your palms and fingertips to smash the pieces into the flour until you've got large, flat butter pieces that are evenly distributed among the flour. Pop the bowl into the freezer for 5 or so minutes.
- Combine vinegar and 1/3 cup water, and drizzle over the flour-butter mixture. Like you're running your hands through sand, deliberately yet delicately mix the water into the flour/butter mixture. Resist the urge to add more water until you see that it's absolutely necessary, and even then, use only an additional tablespoon or two.
- Turn the dough out onto a work surface, and use your palms to knead it lightly until the shaggy ball transforms into a slightly-less shaggy ball of dough. (It should still be relatively shaggy.) Pat the dough into a disc about 1 inch thick, rotating it to create a nice circle. Wrap in plastic or place in a resealable plastic bag and chill until firm, at least 2 hours.
- Heat the oven to 375 degrees. Remove dough from refrigerator, and let it soften slightly at room temperature, about 10 minutes or so.
- As dough rests, make the filling: Combine apples, honey, 1/2 cup sugar, the flour, the vinegar and the cinnamon in a large bowl. Toss the ingredients so every slice of apple is evenly coated.
- On a lightly floured work surface, roll the dough into a circle about 18 inches in diameter. Transfer dough to a lightly greased 9-inch springform pan, or a 9-inch deep-dish pie plate, letting it slump to meet the bottom of the pan and letting the overhang remain.
- Transfer the apple mixture and any juices that have accumulated to the crust. Drape the excess dough over the filling, covering the apples by about 1 1/2 to 2 inches. (Feel free to trim any dough that feels truly excessive.)
- Whisk the egg with a teaspoon of water and use it to brush the exposed crust. Sprinkle with sesame seeds, if using, the remaining 2 tablespoons of sugar and a little flaky salt.
- Place galette on a rimmed baking sheet (for easy cleanup should anything bubble over) and bake until the crust is deeply golden brown (about the color of a well-baked croissant), the apples are tender, and the juices are bubbling and thickened, 65 to 75 minutes.
- Remove galette from the oven and let cool completely (at least 2 hours) before slicing and eating, preferably with lots of ice cream.

One of the best parts of autumn is the abundance of fresh apples that become available. Apples are not just delicious on their own, they can also be used in a variety of recipes. One such recipe is apples with honey and crushed walnuts. This is a simple and tasty way to enjoy the flavor and crunch of crisp apples combined with the sweetness of honey and the nuttiness of walnuts.
The Ingredients
The key ingredients for this recipe are apples, honey, and walnuts. When choosing apples, it's best to go for a firm and crisp variety like Honeycrisp, Gala, or Fuji. These apples will hold their shape and texture when baked or cooked. The honey used in the recipe can be any kind of honey, but if possible, go for a high-quality honey that is locally sourced. This will provide a richer and more complex flavor. The walnuts should be crushed or chopped into small pieces to add a contrasting texture to the dish.
Optional ingredients
There are several optional ingredients that can be added to the recipe for added flavor and texture. These include cinnamon, nutmeg, vanilla extract, lemon juice, and raisins. Cinnamon and nutmeg can be added to the honey to create a spiced honey mixture that will infuse the apples with warm and fragrant flavors. Vanilla extract can be added to the honey for a sweet and aromatic taste. Lemon juice can be used to add a fresh and tangy twist to the dish. Raisins can be mixed in with the walnuts for a chewy and sweet addition.
The Preparation
The preparation for this recipe is very simple. First, preheat the oven to 375°F. Then, wash and core the apples. It's best to use an apple corer to remove the core and seeds, but if you don't have one, you can use a knife to carefully carve out the center of the apple. Place the apples in a baking dish or on a baking sheet.
Next, crush or chop the walnuts and mix them with honey in a bowl. If using any optional ingredients, add them to the honey mixture at this time. Spoon the honey mixture into the center of the apples, filling them as much as possible. You can also drizzle some of the mixture over the top of the apples.
Bake the apples in the preheated oven for approximately 20-25 minutes or until they are tender and golden brown. If you prefer a softer texture, you can cover the baking dish with foil and bake for an additional 10-15 minutes. Once the apples are cooked, remove them from the oven and allow them to cool for a few minutes before serving.
Serving Suggestions
These apples with honey and crushed walnuts can be enjoyed on their own as a sweet and satisfying dessert or snack. They can also be served as a side dish with roasted meats such as chicken or pork. For an even more indulgent treat, you can top the baked apples with a scoop of vanilla ice cream or whipped cream.
Additional serving suggestions
If you want to get creative, there are several ways to elevate this recipe. You can serve the baked apples with a drizzle of caramel sauce or maple syrup. You can also sprinkle some extra chopped walnuts over the top for added crunch. If you want to make this recipe even healthier, you can substitute the honey with a natural sweetener like agave nectar or maple syrup.
Conclusion
Apples with honey and crushed walnuts is a delicious and easy-to-make recipe that is perfect for fall. The combination of crisp apples, sweet honey, and crunchy walnuts creates a dish that is both healthy and indulgent. Whether served as a dessert, side dish, or snack, this recipe is sure to satisfy your sweet tooth.
