Time 2h

Yield 4 serving(s)

Number Of Ingredients 10

8 boneless skinless chicken breasts
1 (8 ounce) package monterey jack cheese (or larger)
1/2 cup butter, melted
1 cup Italian seasoned breadcrumbs
1 1/2 tablespoons grated parmesan cheese
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon fresh ground black pepper
1 small red bell pepper
1 small green bell pepper

Steps:

  • Cut some of the cheese into 8 slices, and reserve part of it for the cheese sauce.
  • Place 1 chicken breast between two sheets of wax paper. Working from the center to the edges pound with a meat mallet until flat and rectangular shaped. Repeat with remaining breasts. Wrap the flattened chicken breasts around cheese. Secure with wooden picks or uncooked spaghetti noodles.
  • Combine the bread crumbs, parmesan cheese, salt, cumin and pepper. Roll the secured chicken pieces in the melted butter and then in the bread crumb mixture. Place chicken breasts in a 13- by 9-inch baking dish, but don't crowd them.
  • Drizzle the remaining butter over all eight of the breasts. Refrigerate for 1 hour or freeze to bake later (baking time will be increased by about 5 to 10 minutes).
  • Bake in a preheated 400 degree oven for 25 to 30 minutes or until chicken is done.
  • Make a roux with butter and flour. Add about 1 cup milk. Bring to a simmer. Add cheese and lower the heat, stirring constantly so cheese does not burn. Add milk as needed to thin out the cheese sauce. Dice bell peppers.
  • When chicken is done, pour some cheese sauce over top and sprinkle with diced peppers.

SANTA FE CHICKEN SALAD (APPLEBEE'S)

Santa Fe Chicken Salad (Applebee's) image

Do not let the list of ingredients keep you from making this salad. Most of the ingredients are for the marinade and salsa which should be made the day before and refrigerated. The remaining ingredients are the salad and side items. It is super quick to throw together the next day and tastes awesome. The tequila-lime chicken is outstanding on its own and you may want to make extra Pico de Gallo to keep in the fridge. I have adapted this recipe from a former Applebee's employee. The recipe is scaled down for one serving, so adjust for more servings. Cooktime is marinade time.

1 ounce guacamole (ramekin at 3 o'clock)

SANTA FE STUFFED CHICKEN

The cooking method used here serves two purposes: Broiling the chicken allows it to brown, while baking it covered helps the chicken to retain it's moisture and juices. I got this from Cooking Club of America.

If you are a fan of this deliciously satisfying dish and want to try making it at home, you've come to the right place! In this article, we will share valuable tips on how to make the Applebee's Santa Fe Stuffed Chicken recipe at home using Goldmine recipes. Tip 1: Choose Fresh and High-Quality Ingredients The key to making a delicious and authentic Santa Fe Stuffed Chicken dish is to use high-quality ingredients. Start by choosing fresh, boneless, skinless chicken breasts that are of good quality. The stuffing mixture should also be made from fresh and flavorful ingredients like shredded cheeses, herbs, garlic, and spices. For the salsa, opt for fresh tomatoes, onions, peppers, and cilantro to get the burst of flavors. Use good quality salsa that is not too spicy, but well-balanced to complement the stuffed chicken. Tip 2: Prep Your Chicken Breasts Properly To prepare the chicken breasts for stuffing, you need to make a pocket in the center of each chicken breast. To do this, start by making a small incision horizontally into the thickest part of the chicken breast, about 2/3 the way in. Be sure not to make the incision too deep, so as not to cut through the chicken breast. Next, use a spoon or a good paring knife to carefully loosen the flesh from the sides, making sure not to pierce the chicken breast skin. Once the pocket is created, fill it with the stuffing mixture and pat it down with a spoon or a fork firmly. Tip 3: Perfectly Cook the Stuffed Chicken Once your chicken breasts are stuffed, the next step is to cook them perfectly. This step is critical as you do not want your chicken breasts to overcook and dry out. Instead, you want them to be tender, juicy, and cooked all the way through. The best way to ensure your chicken breasts come out perfectly is to use a meat thermometer to check the internal temperature of the chicken. The ideal temperature for cooked chicken is between 165-175°F. Tip 4: Season the Dish to Perfection Seasoning is another important aspect of making the perfect Santa Fe Stuffed Chicken dish. To get the authentic Applebee's taste, you'll want to use a blend of cumin, chili powder, garlic powder, and paprika. Season the stuffed chicken breasts generously before searing them in the pan, and be sure to add more seasoning to the diced tomatoes, onions, peppers, and cilantro that you will use as salsa on top of the chicken. Tip 5: Get Creative with the Sides The Santa Fe Stuffed Chicken is a hearty and filling main dish that pairs well with a range of different sides. You can opt for traditional sides like steamed vegetables or mashed potatoes, or you can get creative with some non-traditional choices like quinoa or brown rice. You can also add some black beans, corn, or avocado to the dish to make it more interesting. Conclusion: Making the Applebee's Santa Fe Stuffed Chicken recipe at home is an excellent way to enjoy this delicious and satisfying dish without having to leave your house. Remember to choose good quality ingredients, prep your chicken breasts carefully, cook them to perfection, season your dish, and get creative with your sides. With these tips, you will be able to replicate the Applebee's recipe and enjoy a satisfying meal with your family and friends.
