1 cup shredded unpeeled zucchini
1 cup shredded carrots
1 large apple, cored and shredded
1 cup nonfat plain yogurt
1 cup sucralose and brown sugar blend (such as Splenda® brown sugar blend)
2 eggs
½ cup unsweetened applesauce
½ cup skim milk
2 tablespoons canola oil
1 lemon, zest only
1 orange, zest only
2 cups all-purpose flour
1 ½ cups whole wheat flour
1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground allspice
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Coat 24 muffin cups with cooking spray.
  • Stir zucchini, carrots, and apple together in a large bowl. Mix in yogurt, sucralose and brown sugar blend, eggs, applesauce, skim milk, canola oil, lemon zest, and orange zest until thoroughly combined.
  • Whisk all-purpose flour, whole wheat flour, baking powder, baking soda, salt, cinnamon, nutmeg, and allspice in a separate bowl. Gently stir dry ingredients into wet ingredients until just combined. Fold walnuts into batter. Pour batter into prepared muffin cups.

These are moist, yummy muffins without all the fat and calories. I came up with this recipe when craving something sweet but not too much on the unhealthy side. They are quick and easy to make as well.

120 g carrots (1 small)
110 g zucchini (1 small)
220 g apples (1 big)
50 g flour
50 g whole wheat flour
2 teaspoons baking powder
20 g ground hazelnuts
30 g oats
60 g sugar beet molasses (or honey alternatively)
1 egg

Steps:

  • In a bowl grate zucchini/courgette and carrot. Cut the apple into small chunks.
  • Preheat the oven to 170°C/340°F.
  • In another bowl cream the egg and molasses with a pinch of salt. Add the grated veggies, oats and grated hazelnuts.
  • Mix baking powder and flours and add to the egg mixture. Stirr until just combined.
  • Now fold in the apples and pour batter into prepared muffin pan.
  • Bake for about 30 minutes.

2 c zucchini, grated
1 c apple, grated (i used granny smith apple)
2/3 c butter, melted
5/6 c sugar (1/2 cup plus 1/3 cup)
1/2 c brown sugar (i used dark)
2 large eggs, slightly beaten
1 tsp pure vanilla extract
3 c all purpose flour
2 tsp baking soda
1/2 tsp salt
2 tsp cinnamon
1/2 tsp nutmeg
1 c raisins (or dried cranberries)
1 c walnuts, chopped

Steps:

  • 1. Preheat oven to 350 degrees. These are "regular" size muffins (not large or mini) and cooking time is based on this size muffin. Line muffin pans with paper liners. Or you cans spray pans with baking spray. Not sure it's necessary but I sprayed the paper liners. NOTE: this batch made 16 muffins
  • 2. Grate zucchini and apples; set aside. Melt butter; set aside.
  • 3. In a large bowl, combine sugar, eggs and vanilla; stir in zucchini, apples and melted butter.
  • 4. In another bowl, mix the dry ingredients together.
  • 5. Stir dry ingredients into the wet ingredients. Add raisins and walnuts.
  • 6. Spoon batter into muffin tins, filling to the rim.
  • 7. Bake 20 to 25 minutes or until done. Test at 20 minutes with wooden toothpick or cake tester.
  • 8. Remove from oven and cool. However, they are pretty yummy still warm. Enjoy!

½ cup oat bran
½ teaspoon baking soda

1 ¼ cups peeled and chopped apples
1 cup shredded zucchini
½ cup grated carrot

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups, or line with paper muffin liners.
  • Sift flour, oat bran, baking soda, baking powder, and cinnamon together in a large bowl; set aside. Beat eggs for 1 minute, then beat in yogurt, brown sugar, and vanilla extract. Stir flour mixture into egg mixture until batter is just blended. Fold apples, zucchini, and carrot into batter until evenly distributed. Spoon batter into prepared muffin cups, filling cups about 2/3 full.

1 large green apple
1 1/2 c brown sugar, firmly packed
3 large eggs
1 tsp vanilla extract
1/2 tsp ground cinnamon

3 c self rising flour
1 1/2 c chopped pecans

Steps:

  • 1. Preheat oven 375` peel your zucchini and apple, in a Large bowl shred both items. in a separate bowl beat your eggs until smooth.
  • 2. add the eggs, cinnamon, nutmeg and vanilla to the apple zucchini mixture and give it a good stir.
  • 3. set aside 1/2 tsp of the flour, add the remaining flour to the zucchini and mix in thoroughly.
  • 4. add 1/2 tsp of flour to a bowl or small jar with a lid and then add the pecans. Gently shake or stir the pecans until they have a good coat of flour on them so they do not sink to the bottom once mixed in. (optional: I add an extra 1/2 tsp of cinnamon and nutmeg to the pecans while I'm mixing them just to give it some more punch)
  • 5. spray a 12 count muffin tin with non stick cooking spray and drop mix in each tin with a 1/4 cup measuring cup. Bake for 30 mins. Remove the muffin tin and let cool slightly before transferring to a cooling rack. Re-spray your muffins tins and repeat. (BAKING HINT): to get the most of your mix spray your measuring cup with non stick spray and the batter will slide right out of it and not stick to the cup

3/4 cup raisins (Baking Raisins are best)

1 1/2 teaspoons orange zest

  • Mix all ingredients together except for the 3 Large eggs and vegetable oil.

  • I set my kitchen aid on low for about 1 minute or until all ingredients were mixed well.
  • Pour mixture into each muffin cup approximately 3/4 full.
  • Bake at 375 for about 25 minutes or until tester comes out clean.

1 c shredded apples (i used honey crisp)
1 1/4 c sugar
1 Tbsp vanilla extract
3 eggs
2 1/4 c all purpose flour
3/4 tsp baking soda
3/4 tsp baking powder
1 1/2 Tbsp cinnamon
2/3 c canola oil
1/2 c optional-craisens, chocolate chips, nuts of choice, raisins, autumn sugar etc.

Steps:

  • 1. Preheat oven to 350 Mix wet ingredients = sugar, vanilla, eggs and oil (I used a fork)
  • 2. In separate bowl measure dry ingredients = baking soda, baking powder, cinnamon and flour (you could add salt but I do not cook or bake with salt if you did add I would not add over a 1/2 tsp) I used a fork to mix this all in as well.
  • 3. fold in shredded apple and zucchini
  • 4. Use a 12 cup cake pan and an ice cream scoop to make all even sizes. put in paper liners spray liners with PAM or they stick bake for 25 mins at 350 test by pushing on tops, they should hold shape and not sink in when done.
