GREEN APPLE AND CELERY SALAD WITH WALNUT AND MUSTARD VINAIGRETTE

Green Apple and Celery Salad With Walnut and Mustard Vinaigrette image

This was a very crisp refreshing salad - I found it to be a perfect foil to the traditional heavy Thanksgiving spread. And it was so simple to make! I did all the prep ahead of time, and simply tossed the celery and apple peices into cold water with some lemon juice to prevent browning. I would definately put this on the menu for next year. Provided by PineyCook

Number Of Ingredients 18

Apple Cranberry Bacon Salad
1 small head Romaine lettuce
8 oz. baby spinach
2 Fuji or honeycrisp apples, thinly sliced
1 cup dried cranberries
6 slices bacon, cooked and crumbled
1 red bell pepper, chopped
1/2 small red onion, thinly sliced
1/3 cup Feta cheese crumbles
3/4 cup caramelized walnuts (click HERE for recipe)*
Apple Poppy Seed Dressing
3-4 tablespoons apple cider vinegar (depending on how "tangy" you want it)
1/4 cup honey
2 tablespoon sugar
1 tablespoon poppy seeds
1/2 teaspoon salt
1 teaspoon dry minced onion
3/4 cup extra virgin olive oil

Steps:

  • Add all of the dressing ingredients to a medium bowl and whisk to combine or shake in a mason jar. Refrigerate while you prepare the salad ingredients then whisk/shake again before drizzling over salad. The dressing can be made up to a week in advance. When ready to serve, toss all of the salad ingredients together in a large bowl. You can either drizzle with desired amount of dressing and toss to combine or if you expect leftovers, drizzle individual salad servings with dressing. NOTES All ingredients are a guideline. Add more or less of your favorite salad fixings! *The caramelized nuts recipe makes 1 cup nuts. I suggest making 1 cup caramelized walnuts and using the desired amount in the salad and eating/storing the rest :)

Valuable Tips for Making Apple Walnut Vinaigrette Recipes

When it comes to salad dressings, vinaigrettes are always a winner due to their ability to complement a wide range of salad ingredients. Apple walnut vinaigrettes are particularly popular because they add a touch of sweetness and nuttiness to salads, making them more flavorful and satisfying. Here are some valuable tips to keep in mind when making apple walnut vinaigrette recipes:
1. Choose the Right Apples
One of the key ingredients in apple walnut vinaigrettes is apples, so it's important to pick the right type of apples for your recipe. Generally, apples with a sweet-tart flavor and firm texture work well in vinaigrettes. Some popular options include Gala, Honeycrisp, and Pink Lady apples. It's also a good idea to choose organic apples if possible, as they tend to have a better flavor and texture than conventionally grown ones.
2. Toast the Walnuts
Toasting walnuts before adding them to your vinaigrette can help enhance their flavor and aroma. Simply spread the walnuts on a baking sheet and toast them in the oven at 350°F for 8-10 minutes, or until fragrant and lightly browned. Let them cool completely before adding them to your vinaigrette.
3. Use High-Quality Vinegar
Vinegar is another important ingredient in vinaigrettes, and it's important to choose a high-quality vinegar that complements the other flavors in your recipe. Apple cider vinegar is a popular choice for apple walnut vinaigrettes as it adds a tangy and slightly fruity flavor. Other options include balsamic vinegar, red wine vinegar, and champagne vinegar. Make sure the vinegar you choose is fresh and has a good acidity level.
4. Balance Sweetness and Tartness
Since apple walnut vinaigrettes are slightly sweet due to the apples and walnuts, it's important to balance the sweetness with tartness. This can be achieved by adding a splash of lemon juice or some Dijon mustard to your recipe, which will provide a tangy flavor that complements the sweetness of the apples and walnuts.
5. Experiment with Different Oils
Oil is another key ingredient in vinaigrettes, and you can experiment with different types of oils to find the one that works best for your recipe. Olive oil is a popular choice for apple walnut vinaigrettes as it has a rich and fruity flavor that complements the other ingredients. However, you can also use other oils like walnut oil, avocado oil, or grapeseed oil for a different flavor profile.
6. Emulsify the Ingredients
To make sure the ingredients in your vinaigrette are well combined, it's important to emulsify them. This means mixing them together so they form a stable mixture that won't separate easily. You can do this by whisking the ingredients vigorously in a bowl or blending them in a food processor. It's important to pour the oil in a thin, steady stream while whisking or blending to ensure the mixture emulsifies properly.
7. Adjust Seasonings to Taste
Once you've combined all the ingredients in your vinaigrette, it's important to taste it and adjust the seasonings as needed. This may mean adding more salt, pepper, or lemon juice to balance the flavors. Keep in mind that the flavors of vinaigrettes can develop over time, so it's a good idea to let the mixture sit for a few hours before serving to allow the flavors to meld together.
8. Store Properly
To ensure your apple walnut vinaigrette stays fresh and flavorful, it's important to store it properly. You can keep it in an airtight container in the fridge for up to a week, but make sure to shake or whisk it well before using it as the ingredients may separate over time. If you're planning to use your vinaigrette in a salad for a party or event, it's a good idea to make it the day before and store it in the fridge overnight to allow the flavors to develop and meld together.

Conclusion

Apple walnut vinaigrettes are a delicious and healthy addition to salads, and with these valuable tips, you can make the perfect vinaigrette every time. From choosing the right apples and toasting the walnuts, to balancing sweetness and tartness and experimenting with different oils, every step is important in creating a flavorful and satisfying vinaigrette. With a little bit of practice and some creativity, you can customize your apple walnut vinaigrette recipe to suit your taste preferences and make your salads extra delicious!
