1 teaspoon coconut oil, melted
¾ cup chopped walnuts
3 tablespoons raw honey
1 teaspoon ground cinnamon
2 tablespoons coconut flour
¼ cup cold unsalted butter, cut into cubes
2 pears, peeled and thinly sliced
1 apple, peeled and thinly sliced
2 teaspoons lemon juice
½ cup unsalted butter, softened
¼ cup raw honey
5 eggs
¾ cup coconut flour
¾ cup coconut milk
¼ cup arrowroot powder
1 teaspoon vanilla extract
¾ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon sea salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Wrap the bottom of a springform pan in aluminum foil and grease entire pan with coconut oil.
  • Stir walnuts, 3 tablespoons honey, and cinnamon together in a bowl.
  • Pour 2 tablespoons coconut flour in a bowl; cut 1/4 cup cold unsalted butter into flour until mixture resembles coarse crumbs. Stir walnut mixture into butter mixture.
  • Stir pears, apples, and lemon juice together in a bowl.
  • Beat 1/2 cup softened unsalted butter, 1/4 cup honey, and eggs together in a bowl. Whisk coconut flour, coconut milk, arrowroot powder, vanilla extract, baking powder, baking soda, and sea salt into egg mixture until a smooth batter.

3/4 cup chopped dried apple
3 tablespoons pure apple juice
1 1/3 cups all-purpose flour
1/3 cup sugar
1/4 teaspoon salt
3/4 cup rolled oats
2 teaspoons baking powder
1 teaspoon apple pie spice
1 egg
3/4 cup milk
1/4 cup canola oil
1/3 cup chopped walnuts
1/3 cup sugar
3 tablespoons melted butter
1 1/2 tablespoons pure apple juice

Steps:

  • Soak apple pieces in pure apple juice for one hour.
  • In large mixing bowl add first six ingredients and mix at low/med speed in mixer.
  • Add next three ingredients and mix well.
  • Add nuts and mix well, add apple pieces (no juice should be drained) and mix until apple pieces are even distributed.
  • Pour into 8x8 cake pan that has been sprayed with cooking spray.
  • Bake in 350 degree oven for 20 to 25 minutes.
  • Until middle of cake is firm to touch.
  • After taking cake from oven and while still hot pour glaze of sugar, melted butter and apple juice that has been well blended over the cake.
  • I used a fork to poke holes evenly over the top of the cake.
  • Set cake on rack to cool.

1 1/2 teaspoons baking powder
1 teaspoon baking soda

1/2 teaspoon salt
3/4 cup packed light brown sugar
2 eggs
1/2 cup canola oil
1 1/4 cups buttermilk
3 tablespoons molasses
2 medium granny smith apples, peeled and diced
1 cup chopped walnuts, toasted and divided
2/3 cup golden raisin
2 tablespoons raw turbinado sugar

Steps:

  • Heat oven to 350*. Spray 9" square baking pan with cooking spray. Place oats on baking sheet; bake 8 to 10 minutes or until lightly toasted. Cool.
