WALNUT, RAISIN, APPLE BARS

Walnut, Raisin, Apple Bars image

I made these yesterday and took them to a Labor Day Cookout and everyone thought they were delicious. I got the recipe from Family Circle Magazine, but I made a few changes. It called for dried apples but I used fresh ones and it didn't have walnuts in it, which I think goes so well with apples. This is going to be a keeper

Easy and delicious breakfast bar (healthy too!). They are no-bake. I usually use Raisin Bran or Bran Flakes for the cereal part, but Corn flakes, cheerios, or even rice krispies would be great. From BHG.

Yield 15 bars

Number Of Ingredients 11

32 graham cracker squares
1 teaspoon ground cinnamon
2/3 cup dried apples
1/2 cup sugar
2 large egg whites
1 large egg
2 teaspoons vanilla extract
1/4 teaspoon salt
1/2 cup chopped walnuts, chopped and toasted (see Tip)
2 tablespoons confectioners' sugar
Tip: To toast chopped walnuts: Place in a small dry skillet and cook over medium-low heat, stirring constantly, until fragrant and lightly browned, 2 to 4 minutes.

Steps:

  • Preheat oven to 300 degrees F. Coat an 8-by-12-inch baking dish with cooking spray. Process graham crackers and cinnamon in a food processor until you have fine crumbs. Leaving about 1/2 cup in the workbowl, transfer the crumbs to another container. Add apples to the workbowl and process until coarsely chopped. Combine sugar, egg whites, egg, vanilla and salt in a large bowl. Beat with an electric mixer on high speed until thick, about 3 minutes. Fold in the apple mixture and walnuts just until combined. Transfer batter to the prepared baking dish; smooth the top with a wet rubber spatula. Bake until the top feels dry and a skewer inserted in the center comes out clean, 30 to 35 minutes. Let cool completely on a wire rack. Dust lightly with confectioners' sugar and cut into 15 bars.

Apple walnut bars are a delicious and nutritious snack that can be enjoyed any time of the day. They are perfect for taking to work or school, as they are easy to make and transport. However, in order to create the perfect apple walnut bars, there are some tips and tricks that you should keep in mind. In this article, we will explore some of these tips to ensure that your apple walnut bars are a success.

Tip #1: Use Fresh Ingredients

The first and foremost tip in making any recipe is using fresh and high-quality ingredients, and apple walnut bars are no exception. Using fresh ingredients will enhance the flavors and textures of your bars, resulting in a tastier snack. When selecting apples, choose those that are firm and free from bruises. Walnuts should be stored in an airtight container to keep them fresh.

Tip #2: Properly Prepare the Apples

In order to create the perfect apple walnut bars, it is important to properly prepare the apples. One of the most important steps is to peel and core the apples before dicing them. This will ensure that the apples cook evenly and create a smooth texture when combined with the other ingredients. Additionally, make sure to pat the apples dry with a paper towel to remove any excess moisture.

Tip #3: Use the Right Type of Flour

The type of flour used in apple walnut bars is crucial to the final product. All-purpose flour is a common choice, but you can also use whole wheat flour or almond flour if you prefer. Almond flour will give your bars a nuttier flavor, while whole wheat flour will add heartiness and extra nutrients. When measuring flour, make sure to use the correct amount for the desired texture.

Tip #4: Add Cinnamon and Nutmeg

Cinnamon and nutmeg are key ingredients in apple walnut bars. Not only do they enhance the flavor of the apples and walnuts, but they also give the bars a warm, cozy aroma. Be sure to add the correct amount of spice, as too much can overwhelm the other flavors. You can also adjust the amount of spice to your personal preferences.

Tip #5: Use Brown Sugar

Brown sugar adds a rich, molasses flavor to apple walnut bars and helps to hold the ingredients together. It also adds a slight sweetness that complements the tartness of the apples. Using brown sugar instead of white sugar can make a big difference in the final taste of your bars.

Tip #6: Don't Overmix the Batter

When mixing the batter for apple walnut bars, it is important not to overmix. Overmixing can make the bars tough and dry instead of moist and chewy. Mix the ingredients until just combined, and then stop. This will ensure that the bars are tender and have the right texture.

Tip #7: Let the Bars Cool

One of the most important steps in making apple walnut bars is allowing them to cool properly. After baking, let the bars cool completely in the pan before cutting into them. This will allow them to set and firm up, making them easier to slice and preventing them from falling apart. Additionally, cooling the bars will enhance the flavors and make them even more delicious.

Tip #8: Use Parchment Paper

Using parchment paper to line the baking dish can make for easier cleanup and prevent the bars from sticking. Parchment paper creates a non-stick surface that allows the bars to easily slide out of the pan. You can also use cooking spray, but parchment paper is a foolproof option.

Tip #9: Cut the Bars Evenly

When cutting the apple walnut bars, be sure to cut them evenly. This will not only make them more visually appealing, but it will also ensure that they cook evenly. Use a sharp knife and a ruler or guide to create straight, uniform slices.

Tip #10: Store Them Properly

Finally, it is important to store apple walnut bars properly to keep them fresh. Once they have cooled, store them in an airtight container on the counter or in the refrigerator. They can also be frozen for up to a month. When ready to eat, simply defrost them in the refrigerator or microwave and enjoy.

Conclusion

By following these tips, you can make the perfect apple walnut bars every time. Remember to use fresh ingredients, properly prepare the apples, use the right type of flour, add cinnamon and nutmeg, use brown sugar, don't overmix the batter, let the bars cool, use parchment paper, cut the bars evenly, and store them properly. With these tips in mind, you can create a delicious and nutritious snack that everyone will love.
