2 tablespoons raisins
1/2 cup chopped apple
1 celery rib, chopped
2 tablespoons chopped onion
1 garlic clove, minced
1-1/2 cups fat-free Caesar croutons
2 tablespoons sliced almonds, toasted
1/8 teaspoon pepper
1 pork tenderloin (1 pound)

Steps:

  • In a small saucepan, bring 4 tablespoons broth to a boil. Remove from the heat; add raisins. Let stand for 5 minutes. , In a nonstick skillet coated with cooking spray; saute the apple, celery and onion for 3-4 minutes or until tender. Add garlic; cook 1 minute longer. Remove from the heat; stir in the broth mixture, croutons, nuts, pepper and the remaining broth., Make a lengthwise slit down the center of the roast to within 1/2 in. of bottom. 1/4 cup soft bread crumbs

1 tablespoon chopped walnuts
Dash ground nutmeg
2 tablespoons unsweetened apple juice, divided
SAUCE:
2 teaspoons cornstarch
1/8 teaspoon ground cinnamon
1/2 cup unsweetened apple juice

Steps:

  • Cut a lengthwise slit down center of tenderloin to within 1/2 in. of bottom; open so meat lies flat. Cover with plastic wrap; flatten to 1/2-in. thickness. Remove wrap; sprinkle meat with salt and pepper. , In a small bowl, combine the apple, bread crumbs, celery, onion, raisins, walnuts and nutmeg. Sprinkle with 1 tablespoon apple juice; toss to coat. 1 tablespoon Dijon mustard
1 tablespoon real maple syrup
1 (1 1/4 pound) pork tenderloin
salt and ground black pepper to taste
½ medium Fuji apple - peeled, cored, and cut into slices
1 tablespoon minced red onion
2 teaspoons fresh thyme leaves
9 slices bacon

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Stir together mustard and maple syrup in a small bowl.
  • Pat pork tenderloin dry. Without cutting all the way through, slice the tenderloin lengthwise and open like a book. Spread mustard mixture evenly over the inside and outside of the tenderloin, then season with salt and pepper.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).

  • Make stuffing:
  • Preheat oven to 350°F.
  • Spread bread squares in 1 layer in a shallow baking pan and bake in middle of oven until dry and lightly toasted, about 15 minutes. Leave oven on (for roast) and cool bread.
  • Cook onion and celery in butter in a 12-inch heavy skillet over moderate heat, stirring occasionally, until softened, 4 to 5 minutes.
