SPICED APPLE PORK ROAST

Spiced Apple Pork Roast image

"I THINK what I enjoy most about Ukrainian cooking is the smells it creates. This pork roast reminds me of my mother's kitchen-it smells wonderful! My mother canned and preserved in the fall and always used applesauce to glaze the meat. That's probably why I associate the sweet aroma of this hearty stick-to-your-ribs meal with cooler weather."

1 bay leaf
1/2 teaspoon whole peppercorns
1 cup dark German beer
Spicy mustard
1 loaf pumpernickel, sliced
1 tablespoon extra-virgin olive oil
3 slices bacon, chopped
1 medium to large yellow onion, quartered then thinly sliced
1 green apple, cored and thinly sliced

SPICED ROAST PORK WITH FENNEL AND APPLE SALAD

Spiced Roast Pork with Fennel and Apple Salad image

The chile paste for this pork is added in two stages: Initially it acts as a marinade and permeates the interior of the roast. After a second addition is applied, it's roasted over high heat to create a spicy, toasty bark.

Yield 8 servings

Number Of Ingredients 23

Pork:
15 dried Kashmiri, guajillo, or New Mexico chiles, seeds removed
5 pieces star anise
3 Tbsp. fennel seeds
2 Tbsp. coriander seeds
2 Tbsp. cumin seeds
1 Tbsp. peppercorns, preferably Tellicherry
2 tsp. whole cloves
6 garlic cloves, smashed
½ cup apple cider vinegar
½ cup vegetable oil, divided
1 (4-5 lb.) boneless pork shoulder (Boston butt), tied
4-5 tsp. kosher salt, plus more
Flaky sea salt
Salad and assembly:
1 fennel bulb, fronds reserved, bulb cored, very thinly sliced
1 Honeycrisp or other crunchy not-too-sour apple, very thinly sliced
2 serrano or red Thai chiles, thinly sliced into rounds
3 Tbsp. extra-virgin olive oil
Small handful of cilantro, finely chopped
Kosher salt
Special Equipment:
A spice mill or mortar and pestle

Steps:

  • Pork:
  • Cook chiles, star anise, fennel seeds, coriander seeds, cumin seeds, peppercorns, and cloves in a dry small skillet over medium heat, stirring often, until slightly darkened and fragrant, about 2 minutes. Let cool. Set one-fourth of spice mixture aside.
  • Blend garlic, vinegar, ¼ cup oil, and ¼ cup water in a blender until smooth. Add remaining toasted spices and blend, adding splashes of water if needed to help turn the blades, until chile paste is mostly smooth; some texture is okay.
  • Season pork with 1 tsp. kosher salt per pound (check the butcher's sticker on the package to see the weight of what you purchased). Smear half of chile paste all over pork; transfer to a wire rack set inside a rimmed baking sheet or a roasting pan and let sit at room temperature at least 2 hours, or cover and chill up to 12 hours.
  • Finely grind reserved spice mixture in a spice mill or with mortar and pestle. Transfer to a small skillet; stir in remaining ¼ cup oil. Set over medium heat and cook, stirring, until spices have darkened slightly and are fragrant, about 1 minute. Let spice oil cool, then transfer to an airtight container. Cover and set aside.
  • Preheat oven to 275°F. Roast pork until paste is darkened and looks dried out and an instant-read thermometer inserted into the center registers 120°F, 1½-2 hours, depending on the size. Make sure to take the temperature in more than one spot as there will be thick and thin parts of the roast. Let rest 2 hours.
  • Preheat oven to 500°F. Rub pork with reserved chile paste and roast until marinade has formed a fragrant crust and an instant-read thermometer inserted into the thickest part registers 130°F, 8-12 minutes. Transfer pork to a cutting board and let rest 15 minutes. Thinly slice and transfer to a platter. Spoon reserved spice oil over pork; sprinkle with sea salt.
  • Salad and assembly:
  • Toss fennel bulb and fronds, apple, lime zest and juice, chiles, and cilantro in a large bowl; season salad with salt. Drizzle oil over and toss to coat. Serve pork with salad.

PORK LOIN CURED IN SPICED APPLE CIDER WITH RICOTTA GNOCCHI, BRAISED LETTUCE, AND CORN

Pork Loin Cured in Spiced Apple Cider with Ricotta Gnocchi, Braised Lettuce, and Corn image

Provided by Food Network

Categories     main-dish

Time 1h24m

Yield 8 servings

Number Of Ingredients 21

1 quart apple cider
5 quarts water
1/2 cup sugar
1/4 cup kosher salt
1 tablespoon toasted coriander seeds
1 tablespoon toasted fennel seeds
1 teaspoon chili flakes
1 tablespoon black peppercorns
3 large sprigs fresh thyme
One 4- to 5-pound pork loin, boned and trimmed of any excess fat
2 heads butter lettuce, trimmed of large outer leaves
4 ears corn, kernels removed
4 firm apples, peeled, cored and cut into 8 wedges
1 tablespoon butter
4 tablespoons plus 2 tablespoons unsalted butter
2 tablespoons vegetable oil
1/4 cup dry white wine
1/4 cup apple cider
1 cup pork stock or chicken stock
1 tablespoon chopped thyme leaves
56 pieces ricotta gnocchi (or potato gnocchi), store bought

Steps:

  • For the brine: Combine all the ingredients for the brine in a large non-reactive pot. Bring to a simmer and remove from heat. Allow to steep for 30 minutes, then cool in an ice bath. Place the pork loin in a container large enough to submerge it and pour the cooled brine over the pork. Make sure the entire loin is submerged, use a heavy plate, if necessary. Cover the container and place in the refrigerator at least 24 hours and up to 48 hours to cure.
  • Remove the pork from the brine, discard liquid. Dry the pork loin with a cloth and cut the loin into 8 (8-ounce) fillets. (You may alternately roast the entire loin whole, then slice medallions for presentation.)
  • For the braised lettuce: Cut the lettuce through the core into 16 wedges, reserve. Blanch the corn in salted water until tender, then cool and drain, reserve. Cook the apples over medium heat with a tablespoon of butter in a skillet until beginning to brown. Cool and reserve.
  • In a large heavy bottomed skillet, large enough to hold all the pork loins (or 2 smaller pans), heat the vegetable oil over medium heat. Season the pork with salt. Saute the pork fillets about 7 minutes each side for medium.
  • For the gnocchi: Meanwhile prepare the sauce. Have a pot of salted boiling water ready for the gnocchi. In a large skillet, melt the butter over medium high heat. Add the lettuce quarters in batches with a pinch of salt and brown on both sides. Remove from the pan. Repeat until all the lettuce is browned. Return all the lettuce quarters to the pan, and over medium high heat, deglaze the pan with the white wine and apple cider. Reduce to a glaze. Add the pork stock and corn kernels and bring to a simmer. Mount the sauce with the remaining butter, add the chopped thyme, adjust seasoning, and reserve warm.
  • Cook the gnocchi until they float, then transfer them to the sauce to coat. Divide the lettuce, corn, gnocchi, and sauce among 8 large bowls. Top each with a pork fillet.

SPICED PORK FILLET WITH SHALLOTS & APPLE

Spiced pork fillet with shallots & apple image

An impressive supper for two - go for the best-quality pork and don't be afraid to serve it ever so slightly pink to keep it juicy

Provided by Barney Desmazery

Categories     Dinner, Main course

Time 1h

Number Of Ingredients 9

350g piece pork fillet, cut from the middle of the fillet
1½ tbsp garam masala
1 tbsp olive oil
25g butter
1 large banana shallot, halved (keep the skin on)
1 tsp plain flour
100ml white wine
300ml chicken stock
2 'cheeks' from a whole Granny Smiths apple

Steps:

  • Heat oven to 220C/200C fan/gas 7. Season the pork well and roll the fillet in 1 tbsp of the garam masala. Heat the oil in a frying pan and brown the pork well all over. Remove from the pan and wrap tightly in foil to create a rounded sausage shape, twisting the ends so you have a cylinder. Can be done the day before and kept in the fridge.
  • Heat the butter in an ovenproof frying pan and sizzle the shallot, cut-side down, for 5 mins until slightly charred. Baste with the butter in the pan and add the pork roll, still in its foil. Put in the oven for 20 mins, turning the pork once. Remove the pork and shallot, and keep warm.
  • Sizzle the flour in the pan over a medium heat, then add the wine and reduce until there's almost no liquid left. Add the stock, simmer to make a sauce, then add the rest of the garam masala and keep warm
  • Cut the fillet, still in its foil, into two and slice each piece on the angle lengthways so you have four pointed pieces. Remove the foil and pour any juices into the sauce. Finely slice each apple cheek, then fan out one on each plate, sitting a piece of pork on top. Put a slice of domino potatoes (see recipe in 'Goes well with', right) beside it, with a shallot and another piece of pork on top. Drizzle with sauce and serve.

Apple spiced pork is a dish that combines the savory flavor of pork with the sweetness of apples and the warm spices of cinnamon, nutmeg, and cloves. It's a versatile dish that can be made in a variety of ways, from slow-cooked pork roasts to sautéed pork chops. In this article, we'll explore the origins of apple spiced pork, its nutritional benefits, and a few different ways to prepare it.

The Origins of Apple Spiced Pork

Apple spiced pork has a long history in European cuisine, where pork and apples have been staples for centuries. In Germany, for example, there's a dish called "Schweinebraten mit Apfelrotkohl," which translates to "roast pork with apple red cabbage." In this dish, the pork is slow-roasted until it's tender and juicy, and the red cabbage is simmered with tart apples, tangy vinegar, and warm spices like cinnamon and nutmeg. Similarly, in England, there's a popular dish called "pork and apple pie," which features tender chunks of pork and sweet apples baked into a flaky pastry crust. This dish has been around since at least the 1700s and was a favorite of Queen Victoria. In the United States, apple spiced pork has become a popular fall dish, often served during Thanksgiving and other autumn holidays. It's a warming and comforting meal that pairs well with other seasonal flavors like sweet potatoes, cranberries, and pumpkin.

The Nutritional Benefits of Apple Spiced Pork

Apple spiced pork can be a nutritious and satisfying meal, depending on how it's prepared. Pork is a good source of protein, iron, and zinc, and apples are high in fiber, vitamin C, and antioxidants. When combined with other healthy ingredients like leafy greens, whole grains, and lean protein, apple spiced pork can be a well-rounded meal. However, some versions of apple spiced pork may be high in fat and calories, especially if they contain a lot of sugar or are prepared with fatty cuts of pork. To keep the dish healthy, it's important to choose lean cuts of pork like tenderloin, loin chops, or sirloin roast, and to use fresh apples and spices instead of pre-packaged seasoning mixes.

Apple spiced pork recipes are a great way to bring warmth and comfort to your table during the colder months. From savory to sweet and spicy, there are countless variations of this dish that can be crafted to suit your personal tastes. In this article, we will discuss valuable tips that you can keep in mind when making apple spiced pork recipes to ensure that your dish comes out perfectly every time.

Tip #1: Choose the Right Cut of Pork

The first thing to consider when making an apple spiced pork recipe is the cut of pork that you will be using. While almost any cut of pork will work for this dish, some are better suited than others. For example, a bone-in pork chop or a pork tenderloin can both work well for this recipe as they are both juicy and flavorful. Choosing a cut of pork that is not too fatty is also important, as you don't want your dish to be too greasy.

Tip #2: Season Your Pork Well

To ensure that your dish is packed with flavor, it is important to season your pork well before cooking. You can use a variety of spices and herbs to create a flavorful blend that complements the sweetness of the apples. Some great spices to use include cinnamon, nutmeg, cloves, and allspice. You can also use fresh herbs like thyme or rosemary to add a savory element to your dish.

Tip #3: Use the Right Apples

The type of apple that you use in your recipe can have a big impact on the overall flavor and texture of your dish. Some apples are better suited for cooking than others, depending on their sweetness, texture, and level of acidity. Choose an apple that holds its shape well when cooked, such as a Honeycrisp or Granny Smith. These apples will hold up better during cooking and won't turn mushy, which can ruin the texture of your dish.

Tip #4: Cook Your Pork Correctly

To ensure that your pork comes out juicy and tender, it is important to cook it correctly. Overcooking your pork can make it tough and dry, while undercooking it can be dangerous to your health. The best way to cook pork is to use a meat thermometer to check the internal temperature. For pork chops, the internal temperature should be 145°F, while for pork tenderloin it should be 160°F.

Tip #5: Add Some Liquid to Your Dish

Adding a liquid to your apple spiced pork recipe can help to keep your dish moist and flavorful. You can use a variety of liquids, such as chicken stock, apple cider, or even wine. The liquid will help to create a flavorful sauce that can be poured over your pork, making it even more delicious.

Tip #6: Choose Your Sides Carefully

When serving your apple spiced pork dish, it is important to choose your sides carefully. The right side dishes can complement the flavors of your pork and really bring the meal together. Some great options for side dishes include roasted root vegetables, mashed sweet potatoes, or a crisp green salad.

Conclusion

Apple spiced pork recipes are a delicious and comforting way to bring warmth and flavor to your table. By following these valuable tips, you can ensure that your dish comes out perfectly every time. Whether you prefer a sweet and savory flavor profile or something spicy and bold, there are countless variations of this dish that you can experiment with to suit your personal tastes. So grab a pork chop or tenderloin, some fresh apples, and get cooking!
