1/2 cup (113g) unsalted butter, softened
2 cups (220g) confectioners' sugar, sifted
1 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
1/4 cup chopped toasted nuts, for garnish
2 & 1/4 cups (270g) all-purpose flour
1 & 1/2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon ground allspice
3/4 cup (170g) unsalted butter, softened
1 cup (200g) firmly packed light brown sugar
1/2 cup (100g) granulated sugar
3 large eggs
2 teaspoons vanilla extract
1 cup (236ml) milk
2 medium apples, finely chopped

Steps:

  • Preheat oven to 350°F. Butter two 9-inch round cake pans. Line the bottoms of the pans with parchment paper. Butter the paper.
  • Whisk together the flour, baking powder, cinnamon, salt, nutmeg, and allspice. Set aside.
  • Using an electric mixer on medium speed, beat the butter, brown sugar, and sugar until light and fluffy.
  • Add the eggs, one at a time, mixing well after each addition. Mix in the vanilla.
  • Add the flour in 3 portions, alternating with 2 portions of milk. Mix just until combined. Stir in the apples.
  • Divide the batter between the prepared pans and smooth evenly.
  • Bake 25 to 30 minutes, or until a pick inserted into the center comes out clean.
  • Cool the cakes in the pans for 15 minutes. Then, flip the cakes onto wire racks, remove the parchment paper, and allow to cool.
  • Place the cream cheese and butter in a large bowl. Using an electric mixer on medium speed, beat until combined and smooth.
  • Gradually add the confectioners' sugar, mixing until smooth. Add the cinnamon and vanilla, and mix well.
  • Place one cake layer on a cake plate. Spread half of the frosting over the top of the cake.
  • Place the other cake layer on top of the frosted cake layer. Spread the remainder of the frosting on top of the cake. If desired, garnish the top of cake with chopped toasted nuts.

2 and 1/2 cups (313g) all-purpose flour (spoon & leveled)
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 and 1/2 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1 cup (240ml) vegetable oil
1 and 3/4 cup (350g) packed dark brown sugar
1 cup (180g) unsweetened applesauce
4 large eggs
2 teaspoons pure vanilla extract
1 cup shredded apple (or shredded carrot/zucchini)
optional: 1 Tablespoon molasses
8 ounces (224g) full-fat block cream cheese, softened to room temperature
1/2 cup (115g) unsalted butter, softened to room temperature
3 cups (360g) confectioners' sugar, plus an extra 1/4 cup if needed
1 teaspoon pure vanilla extract
1/8 teaspoon salt

Steps:

  • Preheat the oven to 350°F (177°C) and grease a 9×13 inch pan. I always use this glass pan.
  • Whisk the flour, baking powder, baking soda, salt, cinnamon, and other spices together in a large bowl. Set aside.
  • Whisk the oil, brown sugar, applesauce, eggs, vanilla extract, and molasses (if using) together in a medium bowl. Pour the wet ingredients into the dry ingredients and whisk until combined. Fold in the shredded apple until combined.
  • Spread batter into the prepared pan. Bake for 45-50 minutes. Baking times vary, so keep an eye on yours. The cake is done when a toothpick inserted in the center comes out clean. If you find the top of the cake is browning too quickly in the oven, loosely cover it with aluminum foil.
  • Remove the cake from the oven and set on a wire rack. Allow to cool completely. After about 45 minutes, I usually place it in the refrigerator to speed things up.
  • In a large bowl using a handheld or stand mixer fitted with a paddle or whisk attachment, beat the cream cheese and butter together on high speed until smooth and creamy. Add 3 confectioners' sugar, vanilla, and salt. Beat on low speed for 30 seconds, then switch to high speed and beat for 2 minutes. If you want the frosting a little thicker, add the extra 1/4 cup of confectioners sugar (I add it). Spread the frosting on the cooled cake. Refrigerate for 30 minutes before serving. This helps sets the frosting and makes cutting easier.
  • Cover leftover cake tightly and store in the refrigerator for 5 days.

1/2 lemon, juiced
1 cup apple cider
1 3/4 cups all-purpose flour, plus extra for loaf pan
1 teaspoon ground cinnamon
1 teaspoon baking soda
3 or 4 grates fresh nutmeg (about 1/2 teaspoon)
3/4 cup brown sugar
3/4 cup sugar
Pinch kosher salt
1 egg
1 teaspoon vanilla extract
1/2 cup toasted and chopped walnuts
1/2 cup golden raisins

One 8-ounce package cream cheese, at room temperature
1 stick butter, at room temperature
1 cup powdered sugar

Steps:

  • Preheat the oven to 350 degrees F.
  • Melt the butter in a large saute pan over medium heat. Toss in the apples and stir to coat them with the butter. Add the lemon juice and the apple cider. Cook until the apples have softened and the cider has reduced by half. Transfer the mixture to a food processor and pulse into a coarse paste. Reserve.
  • In a large mixing bowl combine the flour, cinnamon, baking soda, nutmeg, both of the sugars and a pinch of salt. Make a well in the dry ingredients and add the pureed apples, the egg and vanilla. Stir to combine. Toss in the walnuts and raisins.
  • Butter and flour a loaf pan. Pour the batter into the prepared pan and put it in the preheated oven. Bake until a toothpick, inserted in the center comes out clean, about 40 to 45 minutes.
  • Remove the pan from the oven and let cool for 10 minutes. Remove the cake from the pan and cool completely.
  • Cut the cake in half equatorially and spread half of the icing on the bottom layer. Replace the top half and ice the top of the cake, leave the sides bare. Slice and serve.
  • Beat together all of the ingredients in a stand mixer or with a hand mixer until light and fluffy.

Steps:

  • For cake:
  • Position rack in center of oven and preheat to 350°F. Butter and flour two 9-inch-diameter cake pans with 2-inch high sides. Line bottom of each pan with parchment paper round. Whisk first 7 ingredients in medium bowl. Using electric mixer, beat 1 cup butter in large bowl until fluffy. Add both sugars and beat until smooth.   • Using long serrated knife, trim off rounded tops of cakes to make level; brush off any loose crumbs. Transfer 1 cake to platter, trimmed side up. Drop half of frosting (about 11/2 cups) by spoonfuls atop cake. Spread frosting evenly to edges of cake. Top with second cake, trimmed side down. 1 box spice cake mix
1 pkg instant vanilla pudding mix; 3.4 oz size
3 eggs
2/3 c water
1/2 c canola oil
1/2 c sour cream
1 lb granny smith apples, peeled and chopped
2 oz cream cheese, softened
1/2 Tbsp butter, softened
3 Tbsp milk
3 Tbsp powdered sugar
1 tsp pure vanilla extract

Steps:

  • 1. Heat oven to 350 degrees.
  • 2. Beat first 6 ingredients in large bowl with mixer until well blended. Stir in apples; pour into a well greased and floured Bundt pan.
  • 3. Bake 1 hour to 1 hour 5 min. or until toothpick inserted near center comes out clean. Cool in pan 15 min. Loosen cake from side of pan with knife (cake will probably stick some). Invert cake onto wire rack; gently remove pan. Cool cake completely.
  • 4. When cake is cooled, beat cream cheese, butter and milk with electric mixer. Gradually mix in powdered sugar. Beat until smooth. Add vanilla and beat until incorporated.
