1/2 cup pineapple juice
1/4 cup honey mustard
1/4 cup packed brown sugar

2 skinless, boneless chicken breasts , cut into bite-sized cubes
50ml low-fat natural yogurt
juice and zest ½ lemon
1 garlic clove , crushed
1 tbsp finely chopped tarragon
300g new potato
1 tbsp rapeseed oil
½ tbsp finely chopped parsley
½ tbsp finely chopped mint
½ tbsp snipped chives
100ml low-fat crème fraîche
1 tsp wholegrain mustard
juice 1 lemon
100g fennel , trimmed and roughly grated
100g small white cabbage , cored and finely shredded
1 carrot , roughly grated
1 sharp Green apple , such as Granny Smith, grated

Steps:

  • If you are using wooden skewers, soak them in water for 10 mins. Heat the grill to high and place a non-stick baking tray beneath it. In a large bowl, mix the marinade ingredients, then add the chicken, turning it to ensure it is thoroughly coated. Cover and set aside.
  • Put the potatoes in a large pan of boiling water and cook until a fork easily pierces them - about 12 mins. Meanwhile, mix the oil and herbs in a small bowl.
  • While the potatoes are cooking, make the dressing for the coleslaw. Mix together the crème fraiche, mustard and lemon in a large bowl. Add all the vegetables and the apple, and stir well.
  • Drain the potatoes and return them to the pan. Pour the herb mixture over them, stir gently to mix, cover to keep warm and set aside.
  • Finally, divide the chicken between 4 skewers and place on the hot baking tray, spooning excess marinade over the chicken. Put the tray under the grill and cook for 6-8 mins, turning the skewers every 2 mins or so to ensure even cooking. Cut open a piece of chicken to ensure it's cooked through. Serve with the potatoes and coleslaw, reserving half the coleslaw for Smoked mackerel platter (see 'goes well with').

2 skinless boneless chicken breasts
2/3 cup balsamic vinegar
1/3 cup brown sugar
1/3 cup freshly squeezed orange juice , (about 1 medium orange)
3 garlic cloves,, smashed

1 green apple, cut into 1 inch chunks
1 red onion, cut into 1-inch chunks
bamboo or metal skewers
1 pinch salt and pepper

Steps:

  • Measure vinegar, brown sugar, orange juice, garlic, olive oil, salt and pepper into a large zip-top bag. Seal and shake to combine. Cut chicken breasts into 1 1/2 inch cubes and add to the bag, seal and refrigerate for 1 hour or up to one day. Soak bamboo skewers in water for 30 minutes. Remove chicken from the marinade, and place the marinade, minus the garlic, in a small saucepan. Heat the marinade to boiling and boil until slightly thickened and reduced by half, about 5-7 minutes. Reserve. Skewer the chicken, along with the apples and onions and sprinkle with salt and pepper. Heat a grill pan (or your broiler) to medium high. Drizzle pan with a little oil to keep the skewers from sticking. Place the skewers on the pan and grill for 4 minutes. Turn them a quarter of the way around and grill another 4 minutes. 1 lb shrimp, peeled and deveined
1/2 c asian ginger sauce (i used gordons signature) or similar sweet and spicy asian sauce
1/4 c open pit apple whiskey bbq sauce
1 large onion, peeled and sliced lengthwise for skewers
1 large avocado, peeled and sliced lengthwise in thick slices for skewers
1 large tomato, sliced lengthwise for skewers

Steps:

  • 1. Preheat the oven to 500 degrees Fahrenheit in order to get a good sear on the shrimp. Place the grilling pan in the oven while it preheats to warm the pan. Wash and slice the onion, avocado and tomatoes in large slices for the skewers (i.e. lengthwise and thick enough to hold together). Tip for slicing avocados; first slice them with the skin on then peel away the skin from the slices.
  • 2. Rinse and pat dry the shrimp and place in a large bowl.
  • 3. Add 1/2 cup of the Asian Ginger sauce and the Apple Whiskey BBQ sauce and stir well. Add the tomato, onion and avocado and toss gently to coat the ingredients well. Cover the bowl and refrigerate for 30-60 minutes. You can marinade the recipe longer or shorter periods of time, depending on how much time you have before supper.
  • 4. Using either metal or wooden skewers, spear the shrimp so that it will lay flat on the baking sheet (through the head and tail). Alternate the vegetables and shrimp on the skewer. If you use wooden skewers be sure to soak them in water for 30 minutes before baking.
  • 5. Carefully remove the baking pan from the oven and place the skewers on a baking sheet laying the shrimp and vegetables flat.
  • 6. Turn the oven setting to Broil and broil at the highest rack in the oven for 4-5 minutes, turning once during the baking time. To check for doneness, make sure the shrimp is opaque.
