APPLE TOMATO SALSA

Apple Tomato Salsa image

This is a fresh salsa that I submitted to an apple cooking contest. I don't like spicy salsas so it's more flavorful than hot, but you can spice it up however you want. I used 'on-the-vine' tomatoes because of their juiciness. I toasted my own tortilla chips in the oven for 3 minutes on each side then cut them size. I didn't want the oil and salt from store bought chips, but try whatever kind of chips you want.

"PLASTERED" PORK TACOS WITH APPLE-JALAPENO SALSA

I was in the mood for some pork tacos, but I was looking for a bit of a change of pace from the normal carnitas-style I would usually make, which led to this wild and crazy experiment. The "plaster" coating traps all the moisture and flavor of the pork in while it bakes, creating the best pork taco I've had in a while.

Provided by Chef John

Categories     Main Dish Recipes     Taco Recipes

Time 12h5m

Yield 12

Number Of Ingredients 16

1 (3 1/2) pound bone-in pork shoulder roast
2 tablespoons minced fresh rosemary
1 tablespoon freshly ground black pepper
2 cups all-purpose flour, or more as needed
½ cup kosher salt
1 large egg white
¾ cup water, or more as needed
2 cups finely diced Honeycrisp apple
⅔ cup finely diced white onion
½ cup seeded and finely diced jalapeno pepper
½ cup chopped fresh cilantro
1 teaspoon salt, or to taste
2 limes, juiced, or to taste
2 pinches cayenne pepper
12 flour tortillas, warmed
2 limes, cut into wedges, or as needed

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Season pork all over with rosemary and freshly ground black pepper.
  • Stir flour, salt, egg white, and water together in a large bowl until very smooth. Adjust with more flour it's too runny. Add pork shoulder and coat thoroughly.
  • Spread a few spoons of excess "plaster" into a baking dish or pan. Add, fat-side up. Use a spoon to re-apply plaster to any spots that need it, as well as to the top.
  • Roast in the center of the preheated oven until the surface is dry and hard and an instant-read thermometer inserted into the center reads 185 degrees F (85 degrees C), about 3 1/2 hours.
  • Let cool for 15 minutes to 1 hour. Break pork up into big chunks and transfer to plate. Add some of the pan juices that accumulated at the bottom of the pan. Cover with plastic wrap. Chill in the refrigerator, 8 hours to overnight.
  • Combine apple, onion, jalapeno, cilantro, salt, lime juice, and cayenne in a bowl for salsa.
  • Slice chilled pork into strips and then cut into 1/2-inch cubes.
  • Heat a dry, nonstick pan over medium-high heat. Brown pork in the pan, 3 to 5 minutes. Serve pork on warm tortillas with the salsa and lime wedges.

Apple salsa is a delicious and refreshing twist on traditional salsa recipes. It has a unique combination of sweet and tangy flavors, making it a versatile condiment that can be used in a variety of dishes. Apple salsa can be made with a variety of different apple varieties and a variety of other ingredients. It is a healthy and easy recipe that can be enjoyed by anyone.

History of Apple Salsa

The origins of apple salsa are difficult to pinpoint precisely, but it is believed to have originated in Mexico. Salsa in general has been a popular condiment in Latin American cuisine for centuries, and apple salsa is a modern twist on this traditional recipe. It has grown in popularity in recent years as more people have discovered the delicious flavor combination of apples and spice.

Benefits of Apple Salsa

Apple salsa is an excellent healthy option for anyone who likes to eat healthy foods. Apples are a great source of vitamins and minerals, and they are also low in calories. Additionally, many apple salsa recipes are vegetarian or vegan, and they can easily be made gluten-free as well.

Ingredients in Apple Salsa

The ingredients in apple salsa can vary depending on the recipe, but there are some staples that are common to many recipes. These include:
  • Apples
  • Tomatoes
  • Onions
  • Cilantro
  • Jalapenos or other peppers
  • Lime juice
  • Salt and pepper
Apples
The type of apple used in apple salsa can greatly affect the taste and texture of the recipe. Some popular varieties for apple salsa include Gala, Granny Smith, and Honeycrisp. The apples should be crisp and firm, not too soft or mealy.
Tomatoes
Tomatoes add juiciness and acidity to the salsa, balancing out the sweetness of the apples. Roma, plum, or vine-ripened tomatoes work well for apple salsa.
Onions
Red or white onions can be used in apple salsa, depending on personal preference. They add a nice bite and crunch to the salsa.
Cilantro

Apple salsa is one of the best ways to give your taste buds a refreshing treat. This simple and delicious dish can be enjoyed as a snack, a side dish or even as a topping for meat or fish dishes. Whether you are making apple salsa for a party or just for yourself, there are a few things you should keep in mind. Here are some valuable tips to consider when making apple salsa recipes:

Choose the right apples

The type of apple you use can have a significant impact on the overall taste of your apple salsa. For the best results, choose apples that are crisp and slightly tart. Examples of good apples to use include Granny Smith, Honeycrisp, and Pink Lady apples. Avoid using soft or mushy apples as they will not hold up well in the salsa.

Add some spice

Adding some spice to your apple salsa can take it to the next level. Some good options include jalapeno peppers, cumin, chili powder, and smoked paprika. Depending on your taste preferences, you can add as much or as little spice as you like. Just be sure to taste the salsa as you go so you don’t add too much.

Don't forget the cilantro

Cilantro is an essential ingredient in many salsa recipes, including apple salsa. This herb adds a fresh, bright flavor to the salsa that complements the sweetness of the apples. If you’re not a fan of cilantro, you can use parsley instead, but keep in mind that the flavor will be different.

Add some crunch

To give your apple salsa some texture, consider adding some chopped nuts. Walnuts, almonds, and pecans are all good options that pair well with apples. You can also add some diced red onion or bell pepper to give the salsa more crunch.

Use fresh ingredients

When making apple salsa, it’s important to use fresh ingredients. This will give your salsa the best flavor and texture. Be sure to use fresh apples, cilantro, and any other fruits or vegetables you choose to include. If you use canned or frozen ingredients, your salsa may be too soft or mushy.

Chop everything evenly

To ensure that the salsa has a consistent texture, it’s important to chop everything evenly. This means cutting the apples, peppers, onions, and cilantro into small, uniform pieces. You can use a food processor to speed up the chopping process, but be careful not to over-process the ingredients.

Let it sit for a while

After you make your apple salsa, it’s a good idea to let it sit for a while before serving. This will allow the flavors to blend together and develop more fully. Cover the salsa and refrigerate it for at least an hour, or overnight if possible. This will also give the salsa time to chill, making it even more refreshing.

Don't overdo it

When making apple salsa, it’s important to strike a balance between the different flavors. Too much sweetness can overpower the other ingredients, while too much spice can make the salsa too intense. Taste the salsa as you go and adjust the seasonings as needed.

Pair it with the right foods

Apple salsa can be paired with a variety of foods, but some options are better than others. It goes well with grilled meats, fish, or shrimp. You can also serve it with tortilla chips or pita bread as a snack. For a more filling meal, serve the salsa over grilled chicken or fish.

Experiment with different ingredients

Apple salsa can be customized to suit your taste preferences. Experiment with different ingredients to find a combination that you love. You can add other fruits like mango or peach, or use different types of vinegars or citrus juices to give the salsa a unique flavor.

Get creative with presentation

Finally, don’t be afraid to get creative with the presentation of your apple salsa. You can serve it in a bowl, in individual cups, or even in lettuce cups for a fun twist. Adding some chopped herbs or nuts on top of the salsa can also make it look more appetizing. In conclusion, making apple salsa is a fun and easy way to add some variety to your meals. By following these valuable tips, you can make a delicious salsa that will impress your friends and family. Remember to choose the right ingredients, add some spice and crunch, chop everything evenly, let it sit, and experiment with different ingredients to find your perfect apple salsa recipe.
