- Sprinkle roast with salt and pepper. In a large skillet, heat oil over medium-high heat. Brown roast on all sides., Transfer to a 6-qt. slow cooker. In a small bowl, mix preserves, cherries, vinegar and brown sugar until blended; pour over roast. Cook, covered, on low until tender (a thermometer inserted in pork should read at least 145°), 3-4 hours., Remove roast from slow cooker; tent with foil. Let stand 15 minutes before slicing. Skim fat from cooking juices. Serve pork with sauce.

Steps:
- Preheat an oven to 350 degrees F (175 degrees C). Grease a baking dish large enough to hold the tenderloin without folding it.
- Heat the olive oil in a large skillet over medium-high heat, and brown the pork tenderloin on all sides. Remove the browned tenderloin to the prepared baking dish. Sprinkle all sides of the meat with salt, pepper, and parsley.
- Cook and stir the onion and apple in the same skillet over medium heat until the onion becomes soft, about 5 minutes, and pour in the Riesling wine. Scrape all the browned flavor bits off the bottom of the skillet and stir to help dissolve them into the wine. Bring to a boil, and pour the onion, apple, and wine mixture over the tenderloin.
- Mix together the apple jelly and balsamic vinegar in a bowl until the mixture is smooth and without lumps. Spread the jelly mixture all over the pork.
- Bake loin in the preheated oven until an instant-read thermometer inserted into the center reads 145 degrees F (63 degrees C), 30 to 45 minutes. Allow the tenderloin to rest for 10 minutes before slicing, and serve each slice with a spoonful of the apple-onion mixture.

- Heat oven to 375°F. Line roasting pan with foil; spray rack with cooking spray. Place pork on rack. Sprinkle with 1/2 teaspoon of the salt and 1/2 teaspoon of the pepper.
- In medium microwavable bowl, microwave jelly uncovered on High about 1 minute or until melted. Stir in mustard and sage. Brush mixture on pork.
- In large bowl, place apples and onions. Sprinkle with remaining 1/2 teaspoon salt and 1/4 teaspoon pepper. Drizzle with oil; toss to coat. Arrange apple mixture around pork.

- Place roast fat side up on a rack in a shallow roasting pan. Sprinkle with 1/4 teaspoon salt and pepper. For the apple roasted pork:
- Pork loin – 2.5 to 3 pounds
- Granny Smith apples – 2 large, sliced
- Red onion - 1, sliced
- Garlic cloves – 4, peeled and minced
- Dijon mustard – 2 tbsp
- Extra-virgin olive oil – 2 tbsp
- Salt – 1 tsp
- Black pepper – 1/2 tsp
- Fresh rosemary – 2 sprigs
- Fresh thyme – 2 sprigs
For the cherry balsamic glaze:
- Frozen cherries – 2 cups
- Balsamic vinegar – 1 cup
- Maple syrup – 1/3 cup
- Cornstarch – 2 tsp
- Salt – 1/4 tsp
- Black pepper – 1/4 tsp
Instructions
For the apple roasted pork:
- Preheat the oven to 375°F.
- In a small bowl, mix together Dijon mustard, chopped rosemary, minced garlic, salt, black pepper, and extra-virgin olive oil.
- Rub the pork loin with the Dijon mustard mixture, making sure to coat it evenly on all sides.
- Place the sliced apples, red onions, and thyme sprigs in a baking dish or roasting pan.
- Place the pork loin on top of the apples and onions, and arrange the rosemary sprigs on top of the pork.
- Bake the pork for 45 to 60 minutes, or until a meat thermometer inserted into the center of the pork registers 145°F.
- Remove the pork from the oven and let it rest for 5 to 10 minutes before slicing and serving.
For the cherry balsamic glaze:
- In a saucepan, combine cherries, balsamic vinegar, maple syrup, salt, and black pepper.
- Bring to a boil over medium heat, stirring frequently.
- In a small bowl, mix 2 tsp of cornstarch with 2 tsp of cold water until smooth.
- Add the cornstarch mixture to the cherry sauce, stirring constantly until the sauce thickens, around 2 to 3 minutes.
- Serve the cherry balsamic glaze over the sliced pork.
Tips and variations
