Baked Apples with Ricotta Cheese image

These Baked Apples with Ricotta Cheese are very easy to make, healthy and unbelievably delicious.

Provided by Maria Ushakova

Categories     Recipes

Time 1h

Number Of Ingredients 9

4 medium organic apples (I used Golden Delicious)
¼ cup + 1 Tbsp honey
juice of ½ lemon
¼ cup water
1 anise star
4 whole cloves
2 cinnamon sticks
1 cup ricotta cheese
allspice for decorating

Steps:

  • Preheat the oven to 400F.
  • Carefully, cut off the top of each apple. With a small knife or a potato peeler, cut out the core scooping out all the seeds. If needed, cut small pieces from the bottom of the apples to level them out. Pierce the apples with a fork in a few places to prevent them from bursting during baking.
  • In a mixing bowl, add ¼ cup of honey, lemon juice, and water. Mix to combine.
  • Place the apples in a square baking dish. Pour the honey mixture over the apples. Place the apple tops on the apples. Place the anise star, whole cloves and cinnamon sticks on the bottom of the dish.
  • Bake the apples until a paring knife easily slips into the centers for about 40 to 45 minutes. Baking time will depend on the apple variety so check the apples every once in a while to make sure they don't over-bake.
  • In the meantime, place the ricotta cheese and 1 tablespoon of honey into a small bowl and mix.
  • Once the apples are done, remove them from the oven and let them cool for a few minutes. When cool enough to handle, transfer the apples onto plates. Open the lids and fill the center of each apple with ricotta cheese, about ¼ cup of ricotta cheese per apple. Sprinkle the apples with allspice and drizzle with pan juices, about 1 tablespoon per apple.
  • Place the apple tops back on the apples and serve.

If you're looking to create the most delectable apple ricotta slice, then you've come to the right place. Here are some valuable tips to keep in mind while making your apple ricotta slice recipe.

Tips for Making the Best Apple Ricotta Slice Recipe

1. Choose the Right Apples

The key to making the best apple ricotta slice recipe is selecting the right apples. You want apples that are firm, crisp, and slightly tart. Great apple varieties for baking include Fuji, Granny Smith, Honeycrisp, and Rome. When selecting your apples, make sure to choose those that are free of bruises or any soft spots.

2. Preparing Your Apples

Before you start baking, it's important to prepare your apples properly. Begin by peeling and coring your apples. Then slice them thinly, but not too thin to avoid them turning out mushy. You should aim for a uniform thickness to ensure even cooking. Once sliced, toss them with some sugar, cinnamon, and lemon juice. This will give your apples a delicious sweet and spicy flavor, while the lemon juice adds some tanginess and helps prevent browning.

3. Use Quality Ricotta Cheese

The quality of your ricotta cheese will significantly affect the taste and texture of your apple ricotta slice. Choose a high-quality ricotta cheese that's thick, creamy, and not too grainy. You can make fresh ricotta at home as well. Avoid using low-fat or skim ricotta cheese, which can produce a watery texture and compromise the flavor.

4. Drain the Ricotta Cheese

Before mixing the ricotta cheese into your apple mixture, make sure to drain it well. This will remove any excess liquid and ensure a smooth, creamy texture. Place the ricotta in a cheesecloth, wrap it up tightly, and let it sit for a while until most of the liquid has drained out. Alternatively, you can use a fine-mesh sieve to strain out the excess liquid.

5. Add the Right Amount of Sugar

When making apple ricotta slice, you need a sweet component to balance out the sourness of the apples. However, adding too much sugar can overpower the other flavors and make your dessert too sweet. So, add sugar in moderation. You can always adjust the sweetness to your liking. If you want to keep your recipe healthy, you can use a natural sweetener like maple syrup or honey instead of refined sugar.

6. Don't Skip the Spices

Spices are essential to give your apple ricotta slice recipe a rich and aromatic flavor. Along with cinnamon, you can add nutmeg, allspice, or cloves to add depth and complexity to the recipe. You can also throw in some vanilla extract for a sweet and comforting flavor. Make sure to mix the spices evenly into the ricotta cheese to distribute the flavors throughout the dish.

7. Use a High-Quality Crust

The crust is the foundation of any dessert, so make sure to use a high-quality one. You can opt for a homemade crust or purchase a pre-made one from the store. If you prefer a gluten-free option, you can use almond flour or oat flour as a substitute. Before adding the filling, pre-bake the crust for a few minutes to ensure that it's perfectly crisp and golden.

8. Arrange the Apples Neatly

When arranging the apples on top of the ricotta mixture, be sure to do so neatly and uniformly. This makes your dessert look more professional, and the apples will cook more evenly. You can create patterns with your apple slices, like a spiral or concentric circles, or keep it simple and arrange the slices in a single layer. Make sure the slices are not too thick, so they cook evenly in the oven.

9. Bake at the Right Temperature

The final step in making your apple ricotta slice recipe is baking. Bake it at 350°F for about 35-40 minutes or until the edges are golden brown and the filling is set. Do not overbake the slice as it can get dry and lose its creaminess. Check the slice frequently and take it out of the oven when it's golden brown and evenly baked.

10. Let the Apple Ricotta Slice Cool

Once your apple ricotta slice recipe is out of the oven, let it cool for at least 30 minutes before slicing it. Cooling allows the filling to set completely and makes slicing easier. You can serve it warm or cold, depending on your preference. Garnish with some powdered sugar, whipped cream or fresh apple slices to give it a finishing touch.

Conclusion

Making apple ricotta slice is a simple and delicious dessert that is perfect for any occasion. The key to making the best apple ricotta slice recipe is selecting the right apples, using quality ricotta cheese, and adding the right amount of sugar and spices. Take your time in preparing the apples, drain the ricotta cheese well, and use a high-quality crust. When baking, ensure that the temperature is right, and let the apple ricotta slice cool before serving. Follow these valuable tips, and you're sure to create a delectable apple ricotta slice that everyone will love.
